Chicken Marbella and Marsala

Chicken Marbella is hands-down my favourite chicken dish. I love serving it to guests as it's easy and quite different, and it's always, always loved by them.

I have never made Chicken Marsala. I don't have, nor do I know what to look for in Marsala wine. Is it a white wine? Is chicken marsala as good as marbella? I know it will be different, I just wonder if it's worth it for me to buy a bottle of marsala (sweet or dry? I don't know) for one dish.

The two dishes can't be compared. I've never made Marbella but have looked at the ingredients. Marsala is basically a mushroom pan sauce made with Marsala wine. It's really good and it's an impressive dish for company. Give it a try!!!

If you're making the dish, you want a sweet Marsala (sweet Marsala Fine, if you can get it). No worries about buying a bottle for one dish; it keeps just fine.

I do have a recipe if you need it. Just let me know.

My two (or ten) cents.

Marsala is a fortified wine, like sherry and port (don't try to substitute either because the flavours are distinctly different).

Some years ago I read about Chicken Marsala in a book where it was someone's favourite dish. So I bought a bottle of Marsala and tested three or four variations of the recipe before I gave up trying to make it good and left out the Marsala with good results. My Chicken non-Marsala is quite a popular dish for company.

Next I tried ordering it in a restaurant and still didn't like it.

If it helps, the Marsala I bought was semi-sweet and tasted dire on its own. The bottle was labelled "cooking wine", which should have been a warning to me. I think probably a good quality (which this was certainly not) dry Marsala might be good for making the dish.

Small eggplants are traditional to southern india. I usually prepare them quartered to the base of the stem but not all the way through, stuffed with a spice mixture of coconut, chana dal, coriander, redchillies, and pan roasted with raw sesame oil. Served with short grain rice or basmati and a mild yogurt tomato side dish. Whgille- udumalpet is a small town in the southern Indian state of tamilnadu and it is renowned for it veggie farms. Roasted vegetables are terrific at room temperature, but are better if you nab them before they go limp or after all the moisture is mostly gone. I.e., a little under or very well done. In between, they can be soggy. They still taste good but not as appealing for a party. Try using "Lite" olive oil. That's the oil with the olivy part that makes EVOO so good mostly filtered out. It has a fresh taste like olive oil, without the strong fruitiness, and, since it doesn't have the solids, it has a higher smoke point. You should be able to safely take it to 425° F. If you do the roasted vegetables, you probably don't want to do the potato slices. That's all "medallions" are. The middle (large) slices of a potato. Cut about 3/8-1/2" thick, coat with oil and a little seasoning and roast. Better with yellow potatoes, or red skin, than white, because the flesh holds together better than the potatoes that make fluffy fries or bakers. OTOH, I'm not sure I'd do roasted mixed veg with Chicken Marbella. I think it needs something a bit bitter as a foil, and roasted veg are sweet. Broccoli is a good choice. Or you could do broccoli rabe or something. A favorite of mine for rabe or baby broccoli is to lightly saute with red pepper flakes and finely cut shallots or onions (saute those first until just softening), until just bright green and still crisp. Possibly best hot out of the pan, but good at any temperature. Or you could start the shallots/onions, and set aside, then bring to heat and throw in the rabe after you know they're on their way. Just steamed is a great way to go, too. :)

We usually roast a chicken on the BBQ and then have leftovers. I often add chicken to rice, which is what I did last night. I cooked the rice in the PC with celery, mushrooms, onion, and chicken broth. When it was done, I added chopped chicken and then put it on low heat for a few minutes. Often I make chicken salad with leftover chicken, and I put it through the meat grinder and use a recipe similar to what I use for deviled ham. I'm more creative with leftover chicken than I am with cooking chicken in the first place. If I do not put leftover chicken in rice, I often add it to wide egg noodles in a mushroom velouté sauce or else put it in a Japanese style soup. The last chicken soup I made was avgolemono because I had just picked lemons. Another method for cooking chicken is Yucatecan (Chicken Pibil), which uses sour oranges, chilies, and achiote paste. This is my favorite chicken for enchiladas, and I make an enchilada sauce with more achiote paste. I am now thinking about making another trip to the Yucatan.

They are totally different types of preparation. Chicken Marbella, as you know, is made from a long list of varied ingredients, it involves marinating, and uses a whole chicken. Chicken Marsala is generally just the breast, butterflied, and then quickly sauteed with the Marsala wine. It's a lovely, simple, flavorful dish- but there is really no comparison to be made between the two.

Marsala wine is made from white grapes, it can be sweet OR dry, and is used in a wide variety of ways in cooking in Italy, especially in Central ad Southern areas. Zabaglione, a sweet, cooked custard sauce, is one of the more famous examples. It's also wonderful in soup, especially chicken soup or mushroom soup, whether its creamy or clear. If you're going to buy Marsala to cook with, DO NOT buy the cheap American "Marsala" made by Masson or Taylor- those are foul and will add nothing but cheap saltiness to your food. Cantino Florio is a good producer of REAL Marsala (which comes from Sicily, and ONLY from Sicily). You can buy it in dry OR sweet versions, and a 750 ml bottle will generally not cost more than $15, and after you open it, it will last in the fridge for quite a long time.

RE: Marbella-

I agree with you-It's one of my all time favorite dinner party dishes. You can make it long in advance, and it gets better after it sits longer. However, I've gotten tired of the original recipe in the Silver Palate cookbook- it has too much sugar! I've also decided that its MUCH better when made with thighs ONLY! Breast meat doesn't need to be marinated like that, and if it sits too long in the marinade, it just gets mushy. I experimented and made a version of Marbella using tomato paste and Madeira, instead of sugar. Also, depending on your taste, you might try using GOOD dried apricots instead of prunes sometime. It was SOOOO GOOD!!! That combo of capers, olives and dried fruit is also delicious with pork, whether you use a grilled chop, or a roasted tenderloin. I almost always serve Marbella with saffron rice. I tihnk it's time for a Marbella dinner party!!!

Re: Marbella. Zachary, I agree on the chicken breasts - I generally make it with drumsticks or wings (and reduce the sugar by about a third).
