and another but this is just the chicken with "gravy"...Chicken Mushroom Casserole

I bake rice in the oven next to things...

standard rice to water ratio...but hot or boiling water or stock..cover well with foil and bake at 325-375 for about an hour, the higher the temp, the less it bakes...so at 375, maybe 30-40 minutes...

Aw, for Pete's Sake, let 'em eat PBJ's one night!
They'll love it, you get to rest and there's no law against it!! :-)

Yep - PB and J or take out pizza would top my list. However, if you really want to try to cook something make this.... it is awesome!

Basque Chicken and Rice - serves 4-6
2 TB olive oil
8 pieces of chicken
3 cloves garlic, minced or grated
1 medium onion, chopped
1/2 green bell pepper, chopped
opt. small jar of strips of pimento
opt. 1/2 cup halved olives
2 cups rice
4 cups chicken broth
1 bay leaf
salt and pepper
opt. pinch of saffron
opt. pinch of smoked paprika

Heat a large saucepan or Le Creuset French oven on the stove top, add oil, saute chicken pieces until browned, remove to a platter. Add garlic, onion, bell pepper and saute until onion is transparent.
Deglaze pan with about 1/4 cup water. Return chicken to the pot and add rest. Bring to a boil, cover, reduce to a simmer. Cook 25 minutes or until rice is tender.

My first thought also was takeout: Pizza or chinese or whatever. No reason to have to cook when you are sick. Or PBJ or cereal...they will survive one day for God's sake.

You're much better person than I am! If I were sick, my husband doesn't need to take care of me but at least I expect him to take care of little man and himself! Canned, frozen, takeout food whatever they can eat. You need a break so just take one. They will survive for one less homemade meal. Hope you feel better soon.

Chicken, canned stock, stir fry veggies, a little rice...chicken soup, so you'll have it on hand when you want something!

When I am sick it's "leftovers" for dinner around here! Whatever he can find in the fridge!

I hope you feel better soon, there is a lot of "crud" going around. I just got over 21 days of bronchitis....no fun at all. I hope that yours is just a short-lived bug!

Terri, thanks for the link. I was "thinking" something like that but couldn't even verbalize it. Anyways I printed out the recipe, handed it to the dds, and they made dinner with help from dad. Never mind they left out the soup LOL. Still OK as at least I didn't have to make it.

I'm glad it worked out...and the girls and dad did some work...my husband would take everyone through the drive thru...

I was really sick last week and at breakfast my son said "Mom, please don't cook anything for us, we'll find something ourselves. We'd rather you not touch our food. We don't want to catch what you have."

When I'm sick not only do I try not to cook, but I don't unload the clean dishes from the dishwasher. I don't see the need to touch every single clean dish with my "germy" hands. I tell dh and the kids that I will load all of the dirty dishes if they will just put away the clean ones.

do what I'm doing tonight....chicken in a fry pan, cut up an onion also in fry pan, turn on heat and brown all, add enough rice...a lougt a cup for a whole chicken....add chiucken broth top cover, .....add seasonings...I added about 1 tsp of curry powder.....and when it's done....rice cooked....I add some veggies....frozen is OK....fresh is better.

I can vouch for the Basque Chicken dish. Wonderful! TeresaNC originally posted it and like she did, I used a package of Yellow Rice, the Vigo brand. Comfort food for sure.

I'm glad they did the cooking, not only because you need your rest, but as Dlynn said, it's just not a good idea to be touching the food and utensils they'll be eating and eating off of. It would be so hard to not contaminate anything. Of course, living in the same house it's hard not to do that anyway.

I hope you are already feeling much better by the time you read this.

I think if you're all living in the same house, you're going to exchange germs anyway, but if you're sick you shouldn't HAVE to put away the dishes or cook.

I'm glad your family made dinner for you, even without the soup, LOL. Now feel better.

Thanks for all offers to help. My bff did bring over some chicken soup on Monday night so that helped a lot too. I had no idea how much worse Tuesday was going to be, though.

I'm going back to bed for a quick nap before everyone comes home from school.

Wish they would eat PBJ sandwiches but none of them like them - not even for school lunches.

Pour a jar of picante sauce over pork tenderloin in the slow cooker/crock pot. Cook for a few hours and serve over rice.

I'm not sick very often and when I am dh will take over. Whatever he makes for us 3 (dad, dh and me) is fine.
But when I work a lot and don't feel like cooking one simple popular meal I do is chicken (on the bone ) in the oven with store bought BBQ sauce. We usually have mac and cheese from a box with it, along with a simple vegetable like steamed broccoli.
Very little hands on time but surprisingly good and complimentary.

You could also call for pizza delivery. But... Shouldn't your family cook for you? Hope you feel better soon :)

Alexa, I made your Basque Chicken and Rice recipe last night and it was very good! Having the leftovers for lunch today. Although I halved the recipe, I still could not really detect the saffron and the smoked paprika, but I love the olives in this.

Whoo hoo, I went looking for this thread and here it is, right on page ONE.

Alexa I made the basque chicken last night as well.

I served it along with warm bread and a green salad and it was a HUGE success. Fortunately I made extra as everyone went back for more and our friends loved it.

Best of all - only one pan to clean up.
