marita had questions about the progress of her curds and whey :) I took pics and will label them below and hopefully this will help clarify some areas as far as time and temp and how it affects the growth of the culture.
kefir kept at warm temp for 48 hrs
{{gwi:1502338}}
grains and curds after whey drained off
{{gwi:1502339}}
kefir at 24 hrs at cool temps
{{gwi:1502340}}
same cool fermented kefir...use 2 tsp this size per pint of cold milk to start next batch
{{gwi:1502341}}
cool temp curds and grains drained..note how much less formed they appear
{{gwi:1502342}}
The result of this : I took the 24 hr product and the drained firm curds/grains and combined with honey and fresh strawberries for a smoothie. It was incredible and thick and just luscious. I took the 2 tsp of that 24 hr kefir and put in a clean pint jar and added cold 2% milk to fill. I placed it in a area that will be mid 60's all day. In 12 hrs I will take out 2 tsp and repeat the process and refrigerate the remaining and we will use it in the AM. So I am making a pint every 12 hrs at present. I took the "dirty jar" that had a few grains/curds in the bottom and added all the whey back into it and filled with cold 2 % milk. I placed this with the other jar and will look at it in 12 hrs too . This is an experiment ! I want to see what happens...stay tuned . c
