Cheesecake newbie has some questions

Hi,

I am normally much more active on other forums here, but have taken up the challenge of bringing cheesecake for a holiday potluck and thought, this is a great time for me to learn some serious baking of cheesecake myself. I have enjoyed cheesecake but never ventured into making it and would love to get some basic concepts clarified from the knowledgeable folks here.

On the Internet I found recipes of cheesecakes using ricotta cheese and plain cream cheese, and their combo. My question is, can both types of cheese be interchangeable, or do they lend a distinct texture or flavor? Are there benefits in using one type in a specific situation? Are there any combinations of ingredients that work best with either types of cheeses?

Another related question : will it be possible to use condensed milk and somehow thicken it, instead of using cheese directly?
