I have watched Cupcake wars a couple of times, and
I just don't understand how they do this. They make these recipe's up using all sorts of ingredients on the fly - weird dry additions, weird wet additions. I know they probably start with their basic white, yellow, choclate recipe but some of the stuff they end up using has got to change the wet/dry ratio's fairly significantly. How do they know what compensates for what?
I heard one of the contestants saying "oh the batter looks perfect". And something about being glossy?
Ok so I don't know what constitutes perfect cake batter - not too thick, not to thin?
Do they make the stock batter, add wet (avocado whatever) and add dry till right? That sort of thing? They don't even look like they are keeping track so when they have to make a 1000?
Most recently one of the contestents, and eventual winners was from Miami with a Cuban heritage. One of her first cupcakes she made was a Dulce Le Leche cupcake with a Dulce Le Leche frosteing I think. Now this one I do think was a stock cupcake for her but I think she had to add some things per the contest.
The judges loved it and thought she killed it with that cupcake.
Later, eating some Dulce Le Leche Haagan Daz:) (YUM!) I started fantazing about those cupcakes. Of course I can't find a recipe that sounds good or like it doesn't have issues. I did watch Alton Browns you tube lesson making the stuff. There there would be the matter of the frosting.
I found recipe's for maple syrup cupcakes and am wondering if I can just sub the DlD? I'm certainly out of my league.
But don't they sound good?
