Fantastic Miniature Chocolate Cheesecakes

On of the women I work with brought these into work and they were amazing. The recipe is from William Sonoma

For the crusts:

1/2 cup chocolate cookie crumbs

2 Tbs. unsalted butter, melted

1 1/2 Tbs. sugar

Pinch of salt

Have all ingredients at room temp. Preheat oven to 325. Lightly butter wells of a minature heart cheesecake pan. Can use miniature rounds as well

To make crusts, in small bowl, combine cookie crumbs, butter, sugar and salt and stir until blended. Divide mixture among the prepared wells. Using a mellon baller or small spoon press the mixture evenly into bottom of each well.

Bake until the crusts are set, about 10 minutes. Transfer the pan to wire rack and let cool completely. Reduce oven temperature to 275.

For Filling:

6 oz bitter sweet chocolate

8 oz cream cheese

1/2 cup sugar

2 eggs

1/2 cup sour cream

1/2 tsp vanilla extract

To make filling, place the chocolate in small heatproof bowl and set over but not touching barely simmering water in small saucepan. Stir often until chocolate melts. Remove from heat and set aside.

In bowl of electric mixer fitted with flat beater, beat together cream cheese and sugar on low speed until smooth, 2 to 3 minutes. stopping the mixer occasionally to scrape down the sides of the bowl. Add eggs, sour cream, and vanilla and beat until blended, stopping the mixer occasionally to scrape the sides of the bowl. Add melted chocolate and beat until completely blended, about 1 minute. Pour the batter into the crusts dividing it evenly.

Bake until the filling is set, 18 to 20 minutes. Transfer the pan to a wire rack and let the cheesecakes cool to room temperature. Cover and refrigerate for three hours (minimum) before unmolding.

To unmold, press an index finger through the base of each well and push up to remove the cheesecake and the metal disk. Carefully slide a small spatula underneath the cheesecake to remove it from the disk, then transfer to platter. Makes 12 miniature cheesecakes
