Finishing unfinished wood before install???

Has anyone purchased unfinished wood and sanded and finished it before installing?

I've been repairing my home and it has been and will continue to be a long process. It will probably take me a couple of months or more to get the whole floor installed (~800+ sf). I don't want to mess up the first parts installed by not being able to finish it right away. No extra $, so I am doing most of the work in my "free time".

I purchased "utility grade" flooring, unfinished, because I want a really rustic look and because it was very inexpensive. I believe it is oak (mixed red/white) 3/4" x 3".

A friend owns a cabinet making shop and has offered the use of his planer/sander to get all the wood pieces to the same height. He was the one who suggested doing the staining first then installing. It sounds like a good idea, but I know lots of folks here have actual experience with this sort of thing...and any info would be appreciated.
