Flank steak stir fry, and an apology to Ann T

First, the apology - Over the years I've publicly poo-poo'd the idea of boiled rice, thinking it would be too "destarched" for my liking. But something inspired me to try Ann T's method tonight, and I'm sold. I used regular old Carolina long grain, and there was still plenty of starchiness when it was done. Her method is in the linked thread.

Next, the flank steak recipe. I haven't made this in many years, but I made it tonight and it was better than ever for two reasons: I used a cast iron skillet so I could really crank up the heat and keep it there, and, I didn't make extra marinade as I've always done in the past - it seems too sparse but it's not, and using more makes it a bit gummy. From an out-of-print Williams Sonoma cookbook, my comments in brackets:

Ginger Beef Stir-Fry

1 lb flank steak, cut across the grain 1/8" [I do about 1/4"]

1 T soy sauce

1 T Asian sesame oil

1 T soy sauce

1/4 cup fresh ginger, julienned to matchstick size

1 t salt

1 cup peanut oil

1 lb asparagus, optional, trimmed to 1/4" thick [seems exaggerated] and cut up diagonally

3 T water, if using asparagus

1 clove garlic, minced

3 T sherry or rice wine

1 t sugar

Marinate beef for 1/2 hour in soy, sesame and starch.

Salt the ginger for about 20 minutes to soften, rinse well and pat dry.

Heat peanut oil over high heat, and fry the beef for 1-2 minutes and remove.

Pour off all but 3 T of the oil, return to high heat and add water and asparagus.

Cook until water is evaporated and asparagus is almost ready, about 2 minutes

Add ginger, garlic, beef, wine and sugar. Stir fry until beef is done, about 1-2 minutes.

There's really no sauce, so I serve this over a small portion of rice with plenty of side veggies if I haven't done it with asparagus already.
