T&T Fried Potato Pancakes (Latkes?)
Comments (17)I made potato pancakes a week ago using cooked (but not mashed) potatoes, and I drained them before I added them. I use no milk or cream in my recipe (maybe some potato water, if necessary), and get the moisture from eggs. For two cups of cooked potatoes, I used two eggs and then added flour, salt, baking powder, (and onions) to make a batter. I have found that it is best to make smaller pancakes, cook them at a somewhat lower heat than normal pancakes, and for a longer time. If they are too big and cooked at too high a heat, they do not cook all the way through, but that can be remedied by storing them in a 220 degree warming oven, or by reheating them on a cooler grill. I made cornmeal pancakes this week-end, and I like them a lot better. I also prefer latkes made with grated raw potatoes, onion, egg, and Matzo meal. It's important to squeeze the excess water out of the grated potatoes when making this recipe, and I only make these in a skillet, since they require 1/4 inch of oil for frying. It is also best to make these smaller instead of larger, as the larger ones can fall apart when they are turned. I haven't made potato waffles from mashed potatoes, but I think that might be a good way of making sure that they are cooked all the way through. Comments (14)Sigh ... that's what I was afraid you'd say. Oh, well. I'm hoping that it will just be the top bit, and I can salvage the rest. I mean -- that is a LOT of potatoes to dump and replace (not to mention a lot of time!) I can always follow the old policy of "You are always right in your own kitchen. Buy yourself a trophy and put it over your stove. If you make a mistake, just change the name of the dish. Tell everyone it's your favorite recipe and you're very excited, because it came out particularly well tonight." I've done that several times, and it is completely amazing how well it works, even with real disasters -- like Hickory Flavored (i.e., burned) Chocolate Chip Cookies. (I think I've already told you the story of Authentic Australian Outback Cake, haven't I?) So I may just go ahead and serve Lithuanian Jewish Gourmet Purple Potato Latkes. Hungry young actors don't seem to care much about how food looks, anyway. I usually do use the FP for latkes, Lindac. Our family likes the potatoes grated, not shredded, and the FP does a fine job either way. But I decided to try the grinder this time, because I was making such a big batch, rather than keep emptying the FP. I figured I could put a big bowl lined with a tea towel under the grinder, then stop every 2-3 potatoes' worth, squeeze out the water, and dump them into the bowl of batter. That's why it's already mixed; I wanted the potatoes to get with the baking powder as soon as possible -- joke's on me. And it did work very well, actually. I think the texture is perfect -- definitely grated, not shredded (I used the disk with the small holes; I suppose you could use the other one if you want them shreddier), but not too pureed or smooth, either, and perfectly uniform. That's harder to do with the FP. So even if I have to start over -- or just have purple latkes -- at least I've learned something. But I'll keep checking to see if anyone knows a magic trick. Comments (19)I wonder if parchment paper would work? But at the point that you're making it that way, given an actual kitchen, is it worth being able to say you're making the waffle maker do more stuff? I don't get an electric cake pop maker, other than for small children to bake in away from dinner being made, when one could as easily use a cake pop mold in the oven. Given that an electric waffle maker is so much easier to use than a stovetop waffle iron, and that it doesn't take up too much more room, does it really need multiple functions? If you don't have another contact grill or grill press, perhaps it's a good substitute, like for the grilled cheese sandwich or panini. People over stress the whole "nothing that has only one purpose" idea. Yes, you can use a fork or spoon to juice an orange, but a good reamer really does work better. You can't make waffles without some kind of waffle iron/maker, so why not just let it be a waffle maker?...See Morelindac
