Dependable Flour Substitutes

I have a friend who is gluten intolerant. Short of ordering the very expensive flour substitute from Williams Sonoma (I think it's called "Cup for Cup"), is there anything I can dependably use as a subsititue for flour in my recipes?

I'm primarily thinking about recipes in which flour is used as thickener.... not baked goods that use a lot of flour.
