Recipe of the Day January 6 - Salmon with Lemon!

This flavor combination is dynamite! I might not use as many capers as it calls for but will definitely use some.

Salmon with Lemon, Capers, and Rosemary

Ingredients

Â 4 (6-ounce) salmon fillets

Â 1/4 cup extra-virgin olive oil

Â 1/2 teaspoon salt

Â 1/2 teaspoon freshly ground black pepper

Â 1 tablespoon minced fresh rosemary leaves

Â 8 lemon slices (about 2 lemons)

Â 1/4 cup lemon juice (about 1 lemon)

Â 1/2 cup Marsala wine (or white wine)

Â 4 teaspoons capers

Â 4 pieces of aluminum foil

Directions

Brush top and bottom of salmon fillets with olive oil and season with salt, pepper, and rosemary. Place each piece of seasoned salmon on a piece of foil large enough to fold over and seal. Top the each piece of salmon with 2 lemon slices, 1 tablespoon of lemon juice, 2 tablespoons of wine, and 1 teaspoon of capers. Wrap up salmon tightly in the foil packets.

Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Place the foil packets on the hot grill and cook for 10 minutes for a 1-inch thick piece of salmon.

Serve in the foil packets.

Thank you! Perfect timing, as I am cooking salmon tonight. I was just going to broil it, but will be using this recipe instead. I'll have to bake it because the weather doesn't look like it will cooperate for grilling.

Perfect timing here too! Diabetic DH is having Salmon tonight because he needs to cut down on carbs, etc after the Holidays. I've printed it off for him.
I don't like Salmon, but may give this a try, too.

While at my Dad's for Christmas I cooked all the meals. This is the one they raved about. I got it from one of my Atkins books

Broiled Salmon

2 tablespoons sugar free maple syrup
1 tablespoon Dijon mustard
1 Â½ teaspoon low sodium soy sauce
Mix these all together and baste salmon. Broil 6 minutes and turn over, baste and broil for another 6 minutes. Use extra sauce when serving salmon.

You can also serve it with a creamy dill salad dressing as a little sauce. It goes very well with salmon.

We love salmon and both of these sound soooo good!!
I think anything with that dill sauce tastes good...or cucumber sauce!

Sandra Lee just broiled some orange marinated salmon. Looks yummy!
Never cooked salmon except salmon croquettes from the can.
