An electric fry pan is essential. Get some large dishpans, restaurant size bussing trays are perfect. Costco roast chickens.

Ditto! Make sure its a nonstick variety and buy a lot of paper towels! Wipe it out before washing and it's good to go. Scrambled eggs, pasta sauce, sauteed chicken, quesadillas are all easy to do. Do you have a bbq to use? That also provided many options for cooking.

I know it's not an ecological move, but in this instance buy a bunch of paper goods that are disposable. I also used something by Saran that were plastic laminated, but disposable cutting sheets. Apparently they are no longer made, but maybe some almost disposable plastic cutting mats will suffice.

We recently survived a full kitchen overhaul, so I know whereof I speak here:

One fairly inexpensive item which will give you a lot more flexibility than the appliances you have, is a little induction cooker, or 'hot plate'. You can get one for under $100 that plugs into an ordinary 110v outlet. (The maximum wattage you can get out of a 110 outlet is around 1800, so they don't make any higher than that for 110. They DO make higher wattage models, but they require 220, and I doubt you want to make that kind of investment for a temporary situation.) The 1800w Max Burton 6000 is available on Amazon for $77, and the 6200 is available for $86. Same guts, but the 6200 has a stainless case instead of plastic which the 6000 has.

You can get fancier than that, but the Max Burton unit is a pretty good and convenient item.

Now, if you're cooking one pot meals, I heartily recommend getting an induction capable pressure cooker. I have the unit at the link--it's a 8 qt stockpot, a 4 qt saute pan, a pressure lid that works on both, and a non pressure lid that works on both as well. It's a great deal, and if you haven't tried pressure cooking, you're in for a treat. I never had a pressure cooker until I was in my fifties, and now I'll never have a kitchen without one. You can cook a lot of great stuff really quickly. Pot roast in under an hour. All sorts of comfort foods quickly: stews, chili, soups. This unit works fine on induction--I've tried it. And this is a very good price: under $100 including shipping.

If you've never pressure cooked, do a Cooking Forum search on pressure cooking; you'll find a lot of enthusiasts. Or go to missvickie.com or hippressurecooking.com. Pressure cooking is undergoing a bit of a renaissance, and the new items are much safer than your grandma's jiggle top pressure cooker.

You might blink at the outlay, but trust me, you'll get your money's worth, and these items will still be useful even after you have your kitchen in place. (I now use my induction hot plate on the back porch when I fry fish. Doesn't stink up the kitchen.)

We didn't have little ones but most of what we did would work for a family.
First off, make sure to plug the refrigerator into a different circuit from any cooking appliances. We popped the breaker once and then brought out a couple of long extension cords from the garage to plug things into different circuits.

If you have a deep laundry room sink it helps to get an extra bus tub and turn it upside down in the sink, then you can put another bus tub on top of it to wash dishes at a more comfortable height. We put a drying rack and mat on the counter next to the sink. (We were lucky and had a little bar sink in the temporary kitchen area next to our dining room - so we could use that for rinsing fruit or vegetables during prep and for filling the expresso machine.)

If you have the space, it's nice to have one table for eating at and another table for the appliances and food prep. This was our prep table (normally it's part of our yard furniture). Our old microwave was huge (from the late 70's) so that's the big thing under the table. The ice chests are under the table because normally we store them in the bar and moved them out for the reno to more easily use the bar sink.

How soon is your renovation starting? Do you have some time to do some advance preparation?
One thing we did was to prepare, portion and freeze some meals ahead of time. We bought plastic microwaveable disposable containers from Smart and Final to pack things like beef stew, spaghetti sauce with meatballs, and chili in so we would be able to thaw and reheat in the microwave without any dishes to clean. I also cooked a turkey and froze portions of the turkey meat, gravy and mashed potatoes.

We cooked steak, chicken and burgers on the grill. To vary things a bit, I baked an apple cake in the covered grill with the aid of a thermometer though playing thermostat only fun once or twice.

When I made chicken in the grill, the leftovers could be used with pre-washed salad greens, additional vegetables and dressing or vinegar and oil for a lunch salad or for sandwiches. Frozen turkey portions also could be used for salad or sandwiches.

A hot water pot is nice - especially if you have tea drinkers or to kick start making oatmeal in the microwave.

Vegetables were cooked in a steamer on a hot plate or in the mircrowave.

I didn't use a crock pot or slow cooker but I've seen some suggest using crock pot liners to minimize clean-up.

Boy, this made my life easier:

We purchased an electric skillet, which we still use after the reno, and an electric pot, which I now use on the rare occasion I deep fry something. In the pot we could boil water for pasta, make rice, potatoes, etc. We could do meat and/or veggies in the skillet when we weren't using the grill. That along with the toaster oven & microwave, we could cook/reheat most basic meals. We had big salads with some kind of precooked chicken once a week, a pasta dish once a week, & got pizza on Fridays. We didn't really eat out. Good luck, it's worth it when it's done. Tell yourself "this too shall pass."

Between the micro, toaster oven, electric fry pan and outdoor grill, I got along just fine. If you don't have an electric fry pan maybe a friend has one to loan you. Also, a slow cooker might come in handy. Roaster chickens from the grocery store are a great help. You can do hamburgers, stews, chops, steaks, fish, chicken breasts in electric fry pan very easily. Nice paper plates should help with the clean-up a lot.

I was going to suggest an induction "hot plate" but others beat me to it. I just received my Max Burton last week and I love it.

OP here--thanks for all the great ideas. I am going to look into the hot plate and electric skillet and purchase one of them. I also need to buy an electric kettle b/c I can not survive without my tea!

The renovation starts in one week and we did freeze some foods for the kids and I'll try to make some more this week. I wish the weather was nicer because it would be perfect to grill outside but it is still cold in NY.

AngieDiy--so nice that you were able to have a temporary kitchen in the laundry room!

You can probably find something for short term use that is acceptable and costs less, but the Zojirushi hot water pot works really nicely for tea.

As soon as SIL and family moved into current house, started a MAJOR kitchen renovation... bringing it out of the 60's. They moved the fridge (that was NOT staying) down a few stairs into her laundry area... she was lucky to have a good sized space there. She started with 2 good sized folding tables to hold stuff, but folded them up and put on taller "saw horses" to be more like a counter. They LIVED outta crock potS, electric skilletS, microwave and things for WEEKS. She bought 2 decent single burner things to be able to do things like bacon & eggs. Also a fairly large "toaster oven". She had the utility sink beside washer for cleaning up.

Project took a few months, if I remember correctly. No LITTLE kids... niece was maybe 9-10 at the time. Seem to remember her making a BIG donation to Good Will when everything was done... anything she just did NOT wanna see/use again!?!

Not a renovation story, but slightly related. Several years ago, oven DIED... stove top worked fine. Age of range made it silly to even think of having it repaired, but a NEW one wasnt immediately in the budget. I got by fine using the gas grill out on deck for just about anything normally done in oven. Even made a CAKE out there... no BBQ taste, but temp and timing were a little dicey.
