looking for a t&t spice cake

A friend is making a birthday dinner party for her new-ish boyfriend. He's requested a Spice Cake for his birthday cake. She doesn't have a recipe, nor do I. Can anyone provide one that's a favorite?

Ellen, this probably isn't what you're looking for but it's KILLER, especially if the BF is a fan of stout.

stout spice cake with lemon glaze
Gourmet : October 1993

Stout, in the sharper-flavored ale family of brews popular in Great Britain, gains its dark color from the roasted malt used in its brewing. The rich, malty flavor melds well with the molasses and aromatics in this moist cake, which is brightened with a lemon glaze.

3 1/2 cups all-purpose flour
3/4 teaspoon salt
1 1/2 teaspoons baking soda
1 1/2 teaspoons double-acting baking powder
1 tablespoon ground ginger
3/4 teaspoon cinnamon
1/4 teaspoon ground cloves
3/4 teaspoon aniseed, ground in an electric spice grinder
3/4 cup unsulfured molasses
1 1/2 sticks (3/4 cup) unsalted butter, melted and cooled slightly
3/4 cup firmly packed dark brown sugar
a 12-ounce bottle of stout
2 large eggs, beaten lightly
3/4 cup milk
2 cups chopped pecans, toasted lightly
1 cup confectioners' sugar
3 1/2 tablespoons fresh lemon juice
Preheat the oven to 350Â°F. and butter a glass baking dish, 12 by 8 by 2 inches. Into a large bowl sift together the flour, the salt, the baking soda, the baking powder, and the spices. In a bowl whisk together the molasses, the butter, the brown sugar, the stout, the eggs, and the milk and add the mixture to the flour mixture. Whisk the batter until it is combined and stir in the pecans. (The batter will be thin.) Pour the batter into the baking dish, bake the cake in the middle of the oven for 30 to 35 minutes, or until a tester comes out clean, and let it cool completely in the dish on a rack. Turn the cake out onto the rack.
In a small bowl whisk together the confectioners' sugar and the lemon juice, pour the glaze over the cake, and spread it with a metal spatula, letting it drip down the sides. Let the cake stand for 30 minutes, or until the glaze is set.

What about the Spanish Bar Cake. It could be baked in 2-8" rd cake pans. Leave out the chocolate...although you really can't taste choc in it. It's really nice and moist.

Just made several white cakes in prep for a wedding cake. It's the white cake in The Cake Bible hands down but no way do I have time to type that out. Perhaps someone else has that recipe already typed? Or you know someone with that cook book. Some white cakes are moist but gummy. This one has a perfect texture. Sorry I can't give you the actual recipe.

This is my go-to coffee cake recipe. It is really delicious. 1959 Los Angeles City School Sour Cream Coffeecake Topping: 1/4 cup all-purpose flour 3/4 cup brown sugar; packed 1/4 teaspoon salt 1 cup chopped walnuts 1/4 cup butter, cut in small pieces Cake: 1 1/2 cups cake flour 1/2 cup all-purpose flour 1 teaspon baking soda 1 teaspoon baking powder 1/2 cup butter 1 cup granulated sugar 1 large egg, lightly beaten 1 teaspoon vanilla extract 1 cup sour cream Preheat oven to 350*F (175*C). Grease and flour a 10-inch tube pan; set aside. All ingredients should be at room temperature. For topping, mix together 1/4 cup all-purpose flour, sugar, salt and nuts. Add butter. Rub in by hand until mixture is crumbly. Be careful not to over mix. In bowl mix together 1 1/2 cups cake flour, 1/2 cup all-purpose flour, soda and baking powder. In another bowl cream together butter with sugar until fluffy and light. Add egg and vanilla and mix well. Add half of dry ingredients, mixing just until flour is blended. Blend in sour cream, then remaining dry ingredients. Spread half of batter lightly into prepared baking pan. Sprinkle with half of topping and spread with remaining batter. Sprinkle with remaining Topping. Bake for 40 to 45 minutes or until tested done when wooden pick inserted in center comes out clean. Makes 8 servings.

Blackberry Raisin Cake 2 cups sugar 1 cup fresh blackberries 4 cups self raising flour 1 teaspoon ground cloves 1 teaspoon ground nutmeg 1/2 cup butter 2 cups buttermilk 1 cup raisins 1 teaspoon ground cinnamon Preheat oven to 180Â°C. Grease and flour three 20cm round cake layer tins. Combine the sugar, 3 1/2 cups of the flour, ground nutmeg, ground cloves, ground cinnamon and the butter. Stir in the buttermilk. Toss the blackberries and raisins with the remaining 1/2 cup of flour to coat. Mix in the blackberries and the raisins into the batter and stir until evenly distributed. Pour batter into the prepared tins. Bake for 25-35 minutes or until a skewer inserted near the centre of the cakes comes out clean. Blackberry Snack Cake 4 tablespoons butter 3/4 cup self raising flour 3/4 cup sugar pinch salt 1/2 cup evaporated milk 1 1/2-2 cups blackberries 2 tablespoons brown sugar Melt butter in an 20cm square cake tin in a preheated 160Â°C oven. Combine flour, sugar, salt, and milk in a small bowl and whisk until smooth. Pour batter over the melted butter, top with the blackberries, then sprinkle the brown sugar evenly over the top. Bake for 45-55 minutes, until browned. Blackberry Jam Cake 1 cup butter, room temperature 2 cups sugar 5 eggs, separated 1 cup milk 1/2 teaspoon vanilla or almond essence 2 cups blackberry jam 3 cups self raising flour 1 teaspoon allspice 1 teaspoon cloves 1 teaspoon cinnamon 1 cup almonds or pecans 1 cup raisins icing sugar or vanilla icing fresh blackberries Preheat the oven to 160C. Cream butter with sugar until light and fluffy. Lightly beat the egg yolks then add the milk and vanilla, whisking well to combine. Stir in the jam. Combine the flour, allspice, cloves and cinnamon. Stir until well blended. Add the milk mixture to the butter-sugar mixture, alternating with the dry ingredients 4-6 times. Do not over mix. Gently add the nuts and raisins. Beat the egg whites and fold into the batter. Pour into a greased cake pans and bake for 50-60 minutes. Remove and place on a wire rack to cool, 5-10 minutes, then remove from pans to cool completely. Using a sifter, sift a sprinkling of icing sugar over top or frost with vanilla icing. Top decoratively with a few fresh blackberries.

There's a simple one that's just a cake mix, a pie filling and two eggs. A 13 x 9 pan goes for 25-30 min. @ 350F. I do that one with chocolate cake mix and cherry pie filling. Melt butter and stir in brown sugar and nuts. Pour into pan. Mix cake mix, pie filling, sour cream and eggs until well-blended. Pour over nut mixture. Bake at 350F for one hour. Let cool in pan for five minutes, then turn onto cooling rack.

ellen, spice cake is among my absolute favorites. this is the one i learned on.

1/2 cup shortening
1 cup surgar
2 eggs
1/3 cup (light) molasses
2 1/2 cups flour
1/4 teaspoon salt
2 1/2 teaspoons baking powder
3/4 teaspoon cloves
3/4 teaspoon allspice
3/4 cup milk

cream shortening and sugar. add eggs one at a time beating after each addition. beat in the molasses. alternatively add sifted dry ingredients and milk beating after each addition.

bake in two prepared 9" round pans at 350 for 30 to 35 minutes

frost with either a butterscotch frosting or a cream cheese frosting.

Butterscotch Frosting

1 1/2 cups brown sugar
3/4 cup granulated sugar
2/3 cup water
2 tablespoons butter
2 stiff beaten egg whites
1 teaspoon vanilla

cook sugars, water and butter toa firm ball stage (244). pour over egg whites beating constantly. add vanilla and beat until you reach spreading consistency.

Cream Cheese Frosting

6 ounces cream cheese, softened
1/2 cup cream
5 cups 10x ugar
2 teaspoon vanilla

thoroughly mix all ingredients until you read spreadable consistency.

I've made lots of cakes in my day. And most of the time chocolate is the only one that makes me feel it's worth the effort BUT...

This is from Paul Prudhomme's 1st cookbook and it is to die for. As the poster states it iw a lot of work, but really good cakes are. If your friend wants to blow his socks off AND is an experienced baker this is the recipe. (I actually have a photo of one I made! Posting pix is Not something I'm good at.)

WARNING : I thought these pecans were going to taste burnt they are roasted so long. They were wonderful. It was hard not to eat them all before they made it into the cake!

This is the one I made a long time ago.

Applesauce Spice Cake

2Â½ cups all-purpose flour
1Â½ tsp baking soda
1 tsp salt
1 tsp ground cinnamon
Â¾ tsp ground nutmeg
Â½ tsp ground cloves
Â¼ tsp baking powder
Â½ cup butter or margarine
2 cups sugar
2 eggs
1 (16 oz) can applesauce
Â¾ cup raisins
Â½ cup chopped nuts

Set oven to 350 degrees F

Grease and lightly flour a 13 by 9 by 2-inch baking pan. Combine first 7 ingredients. In mixer bowl, beat butter with electric mixer for 30 seconds. Add sugar and beat till well combined. Add eggs, one at a time, beating 1 minute after each. Add dry ingredients and applesauce alternately to beaten mixture, beating on low speed after each addition. Stir in raisins and nuts. Turn into pan.

Bake in a 350 degree oven for 45 minutes or till done. Cool on a wire rack. Serves 12 to 15.
