Well Joan, I'm a FoodNetwork junkie. I watch that channel almost exclusively, and I recieve several recipe of the day emails from food magazines. If I see something that looks good and easy, I save it to my recipe files.

The other day I copied my recipe files onto a disc for my DD and there were 695 files! LOL! And I've added many more since then!

Then with Glenda and Connie and soooo many other great KT cooks adding their recipes.............the possibilities are unlimited!

Two other couples came over yesterday to play Canasta. We went out for dinner, & I made dessert. It was really good & tastes better warm. Despite the length of the recipe, it's easy to make, especially as it can be done a day ahead. There are a lot of apples, but the cake is better with a lot, & I rewarmed the leftover for breakfast this morning. Yum, yum. Brown-Sugar Spice Cake with Cream and Caramelized Apples from Gourmet, March 2006 For caramelized apples 8 Gala apples (3 1/2 pounds) 3/4 stick (6 tablespoons) unsalted butter, softened 3/4 cup packed light brown sugar For cake 1 1/2 cups all-purpose flour 1 1/2 teaspoons baking powder 1/2 teaspoon 1/2 teaspoon salt 1/2 teaspoon ground allspice 1/2 teaspoon freshly grated nutmeg 1/8 teaspoon ground cloves 1 stick (1/2 cup) unsalted butter, softened 1/3 cup packed light brown sugar 1 large egg 1/2 cup dark amber or Grade B maple syrup 1/2 cup sour cream 1 teaspoon vanilla For cream 1 1/4 cups chilled heavy cream 1/2 cup sour cream 2 tablespoons sugar Special equipment: an 8-inch square nonstick cake pan (2 inches deep) Put oven rack in middle position and preheat oven to 350°F. Lightly butter and flour cake pan, knocking out excess flour. Make caramelized apples: Peel and core apples, then cut into 1/2-inch-thick wedges. Spread softened butter in an even layer over bottom of a 12-inch heavy skillet and sprinkle with brown sugar. Add apple wedges and cook over moderate heat, without stirring, until sugar is melted and apples start to give off Cook, stirring occasionally, until apples are just tender and juices become syrupy, about 30 minutes more. Pour syrup from skillet into a small heatproof bowl, then sauté apples, stirring occasionally, until caramelized and very tender, about 30 minutes more. Return syrup to apples and cook until heated through, about 2 minutes. Make cake while apples cook: Whisk together flour, baking powder, baking soda, salt, and spices in a bowl. Beat together butter and brown sugar in a large bowl with an electric mixer at medium speed until pale and fluffy. Beat in egg until combined. Add maple syrup, sour cream, and vanilla and beat until combined well. Reduce speed to low and add flour mixture, then mix until just incorporated. Spread batter in cake pan and bake until cake is golden brown and a wooden pick or skewer inserted in center comes out clean, 35 to 40 minutes. Cool in pan on a rack 10 minutes. Make cream just before serving: Beat cream with sour cream and sugar using cleaned beaters at high speed until it just holds soft peaks. To serve: Run a thin knife around edge of pan, then invert cake onto a plate and cut into squares. Serve warm or at room temperature, topped with warm apple mixture and cream Cooks' notes: ·Caramelized apples can be made 1 day ahead and cooled completely, uncovered, then chilled, covered. Reheat over low heat. ·Cake can be made 1 day ahead and cooled completely, uncovered, then kept, loosely covered with plastic wrap, at room temperature.

These are sooooo yummy! Love to serve this! Easy Chocolate Lava Cakes Dark chocolate may be substituted for semisweet in this recipe. These can be made at least a day ahead least one day ahead. Pour the mixture Pour the mixture into ramekins, cover and refrigerate. Be sure to bring to room temperature 30 minutes before baking. Whisk in vanilla and confectioners sugar until well blended. Whisk in eggs and yolk. Stir in flour and pour batter evenly into prepared custard cups. 2. I made a 'what I have on hand' version for dinner tonight...

1 pork tenderloin - cut in 1/2 inch thick slices

Sprinkle with Garlic salt and add a teaspoon of dehydrated onion flakes. Brown in veg oil.

Add two cans of Campbell's cream of mushroom soup and a half of a soup can full of water. Simmer until tender.

Serve over noodles. We had asparagus as a veggie.

It was yummy :-)

From Cooking Light

Grilled Pork Tenderloin Sandwiches

Prepare the pork and assemble the sandwiches at home. Wrapped in foil, they'll stay warm while you travel to the stadium. Or slice and refrigerate roasted tenderloin, and serve the sandwiches cold. Take along the dressing in a thermos or tightly closed jar, and allow people to dress their sandwiches themselves.

1/4 cup hot jalapeño jelly
1 teaspoon water
1 tablespoon paprika
1 1/2 teaspoons salt
1 teaspoon granulated sugar
1 teaspoon brown sugar
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
2 (1-pound) pork tenderloins, trimmed
Cooking spray
1/4 cup light ranch dressing
1/4 cup sweet hickory smoke tomato-based barbecue sauce (such as Bull's-Eye)
8 (1 1/2-ounce) hamburger buns or Kaiser rolls

Prepare grill to medium-high heat.
Combine jelly and water; set aside.

Combine paprika and next 6 ingredients (through pepper); rub evenly over pork. Place pork on grill rack coated with cooking spray; cover and grill 15 minutes, turning pork occasionally. Brush pork with jelly mixture. Grill an additional 5 minutes or until thermometer registers 155° (slightly pink).

Place pork on a cutting surface. Lightly cover with foil; let stand 10 minutes. Thinly slice pork. Combine ranch dressing and barbecue sauce. Serve pork and ranch mixture with buns.

Yield: 8 servings (serving size: 1 bun, 3 ounces pork, and 1 tablespoon sauce)

luckygardnr, your recipe sounded so delicious that I stopped at the grocery store on the way home last night to pick up the ingredients to make it for dinner. But I couldn't find the herb and garlic cream cheese! There were several other flavors, and I contemplated trying it with the chive and onion, but that didn't really appeal to me.

I stopped at a 2nd store to see if they had the herb and garlic, but no luck. What grocery store chain did you find it in?

They don't make the Garlic & Herb cream cheese anymore.

I signed up at the Kraft website the other day - and I read that in one of the threads on this recipe.

I was trying to sign up for this magazine, but can't find a place to do it. I used to get it, and loved it - but I haven't gotten it in about a year.
