I made the recipe I posted on January 13, for Salmon with Coconut Sauce. I did change a couple of things in it, and it was delicious, but not with salmon. Salmon was just too strong a fish flavor for the sauce. I will make the sauce again, but serve it over chicken, or maybe tilapia.

This is the sauce I made:

Coconut Sauce

2 tablespoons coconut oil

1/4 sweet onion, chopped

1 tablespoon finely chopped ginger

1-1 1/2 teaspoon tarragon leaves, crushed

1/2 tsp brown mustard seeds (I ground them with the coriander in my coffee grinder)

1/2 tsp coriander seeds

1/2 cup chopped tomatoes

1/2 tsp sugar

1 can coconut milk

1 star anise seed (optional)

Put coconut oil into a large skillet over medium-low heat and when the oil is hot add onions and ginger. Saute for 30 seconds and then add spices and cook for 10 seconds. Add tomatoes and cook for 3 minutes, stirring well. Pour in coconut milk and simmer for about 15 minutes, until sauce is thickened. Taste for seasoning and add salt and pepper.
