Kickin Stuffed Zucchini �" from JasonâÂÂs BBQ Adventures

Did you know chipotle peppers are just jalapenos that have been smoked and and dried? Green jalapenos are not used for this though, the jalapeno is left on the plant till they fully ripen and turn red. In Mexico approximately 1/5th of jalapenos are used to make chipotle peppers. Chipotle peppers are generally left whole, ground into a powder, or canned with an adobo sauce.

Ingredients:

4 medium zucchini, sliced in half lengthwise

2 garlic cloves, minced and smashed

1 tablespoon extra virgin olive oil

15 ounce can black beans, drained and rinsed

3/4 cup shredded cheese

1/3 cup favorite salsa

1/4 cup finely chopped cilantro

1/4 teaspoon ground chipotle pepper

Coarse salt

Freshly ground black pepper

Sour cream (optional)

Instructions:

1. Prepare the grill for medium direct grilling.

2. Scoop out the centers of the zucchini, leaving about 1/4 inch of flesh along the walls. (Discard scooped out flesh or use for other purpose)

3. Combine olive oil, garlic, and ground chipotle pepper in a bowl and brush onto the cut side of the zucchini.

4. Generously salt and pepper the zucchini.

5. In a bowl combine the beans, 1/2 cup of the cheese, salsa, and cilantro, and season with salt and pepper.

6. Stuff the bean mixture into the zucchini and top off with the remaining cheese.

7. Grill the zucchini until the stuffing is hot and the zucchini is fork tender (approximately 10 minutes).

8. Serve immediately with sour cream (optional).
