Help me recreate-Asian Noodle Salad

The cafeteria at the hospital I work at has pretty decent food. Last week on the salad bar they had an Asian Noodle Salad and it was wonderful! I asked one of the food service workers how it was made and all she could tell me is that the noodles were rice noodles and the dressing was a sesame dressing.

I have searched all over the 'net and haven't found anything similar.

Basically it was cabbage (maybe Napa?), thin rice noodles that were sort of chewy, not cooked soft, maybe some sesame seeds, I can't remember and maybe some shredded carrot.

Sesame dressing...not even sure where to start on that. I do have sesame oil and sesame seeds in the pantry, but what else would I add?
