Sharon, that chicken looks so nice and juicy. What a great photo of the bee collecting pollen!

Carol, those scalloped potatoes...love them...but still not sure if I like lamb or not!

Shaun, the soups look so good but that shrimp pasta looks even better. I am sure your guests had a lovely feast.

We had grilled burgers, smashed roasted potatoes and a salad last night. I tried making/baking Hamantaschan with apricot filling; from the Canadian Living Magazine Shelley sent in my swap package; so we had one of those with pumpkin pie custard for dessert.

    Well those are all good looking meals above...Terri we love strawberries....and you're welcome to come by here for salmon anytime.
    Not as good as that Pacific coast salmon though!

    Ann I would love to try your eggplant veal lasagna or the salisbury steak.

    And Lou that's a great idea to make that cornucopia!

    We were going to go to a favourite restaurant yesterday but when we arrived we found it closed, so we went to the nearest place which was an outdoor patio restaurant specializing in their own fresh vegetables and salad from their farm.

    As the weather is now so warm.....better described as hot (28 - 29°C which is 82 - 84°F) and very windy but with a blinding bright sunshine, we didn't have too much appetite. So we sat under the awning and Wolf had a ham omelette combo which came with the ever present chips and salad and I chose a spaghetti a la carbonara. We didn't feel the gale winds that hit other parts of the island the night before, but as a precaution I brought inside the things from the patio that might have flown about.

    Still the mannequin decorating the restaurant seems to have had her hat blown off her head.

    Still windy today....doors and windows are banging and boy is it warm outside!

    One of the local wineries not far from us has a live webcam which refreshes every 5 seconds so you can actually see cars and people moving. This looks out over their vineyards and the Atlantic on the northwest coast of Tenerife.

    I know this is OT but the wine bodega I mentioned above, has just readjusted their second and best webcam which was offline this morning. It also looks over their vineyards but has a view of the volcano Teide in the background with the north coastline.
    It's a lovely view which also updates every 5 seconds.
    There was a man working there in the field earlier, down in the bottom left corner of the picture and you could watch him moving.

    Here is my orange vegan cake, from Allrecipes originally. I discovered it when we were having vegan friends for dinner but now I use it all the time. Ingredients 1 large orange, peeled (or sub 1 cup orange juice) 1 1/2 cups all-purpose flour 1 cup white sugar 1/2 cup vegetable oil (I have used corn oil or also melted butter but then it's not vegan) 1 1/2 tsp baking soda 1/4 tsp salt Directions Preheat oven to 350. Grease an 8x8 inch baking pan. Blend orange in the blender until liquified, measuring 1 cup orange juice (or just use 1 cup orange juice) Whisk orange juice, flour, sugar, vegetable oil, baking soda, and salt together in a bowl. Pour batter into prepared pan. Bake in preheated oven until a toothpick inserted in the center of the cake comes out clean, about 30 minutes. (I usually add a little dash of nutmeg and cinnamon to the batter, and then sprinkle a bit of cinnamon-sugar on the top before baking.)

    Mmm cheese sauce and gnocchi sounds good to me Walnut creek. Jasdip, your salad and drumstick followed by your caponata look delicious. I did look up the difference between caponata and ratatouille and it seems caponata has the addtion of olives perhaps capers... did you add these to yours? We had a few cool days and while I‘m not in a real cooking frame of mind at the moment... I did cook up Fish and six veg. I had some red sauce left over from the pizza so I made a sort of patatas brava with potatoes and sweet potatoes

    Wow, 4 years. Such a cute age. And a cute cake. We have 5 under 5 with another on the way via 3 nephews. I meant 'passive' haha. Meaning, "you do your thing vegetables. I have no time to babysit." Next day it had a lasagna vibe with the top layer of the pasta. I usually make a harvest lasagna every early Fall...right around the corner. Another pic of the shrimp salad lettuce cups fell from the clouds, A couple weeks ago i sous vide four small sirloins. An easy taco pulling two out of the freezer and thawing with a dry brine, then a cast iron sear. Tossed in kimchi. Next day made a sirloin Banh mi for DH. I had a sirloin salad bowl. Side bean/corn salad About to hit the end of the Summer thread...bummer.

    DH visited our friend at the fishing village again and brought home fresh, fresh fish again. We had it with salad and asparagus and a sauce made from the butter and oil in the pan and lemon juice, salt and pepper… easy and tasty. The asparagus has a story to it in as much as I was in a hurry, saw it in the store, grabbed a bunch, vaguely thinking that the new asparagus from our northern regions must be coming in. When I got home I saw it was from Mexico??? So much for being careful about food miles. Ridiculous. Anyway it tasted OK. I’m trying to sort out better lighting for my winter photos, it’s quite dark at 5pm atm. The dining area still has the old halogen down lights because there was an issue with the dimmer when we switched to LED years ago… the halogen gives quite a yellow light, which annoys me… Not that it matters really.

    Sharon that web cam is facinating!

    Everyone's meals look and sound great but the one I want the most is the perch Nancy had! I haven't had perch in forever!

    Lou I love the cornucopia, very nice!

    Ann and Shaun you have me lusting after those wings, they look so good!

    Those chicken cakes have been on my got try list too....moving to the top.

    Last night I had a graving for veal on a bun, no idea why. Served on a homemade "5 minute bread" roll and topped with fried onions, peppers, mushrooms, provolone and tomato sauce.

    Sunday we cooked out for the first time this spring, you don't know how good it feels to be able to say that. It was one H$LL of a winter here. The worst in over 10 yrs.
    So we celebrated... Potato Salad, grilled fresh asparagus and red peppers and our almost famous Backwoods Marinated Grilled Chicken. Had a couple bottles of wine... lovely!

    Later we had coffee and dessert. I made Blueberry Upside-Down Cake from Ann's Dessert Collection. I swear there is magic in Ann's recipes. This was way better than I thought it would be...not a crumb was wasted.


    Obviously the lighting was different in the blueberry pic's. The first was in the kitchen earlier and the second at the table and it was getting dark out so lights were on. I'll have to work on that problem.

    Well, I already busted my New Year's resolution of a new recipe a week. So last night I tried Chevre Alfredo on pappardelle. It was very good. The chevre adds creaminess and something different to the typical sauce. The recipe was from The New Basics, but I changed it because I forgot to buy fresh basil, and I didn't have linguine so I used the pappardelle. I added finely chopped walnuts and mushrooms to the sauce. I also boiled crushed garlic in the cream, then removed it. Our usual green salad on the side.

    DH said it would have been fine without the walnuts - and while you didn't taste any walnut taste, I liked the little bit of crunch and the healthy aspect of the walnuts.

    I know, I know! Alfredo? Healthy? I won't be making that fat-rich meal again for a long while, heh-heh!

    I just answered youe Wafflebaker Post, so I might as well do this one too.

    I just darken the Recipe and go up to Edit and click on Select All .

    Then go back in and click on Copy. Go to your Word Processor and Paste . Then Name and Save it.

    Is this what you meant ???
    You could also ask for a Specific Recipe and it could be emailed to you.

    Mmmm Sharon that veal on a bun looks really good! Here it's a well loved snack to have a small thin steak inside a crusty bocadillo roll which is then toasted on a griddle with a heavy lid that squishes it all down to one thinner and crispy toasted sandwich. My daughter and her workmates used to have these during the morning when they were working in an office here. The toasted steak sandwiches are called "pepitos" locally.

    Nancy I bet you enjoyed your outdoor grill.
    I would love to make blueberry desserts here if we could only get them fresh. Yours looks really good!

    Gina I have that New Basics Cookbook and I know they have good recipes in there. I must get it out and look over some new ideas. I brought it back from Canada one year after having a wonderful ham with a whisky sauce dinner at my daughter's friend's house once.
    I had to have the whole book after tasting that dinner!

    Yesterday I made one of my old favourites....a meatball & sauce recipe originating on the island of Majorca (Mallorca) where I lived for many years. Called "Pilotes" (pee-LOW-tays) it's simple to make and is often served with a heap of crispy chips piled on top. The round clay cazuela ensures that the flavour develops. I find everything tastes better when simmered in a clay cooking vessel.

    We had it with a steamed combo of leek....including all the green tops, green beans and carrots.
    Again I made those oven baked crispy potato wedges. Will have to stop making those soon as I know they're so fattening, but we both love them and they go well with steamed veg.

    We sat outside on the patio even though it was breezy. After a few minutes we had to roll up the awning as it was flapping and swaying. It was so warm that we opened a chilled bottle of white wine which was nice and refreshing.
    By the time we were finishing our meal, the wind was too strong to sit outside anymore, as flowerpots and cats' dishes were beginning to fall over or fly through the air! We dashed inside for coffee.


    This morning we have full gale winds here with the sun blazing and the indoor temperatures around 25°C (77°F). Already some branches are down in our garden and the police or ambulance sirens have been frequent so there must be more trees down. I took a small video in our garden of the trees swaying this morning and posted it to Webshots. Here's the link to the video with sound.

    And for you Lovetoshop....in case you'd like to try this dish from the Spanish Balearic Islands :-)

    - 4 servings

    700 grams (about 1 1/2 lbs) ground veal or beef (I use 1/2 pork & 1/2 veal)
    3 eggs - beaten
    1 medium onion - minced
    2 cloves garlic - minced
    flat-leaf parsley - lots
    2 teasp oregano
    2 teasp thyme
    2 teasp sweet paprika powder
    2 teasp salt
    fresh ground black pepper
    cooking oil
    3 medium very ripe tomatoes - (skinning is optional) chopped
    1/2 cup milk & 1/4 cup water
    flour
    4 - 6 medium potatoes, peeled and cut into chips (french fries)

    Utensils needed:

    - small frying pan about 6 inches diameter
    - medium or large frying pan or chip fryer
    - earthenware or ceramic stovetop casserole with lid

    1) Mix meat with beaten egg, minced garlic, 2/3 of the chopped onion, salt & pepper, herbs and paprika. Add a few stalks of parsley chopped fine. Mix all together.
    2) Pour about 1 cm oil into small frying pan and put on medium heat. Put some seasoned flour (s&p) on a dinner plate and using a small spoon, scoop out meat mixture and begin forming meatballs with help of floured hands, rolling them in flour as needed. Put them on floured plate and when you have six and oil is hot, put them carefully using spoon into the small frying pan to brown.
    3) After two or three minutes turn meatballs over using a small spoon. Continue forming more meatballs.
    4) As meatballs brown, remove and put them into casserole dish, adding the fresh ones to the pan, six at a time.
    5) When done, strain out any burned bits in the frying pan oil and put in the rest of the onion with the tomato, as well as a handful of minced parsley. Cook on medium heat.
    6) After a few minutes add the milk and water. Taste and if tomato flavour is too sharp add a pinch of sugar, also some salt.
    7) Pour sauce over meatballs in casserole, (optional is pour it through a sieve for finer sauce) put on low heat with lid and simmer very gently 20 minutes, checking and turning them over once.
    8) Prepare potatoes and in oil in large frying pan or chip fryer begin making the french fries a few at a time, salting them and keeping them hot in oven.
    9) Put a few chips on top of the meatballs, add a bit of chopped parsley and serve at table with extra chips on each plate.

    Last night was a humble meatloaf served up with mashed potatoes and green beans. Simple, but it really hit the spot. You can tell by the pepper that this was my dish!

    SharonCB, if my pc weren't so old, I'd have checked out the webcam without hesitation, alas, computer needs a 30 minute nap before I can even attempt to do that. But, I wanted to comment on your cazuelita, I still love it. And needless to say, I also love the contents.

    Sharon/chase, your "Dagwood" masterpiece has inspired me to make sandwiches today. I have brioche that I'll turn into burger buns and go from there.

    Nancy, I enjoy all your pictures, but that image in the middle, with a sea of blueberries, has me salivating.

    Dinner was (look away Kathleen) Salmon atop a Corn Cake, and Broccoli/Ricotta Purée.

    I know this thread ain't about breakfast, but it is food related, and since I have a crazy passion for fresh pineapple, I had to whip up a quick Pineapple Lassi for breakfast; I'm also grilling the stuff, every chance I get.

    I think I'll make the boys some Dino nuggets, corn and fries before we head out to baseball.
    My big boy should be starting pitcher tonight(Highschool game though.) at a MLB Minor stadium. Everett AquaSox(Farm team for the Seattle Mariners.) Hubby will be there. I'm a little jealous..but he's got alot more baseball seasons to play.

    Terri, the marinade recipe for the chicken is posted on Gina's Chinese thread. It's the Asian Marinade, I called it Backwoods Marinade on my post here by mistake (that's how we refer to it here at home since it's the marinade we used when we had the Backwoods Deli).

    Here's the potato salad recipe. I also added a couple of shakes of Pensey's Ranch Dressing Seasoning... kicks it up a notch!

    Backwoods Basic Potato Salad

    3# cooked and cooled red potatoes, chopped
    4 hard boiled eggs, chopped
    2 lg stalks of celery, chopped
    6 green onions, chopped
    ¼ C sweet pickle relish

    Dressing

    1½ C Hellman's (Best Foods) mayo
    1 tsp celery seed
    1 Tbsp vinegar
    1 Tbsp sugar
    ½ tsp garlic powder
    1 tsp salt
    ½ tsp pepper
    1 tsp dry mustard

    Combine dressing ingredients and toss with potato mixture.

    Sol.....nice touch on the broccoli puree ;-)

    Tuesday night was breakfast...Pancakes with Wild Canadian Blueberry Topping (from American Spoon) and sausage.

    Last night I made I made Angelaid's recipe for Shrimp and Vegetable Egg Rolls (posted on the Chinese thread). They were excellent. I meant to take a picture, then forgot, but I plan on having them again tonight, so we'll see if I can remember. I mixed up a quick sweet and sour sauce using apricot jam, orange marmalade and vinegar that was yummy.

    Tuesday night we had an Italian roast pork dinner with mashed potatoes and rapini and I cooked the Eye of Goat Beans that Cathy sent me. Wow, these were the best tasting beans. Now I'm going to have to look and see if I can find them around here.

    And last night, Matt brought one of his girl friends home for dinner. Just a friend, but one that loves to eat and cook. My favourite kind of person. LOL! He had put in a request for a potato gratin along with roast chicken. So that is what we had.

    In keeping with my spa weekend, we decided to make appetizers our dinner meal. We went to a new local place that is getting some buzz and this is what we had:

    Aritchoke, prosciutto, and mushroom spring rolls with tarragon lemon aioli for me, and my husband had baby spinach, bacon, and goat cheese salad with sherry vinaigrette.

    We had lovely wines that the very good sommelier recommended to us and we were very pleased.

    OH I am so far behind! Everything looks so good since I was here last - pizza, shrimp, Greek, pot roast, chicken, etc., etc. It ALL looks and sounds wonderful.

    Beautiful day here so it will be grilling - chicken breasts (probably with BBQ sauce). Haven't decided on sides yet.

    We've been eating leftovers, take out and then take out leftovers this week. It's not exciting at all but I've been finishing up tax stuff and working on a major cleanup in my office before I have some networking done this weekend.

    The closest I've come to cooking is to admire the meals here. I'll be back in the kitchen next week.

    Marigene, now that is my kind of dinner. Gravy, Mushrooms, mashed potatoes, broccoli. Can't do better than that.

    I cooked some chicken before leaving for work yesterday morning and when I got home I put together a quick pot pie. Topped with buttermilk biscuits instead of pastry.

    Canarybird and Kathleen Li also have food photos that are awesome! Canarybird's photos of where she lives are something I think belong in a magazine!!

    Tonight, I am giving one of Lou's recipes a try. I am doing his stomboli, but am going to wing it a little bit and use his ideas of surf and turf, but will use shrimp and chicken. Some friends are coming over and I thought some antipasto, the stomboli and a side of sauteed zuchinni and yellow squash, and for dessert vanilla ice cream with chocolate mint sauce.

    The salmon on the corn cake and the puree with ricotta was so delicious looking and could be a litho for kitchen decor!!

    Nancy, it was a while ago you asked, but yes, I do wing the filling in the cutlets, ricotta, minced onion, mozzarella, locatelli, spinach. It all works. I use recipes for baking, but rarely for anything else. I am sure you wing things all the time. Thanks for the heads up on Angelaid's shrimp and veggie rolls. I can remember making egg rolls many years ago..I remember it was very time consuming. But now I am retired, so have the luxury of time..

    Sol, what a beau presentation! Of course I had to look! The brocc/ricotta puree sounds interesting. Is it served hot? I love grilled pineapple too. Can't wait for the grill to be out all the time..

    I haven't cooked dinner for 3 days. My sis from Tx was here in NY so we had some family things.

    The last time I cooked I made Orange Beef with snow peas and carrots over rice. I just winged it, used orange brandy in the sauce..

    Wow, what beautiful meals everyone is eating! I love all the photos everyone is posting now. I'm going to have to figure out how to post photos through my laptop one of these days.

    Recently, I tried a few new recipes that our family enjoyed:

    -- Havana Salad - a brown rice salad served cold with some chopped veggies and Cuban flavors, served next to grilled chicken

    -- Israeli Couscous Salad with Honey Lime Dressing - A cold salad with the larger couscous found in the ethnic food section of our grocery store

    -- Carrot, Ginger, Lentil Soup - This was the first time DH ever liked lentils

    They were all good make ahead dishes that could be served later in the day or the next day. I'm still trying to figure out how to cook and get kids to activities and do homework AND have time leftover for a bath!

    Just made a Philly Cheese Steak tonight. It was really good, Scrumpuuuulosis in a Roll !

    I used what was left of the thin Sliced Sirloin, from the large Surf and Turf Bracioli.
    It was about 1/2 lb. On a large Toasted Italian Roll.

    The Cheese is melted on the bottom for the photo. Usually on top of everything.

    Also, there are Simmered Onions and I used Tomatoes instead of Ketsup.
    It was sprinkled with Garlic powder, an Italian pinch of Oregano, Salt, Black Pepper,
    and some Parmesan Cheese.
    WHOOOIIEEEEEEEEEEEEEEEEEEE!!!!!!!!!

    I had my fluffy CheeseCake for Dessert topped with
    Strawberry's and Whipped Cream.
    I called it Strawberries in the Clouds.
    No Photo, it's all gone !
    Have to go on my cruise now , I'm on Town Watch tonight.

    I made chicken tikka masala for dinner tonight, but I guess it's a good thing I don't know how to post pictures yet because it's not a very photogenic dish! For dessert are chocolate chip cookies and some homemade vanilla ice cream. Not nearly as impressive as some of the other dishes here, but tasty nonetheless!

    Bri, some of my favourite dinners aren't very photogenic. I bet your tikka masala was delicious.

    Friday night we had grilled prime rib with homemade horseradish. It was the hottest horseradish I've ever made. Matt was very happy. I actually made it at his request. He wanted a bottle for him and another friend.

    Dinner tonight was Alexa's Chicken with Cashews and chicken fried rice.

    I am absolutely drooling over these pictures especially your Prime Rib Ann. YUM!

    I made Breakfast burritos this morning and then headed to my Mom's for more work. We ended up cooking hamburgers on the grill with lettuce, tomato, onions, mayo, ketchup and Provolone cheese. Potato Salad and baked beans rounded out the meal.

    Ann, I haven't made chicken and biscuits in....I don't know when. That is comfort food to me.

    Kathleen, that orange beef looks so good. Love your table setting and the robin's egg blue plates. Very pretty.

    Lou, your stomboli was a hit last night! I used chicken and shrimp instead of beef and shrimp. Our friends loved it and it was very, very good! I made individual ones and not a big one, and nothing dried out or got funky. Just delicoius and a great meal!

    Marigene, your soup looks beautiful!

    Since my spa weekend, I am not into the heavier meals with gravy and rich winter fuel foods. The light fresh flavors of produce and sticking to the "deck of cards" portion control of meats, fish, and poultry have had their rewards! As of this morning, I have lost two pounds without dieting, but just eating healthy.

    Also, I learned at the spa that I can take raw vegetables and even cooked ones and make great fresh sauces and condiments to food, and even when I need some fat, I can limit it or use alternative fats, like olive oil for example.

    I must not know how to use a camera very well, or at all really. The photos I take are dumb. Everyone here has such good photographs!

    Do you get down and get even with the food to get it so close and perfect, how do you do the lighting? Mind are looking down on the food and I guess my lighting isn't good enough. Maybe I should turn on every light in the kitchen!

    The photos and meals on this thread are always so inspiring. I haven't been posting much on this thread but I have been lurking and I have been cooking. Just lazy in the posting department. I really enjoy seeing what other people cook and eat. (my friends think I am wierd).

    Dinners lately, Japanese style pork cutlets with gyoza and green beans. (sorry about the blurry photo, still trying to figure out how to take good pictures in my kitchen).

    Pot roasted brisket with Rhubarb and honey, green beans, artisan bread in five minutes with olive oil/balsamic dip and cabbage leaves stuffed with white cheddar/bacon mashed potatoes, layered with sauteed onion/cabbage mixture. (the gravy on the brisket looks awful but was really good),

    We also had arroz con pollo (no pic).

    Last night was Halibut Provencal. (halibut fillets seasoned with s/p,cayenne, and fennel pollen, topped with fresh sage and basil leaves, wrapped in prosciutto and pan fried lightly. These were then nestled in fingerling potoatoes wich were precooked, cooled and then sliced and browned, along with onions, garlic, artichokes, black olives, and tomatoes, chicken stock and lemon juice, and finished off in the oven. Served with broccoli and a green salad, and five minute rye. Dessert was Ann's Strawberry Sourcream Shortcake.

    Those dinners ook delicious, Shelley. I have trouble with the light in my kitchen too, I have to turn on every light!

    Ann the chicken and the beef look very good. I have done the chicken with crispy walnuts, I never tried cashews though.

    Kathleen, I love the place setting up there..the blue stuff..now if I could find a single plate for 1.99..I'd buy a bunch too...I have no reasonable outlets..everything is only a couple bucks off retail price..not deep discounts!!

    Ann, because of your cashew chicken picture..I had to go find Alexa's recipe..That looks sooooooooo good!

    Lastnight was boneless country style ribs par baked then grilled and some crispy roasted red potates.

    Tonight..chicken something..Maybe Alexa's chicken or Sol's caramel chicken(I've still never made it!)

    Shelley, Halibut is the best. And I like what you did with it. Wrapping it in prosciutto, what a great idea.

    I worked yesterday and hadn't planned anything for dinner. So I made something very simple and meatless for a change.

    Pasta with red peppers and black olives in a cream sauce.

    Shelly, I'll have some of your brisket....yum! The Sour Cream Shortcake is on my list but I'm going to wait for local strawberry season here.

    Quick easy dinner tonight, Boneless Pork Loin Strips with a Apple Cider and Onion Sauce. Left over mashed potatoes recreated into Herb Potato Patties......:=))

    Dessert was the Yeast Sugar Cake. I had to force myself to cook, I would have been happy just eating the cake.

    Ann your pasta looks wonderful!

    Nancy, great looking pork strips. I am really impressed with your herb potato patties. Whenever I try making them from leftover mashed potatoes, they just seem to fall apart. I have tried adding egg, but no luck. What's your secret?

    Last night my son wanted chicken quesadillas with homemade quacamole. (he even volunteered to walk up to the store for ingredients). Seasoned with mexican spices some chicken breasts, sauteed them then covered and simmered on low in their own juices til cooked, then shredded. Sauteed some onions and diced some tomatoes. Put all this on some sundried tomato tortillas, with some white and orange cheddar, and some smoked gouda. Folded the tortillas in half, seared in a pan both sides and Cut in wedges. Topped with guacamole, served with some rice and beans and a side salad. Son was happy.

    Shelly, no secrets that I know of. :)
    I just got the leftover mashed potatoes out about 1 hr before making the patties, broke them up with a fork, added an egg and seasoned with Pensey's Green Goddess herb mix. Melted butter in a skillet and added the patties. We do use quite a bit of milk and butter when we make mashed potatoes, that may help. The 1 egg seemed like enough for the amount of potatoes....I made 3 patties.
