Pork Medallions Alfredo

Makes: 4

1 pork tenderloin (1 lb./ 500 g), cut into 1/2-inch-thick slices

1/2 cup (1/2 of 250-g tub) PHILADELPHIA Herb & Garlic Cream Cheese Spread

1/3 cup 25%-less-sodium chicken broth

1/4 cup KRAFT SIGNATURE Balsamic Vinaigrette Dressing

1/4 cup KRAFT 100% Parmesan Grated Cheese

1 Tbsp. lemon juice

2 Tbsp. fresh basil, chopped

SPRAY large non-stick skillet with cooking spray. Heat on medium-high heat. Add meat; cook 2 min. on each side or until lightly browned on both sides.

ADD cream cheese spread, broth, dressing, Parmesan cheese and juice; stir until cream cheese spread is melted and mixture is well blended. Cook 3 min. or until sauce is thickened and meat is cooked through.

SPRINKLE with basil.

Serve with cooked egg noodles and peas.

Well Joan, I'm a FoodNetwork junkie. I watch that channel almost exclusively, and I recieve several recipe of the day emails from food magazines. If I see something that looks good and easy, I save it to my recipe files.

The other day I copied my recipe files onto a disc for my DD and there were 695 files! LOL! And I've added many more since then!

Then with Glenda and Connie and soooo many other great KT cooks adding their recipes.............the possibilities are unlimited!

Lemony Mushroom Risotto Gourmet : February 2001 This crowd-pleasing risotto works well as a main course-accompanied by green salad and crusty bread-or as a side dish for leftover chicken. Active time: 45 min Start to finish: 45 min Yield: Serves 6 to 8 2 2/3 cups boiling-hot water 1/2 oz dried porcini mushrooms 3 cups chicken broth 1/2 stick (1/4 cup) unsalted butter 1/2 lb small cremini mushrooms, quartered 1 small onion, finely chopped 1 cup plus 2 tablespoons Arborio rice (8 oz) 1/4 cup dry white wine 1 teaspoon finely grated fresh lemon zest 1/4 cup finely grated parmesan 2 tablespoons chopped fresh flat-leaf parsley Pour 2/3 cup hot water over porcini in a heatproof cup and let stand until softened, about 10 minutes. Lift porcini out of water, squeezing excess liquid back into cup, and rinse well to remove any grit. Coarsely chop porcini. Pour soaking liquid through a paper-towel-lined sieve into a glass measure and reserve. Meanwhile, bring broth and remaining 2 cups hot water to a simmer. Keep at a bare simmer, covered. Heat 1 tablespoon butter in a heavy skillet over moderately high heat until foam subsides, then sautÃ¯Â¿Â½ cremini, stirring, until browned, about 7 minutes. Add porcini and reserved soaking liquid to skillet and boil, stirring, 1 minute. Remove from heat. This is an incredible chili, I got it from a chili contest winner. It takes time to make this chili! Meat Lovers Red Death Chili . The secret is in the meat seasoning! A must for any chili lover! Prep Time: approx. 1 Hour . Cook Time: approx. 4 Hours . Ready in: approx. 5 Hours . Makes 10 servings. MEAT SEASONING 2 teaspoons ground sage 1 teaspoon dried thyme 1 teaspoon dried basil leaves 1 teaspoon dried marjoram 2 teaspoons ground cumin 1 tablespoon chili powder 1 teaspoon garlic powder 2 teaspoons salt 1 teaspoon ground black pepper 2 teaspoons cayenne pepper CHILI 3 pounds beef sirloin 3 pounds pork sirloin 2 (14.5 ounce) cans tomatoes, drained and chopped 2 (15 ounce) cans tomato sauce 1 (16 ounce) jar salsa 2 teaspoons chili powder 1 tablespoon bacon grease fresh jalapeno peppers, seeded and chopped 3 onions, chopped 7 cloves garlic, crushed salt to taste 2 scoops ice cream, any flavor(hee hee) Directions 1 To Marinate: The day before preparing the chili, in a large bowl mix together the sage, thyme, basil, marjoram, cumin, chili powder, garlic powder, salt, black pepper and cayenne pepper. I made a 'what I have on hand' version for dinner tonight...

1 pork tenderloin - cut in 1/2 inch thick slices

Sprinkle with Garlic salt and add a teaspoon of dehydrated onion flakes. Brown in veg oil.

Add two cans of Campbell's cream of mushroom soup and a half of a soup can full of water. Simmer until tender.

Serve over noodles. We had asparagus as a veggie.

Grilled Pork Tenderloin Sandwiches

Prepare the pork and assemble the sandwiches at home. Wrapped in foil, they'll stay warm while you travel to the stadium. Or slice and refrigerate roasted tenderloin, and serve the sandwiches cold. Take along the dressing in a thermos or tightly closed jar, and allow people to dress their sandwiches themselves.

1/4 cup hot jalapeÃ±o jelly
1 teaspoon water
1 tablespoon paprika
1 1/2 teaspoons salt
1 teaspoon granulated sugar
1 teaspoon brown sugar
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
2 (1-pound) pork tenderloins, trimmed
Cooking spray
1/4 cup light ranch dressing
1/4 cup sweet hickory smoke tomato-based barbecue sauce (such as Bull's-Eye)
8 (1 1/2-ounce) hamburger buns or Kaiser rolls

Prepare grill to medium-high heat.
Combine jelly and water; set aside.

Combine paprika and next 6 ingredients (through pepper); rub evenly over pork. Place pork on grill rack coated with cooking spray; cover and grill 15 minutes, turning pork occasionally. Brush pork with jelly mixture. Grill an additional 5 minutes or until thermometer registers 155Â° (slightly pink).

Place pork on a cutting surface. Lightly cover with foil; let stand 10 minutes. Thinly slice pork. Combine ranch dressing and barbecue sauce. Serve pork and ranch mixture with buns.

Yield: 8 servings (serving size: 1 bun, 3 ounces pork, and 1 tablespoon sauce)

luckygardnr, your recipe sounded so delicious that I stopped at the grocery store on the way home last night to pick up the ingredients to make it for dinner. But I couldn't find the herb and garlic cream cheese! There were several other flavors, and I contemplated trying it with the chive and onion, but that didn't really appeal to me.

I stopped at a 2nd store to see if they had the herb and garlic, but no luck. What grocery store chain did you find it in?

They don't make the Garlic & Herb cream cheese anymore.

I signed up at the Kraft website the other day - and I read that in one of the threads on this recipe.

I was trying to sign up for this magazine, but can't find a place to do it. I used to get it, and loved it - but I haven't gotten it in about a year.
