Too sick to cook but everyone will still want dinner

My head fells full of cotton and I haven't even thought about dinner.

I need a quick one dish meal. I have chicken, rice, gazillions of cans of stuff, bok choy, fingerling potatoes, stir fry veggies.

I'd like something that will cook itself. I'm not upto slaving over the stove.

Not being rude or anything...off to take a nap. Will check back later.

Chicken Rice Casserole

Here's one using pre cooked chicken..Chicken and Potato Casserole

and another but this is just the chicken with "gravy"...Chicken Mushroom Casserole

I bake rice in the oven next to things...

standard rice to water ratio...but hot or boiling water or stock..cover well with foil and bake at 325-375 for about an hour, the higher the temp, the less it bakes...so at 375, maybe 30-40 minutes...

Aw, for Pete's Sake, let 'em eat PBJ's one night!
They'll love it, you get to rest and there's no law against it!! :-)

After I got divorced I was living alone and occassionally I would invite a lady over for a home cooked meal rather than going out someplace. My problem was that although I love to cook, I didn't have a clue what the ladies might want to eat so I hit on a solution that worked great for me. First off, I planned meals that are easy to make individual portions such as stuffed baked chicken breasts, chicken cordon bleu, Steak Florentine, Stuffed baked pork chops, Fried chicken, baked fish, broiled salmon, BBQ ribs, meatloaf, my own oriental stir fried shrimp & chicken, Saur Braten, Roast beef, lamb chops and smoked turkey, along with some sides such as shrimp fried rice, rice pilaff, wild rice, my own succotash recipe, and even some twice baked potatoes. I would devote an entire day to cooking and when I cooked I made at least 8 portions of each item and sometimes cooking two or three items in the oven at once. When they were done I put them up with the Seal-a-Meal and popped the portions in my freezer, but not before I had plated at least one portion long enough to take a picture of it, before I sealed that portion too. I then sat down to my computer and made up a menu. When the ladies showed up for dinner they would ask, whats cooking? I would simply hand them a menu and say, "Pick our what you like". The first couple times I presented the menu I got some silly looks, but they were gracious enough to stay for dinner anyway, but after that first experience they all said they wanted to do it again. When they started telling other women in our social set what I did suddenly I had lots of ladies scheming a way to get an invite....LOL Now that I am with Jan, I still enjoy cooking like that, and it is so convenient to just go out to the kitchen and select what you want.

I don't mind the cooking part, it's the decding what to cook that I am tired of. I admit that I can't cook like I used to because of increasing physical limitations. I reluctently am using more and more convience foods, which makes it much harder to adhere to the special diet, (diabetes/heart disease/high blood pressure) that we have been eating for 35 years now. It does become more difficult to find the right things to eat when these problems are suddenly dumped on you. Our diet adjustments came one at a time, thank goodness. I still sometimes get tired of reading labels and deciphering how much the carbs in this plus the fats in that are going to affect DH's blood sugar. We do eat a huge amount of vegetables. It would be rare to have a meal without at least 2 low or no carb side vegetables along with a garden salad and the main course. I find it hard to fill my very active DH up at times.

Cynic, is that all???? I better get moving. LOL Maybe I will surprise my family and leave them to fend for themselves and take that trip to England for Christmas. I'll let them have my house and they can do their own cooking. Fat chance, they would starve. I think Laura's boyfriend knows how to cook though and my brother's specialty is Greek pasta salad. My sister is the Queen on Lean Cuisine. LOLOL Not exactly a nice Christmas dinner is it. Okay I have been reprieved, a ton of weight has been lifted off my shoulders. I just called my brother and he and his girlfriend are driving to Toronto for Thanksgiving. David is still at his store counting stock and will be there pretty much all night since the store just closed. He sounds happy to be retiring but I feel kind of sad for him. End of an era. I then called my friend Kathy to see if she had any bacon on hand and she said she did. I asked her to make me some bacon bits for the broccoli salad but she said not to bother making it since rarely do we have a cold salad at Thanksgiving and then she said I ruined her surprise. Kathy is one of my childhood friends and it has always been the tradition in her family to have that marshmallow 24 hour salad for their holiday dinners. I consider that more a dessert salad but hey who am I to mess with tradition and this is her first Thanksgiving without her Mom so I said that was wonderful she made the salad. I like it but usually at a shower or something like that. I never thought to make what we call my Grandma's green lime jello salad made with pineapple, celery and cream cheese LOLOL At our family dinners there was always that pale green Pyrex casserole dish on the holiday table that held the lime green salad. Refreshing it was and I had forgotten all about it. I will have to remember it for Christmas. Out of all the vintage Pyrex I have in my huge collection that pale green casserole dish is one I have never been able to find at yards sales or thrift shops. I think my sister Lizzie absconded Grandma's green dish so I will have to ask her if she still has it. Lime green cream cheese jello is just not tradition without serving it in that dish. Oh my. I now don't have to put 2 extenders in the table now so I should have a table cloth that will suffice. I know I should do it anyway but now I don't have to make that extra effort to make sure everything in my house is in perfect order and now I can hide books and my computer stuff on the attic stairs and the dog can still have his toys out and the dog food bag can remain where it is. I was getting ready to get on my butt and start cleaning baseboards since the "girlfriend" was coming. Tomorrows Menu Turkey Stuffing Cranberry Sauce Brussel Sprouts sliced cooked with garlic and cream Orange glazed carrots Squash Mashed turnip Mashed potatoes and gravy Tray with raddishes, olives, my pickled beets 24 hour salad Rolls Pumpkin pie Butter tarts - my Mom's filling recipe, Tenderflake shells I will go raid my Pyrex collection for all the autumn coloured pieces and that way I can keep the food warm in the oven and put right on the dinner table to serve. I wouldn't do that with good china which I don't have right now. I'm still waiting for my Grandma's china to make its way back to Windsor - it just needs a ride LOL Grandma's Royal Doulton china and her pale green Pyrex dish now that for a beautiful holiday table. We're going to my step-daughters. I am bringing pies (pumpkin, chocolate cream, and cherry) and pumpkin pudding for step-daughter (who doesn't like pie crust). Also, some cute Turkey cookies made of fudge striped shortbread cookes, mini-peanut butter cup, rolo, and candy corn all mounted on top of a fudge covered graham cracker. I will also bring my families traditional cranberry salad (ground fresh cranberries folded into a mix of semi-set red jello, coolwhip, crushed pineapple, finely chopped walnuts, and mini marshmallows) - delish! We provided the turkey and I'm mixing up the dressing and taking it over to cook... but soon to be son-in-law is cooking it! Cleaning - started and got halfway done but quit when we found out dinner wouldn't be at our house anyway :-) Will have to finish before decorating the house for Christmas this coming weekend!

Yep - PB and J or take out pizza would top my list. However, if you really want to try to cook something make this.... it is awesome!

Basque Chicken and Rice - serves 4-6
2 TB olive oil
8 pieces of chicken
3 cloves garlic, minced or grated
1 medium onion, chopped
1/2 green bell pepper, chopped
opt. small jar of strips of pimento
opt. 1/2 cup halved olives
2 cups rice
4 cups chicken broth
1 bay leaf
salt and pepper
opt. pinch of saffron
opt. pinch of smoked paprika

Heat a large saucepan or Le Creuset French oven on the stove top, add oil, saute chicken pieces until browned, remove to a platter. Add garlic, onion, bell pepper and saute until onion is transparent.
Deglaze pan with about 1/4 cup water. Return chicken to the pot and add rest. Bring to a boil, cover, reduce to a simmer. Cook 25 minutes or until rice is tender.

My first thought also was takeout: Pizza or chinese or whatever. No reason to have to cook when you are sick. Or PBJ or cereal...they will survive one day for God's sake.

You're much better person than I am! If I were sick, my husband doesn't need to take care of me but at least I expect him to take care of little man and himself! Canned, frozen, takeout food whatever they can eat. You need a break so just take one. They will survive for one less homemade meal. Hope you feel better soon.

When I am sick it's "leftovers" for dinner around here! Whatever he can find in the fridge!

I hope you feel better soon, there is a lot of "crud" going around. I just got over 21 days of bronchitis....no fun at all. I hope that yours is just a short-lived bug!

Terri, thanks for the link. I was "thinking" something like that but couldn't even verbalize it. Anyways I printed out the recipe, handed it to the dds, and they made dinner with help from dad. Never mind they left out the soup LOL. Still OK as at least I didn't have to make it.

Caliloo, guess what's for dinner Sunday night. We're having guests and your dish sounds delish!!

Thanks for the well wishes everyone. Off to bed now. Can only get better from here on out.

I was really sick last week and at breakfast my son said "Mom, please don't cook anything for us, we'll find something ourselves. We'd rather you not touch our food. We don't want to catch what you have."

When I'm sick not only do I try not to cook, but I don't unload the clean dishes from the dishwasher. I don't see the need to touch every single clean dish with my "germy" hands. I tell dh and the kids that I will load all of the dirty dishes if they will just put away the clean ones.

do what I'm doing tonight....chicken in a fry pan, cut up an onion also in fry pan, turn on heat and brown all, add enough rice...a lougt a cup for a whole chicken....add chiucken broth top cover, .....add seasonings...I added about 1 tsp of curry powder.....and when it's done....rice cooked....I add some veggies....frozen is OK....fresh is better.

Here is hug to help you feel better. Now get some more rest, let them cook tonight again to practice and surprise you.

I can vouch for the Basque Chicken dish. Wonderful! TeresaNC originally posted it and like she did, I used a package of Yellow Rice, the Vigo brand. Comfort food for sure.

I'm glad they did the cooking, not only because you need your rest, but as Dlynn said, it's just not a good idea to be touching the food and utensils they'll be eating and eating off of. It would be so hard to not contaminate anything. Of course, living in the same house it's hard not to do that anyway.

I hope you are already feeling much better by the time you read this.

I think if you're all living in the same house, you're going to exchange germs anyway, but if you're sick you shouldn't HAVE to put away the dishes or cook.

I'm glad your family made dinner for you, even without the soup, LOL. Now feel better.

Nice to know that in a pinch they won't starve.

Thanks for all offers to help. My bff did bring over some chicken soup on Monday night so that helped a lot too. I had no idea how much worse Tuesday was going to be, though.

I'm going back to bed for a quick nap before everyone comes home from school.

Wish they would eat PBJ sandwiches but none of them like them - not even for school lunches.

Pour a jar of picante sauce over pork tenderloin in the slow cooker/crock pot. Cook for a few hours and serve over rice.

I'm not sick very often and when I am dh will take over. Whatever he makes for us 3 (dad, dh and me) is fine.
But when I work a lot and don't feel like cooking one simple popular meal I do is chicken (on the bone ) in the oven with store bought BBQ sauce. We usually have mac and cheese from a box with it, along with a simple vegetable like steamed broccoli.
Very little hands on time but surprisingly good and complimentary.

Alexa, I made your Basque Chicken and Rice recipe last night and it was very good! Having the leftovers for lunch today. Although I halved the recipe, I still could not really detect the saffron and the smoked paprika, but I love the olives in this.

Whoo hoo, I went looking for this thread and here it is, right on page ONE.

Alexa I made the basque chicken last night as well.

I served it along with warm bread and a green salad and it was a HUGE success. Fortunately I made extra as everyone went back for more and our friends loved it.

Best of all - only one pan to clean up.
