Comments (5)The salt in cheese will pull moisture out of the asparagus.....you may not be storing them long enough for that to be an issue....but I think that even 3 or 4 hours would make for some watery asparagus.....and consequently soggy phyllo. Comments (42)Sorry I didn't see your post for a long time, lowspark. Okay, your doctor is going to hate me, but here you are, my Sephardi friend! These instructions are from The World of Jewish Cooking, by Gil Marks (yet another really good cookbook I got from my brother-in-law), and they look like the way my mother does it. That book explains that as Jews moved north from the Mediterranean, they couldn't find olive oil, but they couldn't use the lard their new neighbors favored, either, so schmaltz "became to Ashkenazic cooking what olive oil was to Mediterranean cooking and what sesame oil was to Near Eastern cooking." Schmaltz mit Gribenes 1 lb (about 4 c ups) chicken or goose fat 1/2 pound chicken or goose skin 1/2 cup water 1 medium yellow onion, chopped (about 1/2 cup) 1. Cut the fat into small pieces and the skin into 1/4-inch strips. Cook the fat, skin, and water in a large skillet or saucepan over medium-low heat until the water evaporates and the fat is melted, about 35 minutes. 2. Add the onion and cook until the onion and skin turn golden brown, about 5 minutes. Remove the gribenes (browned pieces) with a slotted spoon. Store schmaltz and gribenes separately in refrigerator or freezer. Note: this doesn't make much gribenes -- just a little custard cup full. Traditionally, they are rationed on the merit system: i.e., you bribe the children, who are attracted by the smell, to be good by threatening to give them all to Grandpa if they aren't. Some fresh gribenes on a piece of warm challa may just be worth a mild heart attack. But to be on the safe side, just don't eat this too often, and remember to take your Lipitor. If you put gribenes in the center of your matzo balls, as my grandmother sometimes did, that's called matzo balls mit neshomes ("with souls"). Comments (11)I always think charoset tastes better for having some time for the flavor to blend. I usually make it a day or two in advance to allow for that. Hard boiled eggs and the roasted egg for the seder plate can be made ahead. I haven't made charloette or carrot souffle before so I can't speak to those. The chicken in a sauce should reheat fine. Soup and matazh balls can be made ahead but depending on quantity may strain fridge room - at least they would for me at the beginning of Pesach. I haven't made matzah balls from a mix, but the recipe I use has the matzah ball mixture being refrigerated for 30 minutes before forming the balls and dropping them in the soup - I think the mixture could be made up to that point and held a couple of days in the fridge. Matzah crunch and meringues can be made in advance but make sure to pack them away in something air tight especially if you are somewhere that may have humid weather. Brownies can be made ahead but I think they will taste best made that day....See Morematzo ball soup recipes please.
Comments (16)Oh! Westsider's must be the quickie way. I've never done them in a covered pot. It's great that the butcher is putting all those parts together for you, agmss, so you don't have to break down the chickens yourself to get them and still make the best use of your sister's chickens. Since she's giving you fat, here's what I do to render it: Rendering chicken fat Put the lumps of fat in a little pan with a small onion or half a large onion, cut into large pieces. Don't put in too much onion or it'll soak up all the fat. Never turn your back on it while it's on the heat. Start on a medium high heat until the fat starts to melt. Turn it down a bit so it won't spatter Once all the fat is melted, turn it off and let it cool just a little.. Pick out the onion and any other solids with a fork, or use a strainer. Put a spoon in a clean glass jar (sterile if you're not going to use it all up right away). The spoon keeps the jar from breaking. Pour in the fat, carefully. (Remove the spoon.) Cover and chill. Keep in the refrigerator. When the fat solidifies the onion juice will separate out of it, on the bottom, as you'll see through the jar. The fat will be yellow from the onion, as well. Once it's solid, chicken fat can be frozen in an airtight package. Don't put a glass jar in the freezer. ------------ So, in my house, he who wants to eat chopped chicken liver gets to make chopped chicken liver. :) I checked. It's the sinew that makes it bitter, but it's easy to remove. Here's a great little how to de-sinew chicken livers video.
