remembered chocolate sauce.....

the molten lava cake thread reminded me.

I used to have a wonderful and easy recipe for chocolate sauce....and I seem to have lost it...

It was quick as a wink and wonderful!

You chopped some chocolate in the blender....either bittersweet or bakers...I forget...then added some sugar, maybe brown, maybe white, maybe both...and maybe karo...maybe not...vanilla...and then heated cream to an almost simmer and poured through the hole into the chocolate with the blender running....and voila!! Chocloate sauce...

anyone have a recipe like that?

This is pretty easy and so good I package it and give it away as gifts. I suppose you could make it in a blender although I haven't ever tried.

Hot Fudge Sauce

INGREDIENTS:

- 1 (8-ounce) package unsweetened chocolate baking squares
- 1/2 cup butter or margarine
- 2 cups sugar
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt

METHOD:

Melt chocolate and butter in a large, heavy saucepan over low heat, stirring constantly. Add sugar, stirring until dissolved. Add milk, and cook, stirring constantly, 2 to 3 minutes or until thoroughly heated. (Do not boil.) Remove from heat. Stir in vanilla extract and salt. Cover and chill leftover sauce up to 2 weeks.

To reheat: Microwave sauce in a glass bowl at HIGH 1 minute. Stir and microwave at HIGH 1 more minute or until sauce is thoroughly heated.

NOTES:

Whiskey-Hot Fudge Sauce:

3 tablespoons Southern Comfort
Stir in Southern Comfort with vanilla extract, and salt

Espresso-Hot Fudge Sauce:

2 tablespoons instant espresso

I found this recipe with a google search. It sounds similar to yours if you modify the instructions to add the hot liquid while whirling the chocolate. I hope this helps.

Sweet Chocolate Sauce

Servings: 3

2 squares semi sweet chocolate, cut up
1/3 cup light corn syrup
1/2 teaspoon vanilla extract
Dash of salt
1/3 cup hot milk

Put all ingredients into Osterizer container, cover and process at BLEND until smooth and creamy.

Sorry, it is not safe to can. The ph of the cocoa is high. I know there are some recipes for raspberry choc. sauce, etc., but the fruit in them makes it higher in acid and allows it to be safely canned. The ph of coffe, I would have to try to look it up to be sure. This is a cooking recipe, not a canning recipe. The two are not the same when it comes to food safety.

In my experience the skin will not reincorporate well. Peel it off and layer a piece of plastic wrap right on top of the sauce. Literally touching the sauce. This will stop a skin from forming.

OP would have to verify, but I'm thinking NOT "sweetened/comdemsed", since significant amount of sugar(s) added... but DON'T take my word on that. BUT I've made a pretty tasty caramel sauce from sweetened condensed... actually dulche de leche. UNopened can (remove paper wrapper) in pot deep enough to cover by an inch or so. Bring up to simmer and let go for... 1 hour will give you something about the color of posted picture... 2 hours darker and thicker. DO not attempt to open can till COOL. Makes for a nice cheese cake... layer on crust before base goes in, swirled thru base before baking or drizzled over finished/chilled cheese cake. A spoonful in your coffee is a nice change from sugar. It's addictive!

No one else is allowed to copy them or make them. lol DARK CHOCOLATE SAUCE This is a lovely tasting sauce I like to serve over ice cream. 1 1/2 cups heavy cream 2/3 cup firmly packed dark brown sugar 4 ounces fine-quality bittersweet chocolate, chopped 3 ounces unsweetened chocolate, chopped 1/2 stick (1/4 cup) unsalted butter, softened Optional: 3 to 4 tablespoons Amaretto, or to taste 1. In a small heavy saucepan combine the cream and the brown sugar, bring the mixture to a boil over moderately high heat, whisking occasionally, and boil it, whisking, until the brown sugar is dissolved. 2. Remove the pan from the heat and add the chocolates, whisking until they are melted. 3. Whisk in the butter (and the Amaretto, if using) whisking until the sauce is smooth, and let the sauce cool slightly. The chocolate sauce may be made 1 week in advance and kept covered and chilled. Reheat the chocolate sauce over very low heat, stirring occasionally, until it is warm.

Oh-Merciful-Heavens-Hot-Fudge Sauce
Sol's recipe
6 tablespoons unsalted butter
1 cup heavy cream (whipping cream)
1 cup light brown sugar, packed
3 tablespoons light corn syrup
1 cup sifted cocoa
1 tablespoon vanilla extract
Â¼ teaspoon salt
In a large saucepan, heat the butter and cream over medium heat until the butter is melted and small bubbles form around the edge of the pan.
Whisk in brown sugar and corn syrup. Continue to cook until the mixture is smooth and no grains of sugar remain. Add the cocoa, vanilla and salt. Whisk again until smooth. Strain mixture through a fine sieve. The sauce will keep for several weeks.
