For chicken caribeno:

4 chicken thighs

1 tbsp Curry

4 tbsp brown sugar

1 sprig fresh thyme

1 tbsp butter

1 can of coconut milk

1 chile panameno (jalapeno)

salt and pepper to taste

Leave marinating, for 30 minutes, the curry chicken thighs in half of thyme, salt and pepper to taste. In a pan, melt butter, add sugar. Brown and let that melt evenly. When this looks like caramel, add chicken and leave until browned. Add the remaining thyme, coconut milk and chili panameno. Let it cook the chicken and to reduce the liquid. Check the seasoning and serve immediately.
