Healthified banana bread

2 cups white whole wheat flour (see note below)

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

3/4 cup sugar

1/2 cup applesauce (one of those lunch sizes is perfect)

2 Tablespoons vegetable oil

1 teaspoon vanilla

2 large eggs

3 ripe bananas (let them sit on your counter at least 3 days)

keep your nuts out of my banana bread-but if you were so inclined, 1/2 cup chopped nuts would suffice

Combine the flour, baking soda, powder and salt in a large mixing bowl and set aside.

Peel your bananas and mash together with the applesauce, veggie oil, vanilla and eggs (see slide show). Mix until creamy, you can just use a fork if your prefer. Add the sugar and mix until fluffy.

Add the dry ingredients and mix until just combined (toss in the nuts here *shudder*). Pour into a greased loaf pan, or mini loaf pan and bake at 350 degrees for 50-60 minutes. Internal temp of bread should be 195-200 degrees. (mini loaf pan will most likely only take 45 minutes or so)

Let cool in the pan about 10 minutes then invert onto a cooling rack. Let cool another 15 minutes then slice and serve warm!
