looking for a t&t spice cake

A friend is making a birthday dinner party for her new-ish boyfriend. He's requested a Spice Cake for his birthday cake. She doesn't have a recipe, nor do I. Can anyone provide one that's a favorite?

Ellen, this probably isn't what you're looking for but it's KILLER, especially if the BF is a fan of stout.

stout spice cake with lemon glaze

Stout, in the sharper-flavored ale family of brews popular in Great Britain, gains its dark color from the roasted malt used in its brewing. The rich, malty flavor melds well with the molasses and aromatics in this moist cake, which is brightened with a lemon glaze.

3 1/2 cups all-purpose flour
3/4 teaspoon salt
1 1/2 teaspoons baking soda
1 1/2 teaspoons double-acting baking powder
1 tablespoon ground ginger
3/4 teaspoon cinnamon
1/4 teaspoon ground cloves
3/4 teaspoon aniseed, ground in an electric spice grinder
3/4 cup unsulfured molasses
1 1/2 sticks (3/4 cup) unsalted butter, melted and cooled slightly
3/4 cup firmly packed dark brown sugar
a 12-ounce bottle of stout
2 large eggs, beaten lightly
3/4 cup milk
2 cups chopped pecans, toasted lightly
1 cup confectioners' sugar
3 1/2 tablespoons fresh lemon juice
Preheat the oven to 350Â°F. and butter a glass baking dish, 12 by 8 by 2 inches. Into a large bowl sift together the flour, the salt, the baking soda, the baking powder, and the spices. In a bowl whisk together the molasses, the butter, the brown sugar, the stout, the eggs, and the milk and add the mixture to the flour mixture. Whisk the batter until it is combined and stir in the pecans. (The batter will be thin.) Pour the batter into the baking dish, bake the cake in the middle of the oven for 30 to 35 minutes, or until a tester comes out clean, and let it cool completely in the dish on a rack. Turn the cake out onto the rack.
In a small bowl whisk together the confectioners' sugar and the lemon juice, pour the glaze over the cake, and spread it with a metal spatula, letting it drip down the sides. Let the cake stand for 30 minutes, or until the glaze is set.

What about the Spanish Bar Cake. It could be baked in 2-8" rd cake pans. Leave out the chocolate...although you really can't taste choc in it. It's really nice and moist.

Zolablue, just found this recipe in a old "Farm Journal's Country Cookbook" 1959 Edition. Spice Cake (Women say it's a keeper; men beg to eat it right away) 1 cup milk 1/2 cup lard ...you could use shortening or oil I imagine. 1 tsp. vanilla 2 1/4 cups cake flour 1 tbs. baking powder 1 tsp. salt 1 1/4 cups sugar 1 tsp. cinnamon 1/2 tsp. allspice 1/2 tsp. cloves 1/2 tsp. nutmeg 2 eggs, unbeaten Whip 2 tbs. milk with lard and vanilla; cream until light (2 min. at med. speed). Add sifted dry ingredients to lard mixture with 2/3 milk. Beat until smooth (2 min. at med. speed). Add remaining milk and eggs. Beat until smooth, about 2 minutes. Pour into 2 greased 8" layer pans. Bake in moderate oven (375) for 35 minutes. Cool and frost with Mocha Frosting. Mocha Frosting- 1/2 cup butter 1 egg yolk.. could use egg beaters for safety 2 tbs. strong coffee 2 squares unsweetened chocolate 2 1/2 cups confectioners sugar Cream butter, add egg yolk, coffee, & melteed chocolate. Mix well, gradually adding sugar. Blend until smooth. Makes enough for 2 (8") layers.

Here's one.... Danish Puff cut 1/2 cup of butter into a cup of flour, sprinkle on 2 T. water and mix to form dough. Divide dough in half and pat into strips 12" by 3 " on an ungreased cookie sheet....keeping strips 3 inches apart. Place 1/2 cup butter and 1 cup water in a sauce pan and bring to a rolling boil. Remove from heat and dump in 1 cup of flour and stir. Add 3 eggs one at a time beating well after each and return to low heat and beat until dough comes together and is smooth and glossy .... add 1 tsp almond flavoring and mix in Divide batter in 1/2 and spread on pastry strips and bake 60 minutes at 350. Frost with powdered sugar frosting and sprinkle with chopped nuts ( I use pecans) cut into 2 inch wide strips and serve with coffee. To make a powdered sugar frosting, I mix a cup of powdered sugar with 1/2 tsp vanilla extract add a very little milk until it's like pancake batter. This is my favorite! Took me a few minutes to find it!! New York Crumb Cake Baking time 20-25 mins. Oven 325Ã¯Â¿Â½Ã¯Â¿Â½ Sift together: l-1/2 cup flour 1/2 cup white sugar 2-1/2 teaspoons baking powder 1/2 teaspoon salt Whisk together in separate bowl: 1 egg l/2 cup milk whisk together in separate bowl 2 tablespoons vegetable oil 2 teaspoons vanilla Combine both by stirring with wooden spoon. Grease and flour baking pan,approx. 13x8" (brownie pan). Spread batter evenly, it will look scanty but don't worry. Topping 1 cup melted butter 1 cup brown sugar 2-1/2 cups flour 1-1/2 teaspoon cinnamon Stir Topping ingredients together with a fork, or crumble together by hand. Sprinkle crumbs thickly on top of cake batter. Bake cake for approx. 20 mins. Cool cake (in pan) for 10 mins., then sift a bit (about 1/4 cup) of confectioners sugar (powdered sugar) over the top, cut into squares and serve.

It will be in her; Trisha's new cook book Trisha Yearwood's German Chocolate Cake with Coconut Frosting Ingredients 4 ounces sweet dark chocolate (see Shopping Hint below) 1 cup (2 sticks) butter, at room temperature 1/4 cup warm milk 2 1/2 cups sifted cake flour 1 teaspoon baking soda 1/2 teaspoon salt 5 medium egg whites 2 cups sugar 5 medium egg yolks, at room temperature 1 teaspoon vanilla extract 3/4 cup buttermilk, well shaken For the coconut frosting: 1 cup sugar 4 medium egg yolks 1 cup evaporated milk 1/2 cup (1 stick) butter 1 teaspoon vanilla extract 10 ounces fresh or frozen and thawed grated coconut 1 1/2 cups finely ground pecans, walnuts, or almonds Yields: 12 servings Preparation Prepare the chocolate by melting it in the top of a double boiler, stirring until it is smooth. Add 1/4 cup (1/2 stick) of the butter and stir until it is melted and blended. Add 1/4 cup of warm milk and stir until smooth. Set the chocolate aside to cool. Preheat the oven to 350F. Line the bottoms only of three 9-inch cake pans with circles of parchment paper, or grease each pan bottom only with solid shortening and dust lightly with flour. Sift together the sifted and measured flour, baking soda, and salt. Whip the egg whites until stiff using the wire beater of the mixer. Transfer the beaten whites to a separate bowl and set aside. In the mixer bowl, cream the remaining 1 1/2 sticks of butter and sugar together until fluffy. Add the egg yolks one at a time, beating well after each addition. Add the melted, cooled chocolate and the vanilla. Mix well. With the mixer on very low, stir in the flour mixture alternately with the buttermilk. Do this by adding about a third of the flour and slowly stirring it in completely. Then add about half the buttermilk and stir it in. Continue adding flour and buttermilk in this manner, ending with flour. Scrape the sides and bottom of the bowl and stir again. With a long-handled spoon or spatula, fold and stir the beaten egg whites into the batter until the batter is smooth with no visible clumps of whites. Divide the batter evenly between the prepared pans and bake for 30-40 minutes. Bake on the middle rack of the oven, allowing at least 1/4-inch clearance between the pans and the oven walls. The cake will rise above the pan edges as it bakes but will not spill over and will settle back down as it continues to bake. The cake is done when it begins to pull away from the sides of the pans and springs back to a light touch. Cool layers in the pans for about 8 minutes. Run a knife around the edges of each pan and turn the layers out onto wire racks that have been sprayed with cooking spray. Cool layers completely before frosting. To make the frosting, combine the sugar, egg yolks, and evaporated milk in the top of a double boiler. Stir with a wire whisk until the yolks are fully incorporated. Add the butter. Place over simmering water and bring to a boil (see Note below). Simmer for 12-15 minutes longer, stirring constantly, until the mixture thickens. Add the vanilla, coconut, and nuts. Cool. To assemble the cake, place one layer on a cake stand and spread with frosting. Frost each layer completely, top and sides, as it is added to the cake. Note: You can also make the frosting in a regular saucepan, but be sure to stir it constantly, as it scorches quite easily. Also, you must use the finely grated fresh or frozen coconut, not canned or shredded, to be able to spread the frosting on the sides of the cake easily. Shopping Hint: For those cooks who use a lot of sweet baking chocolate, the chocolate used in this recipe can be purchased in bulk online at www.cocoasupply.com. This is my go-to coffee cake recipe. It is really delicious. 1959 Los Angeles City School Sour Cream Coffeecake Topping: 1/4 cup all-purpose flour 3/4 cup brown sugar; packed 1/4 teaspoon salt 1 cup chopped walnuts 1/4 cup butter, cut in small pieces Cake: 1 1/2 cups cake flour 1/2 cup all-purpose flour 1 teaspon baking soda 1 teaspoon baking powder 1/2 cup butter 1 cup granulated sugar 1 large egg, lightly beaten 1 teaspoon vanilla extract 1 cup sour cream Preheat oven to 350*F (175*C). Grease and flour a 10-inch tube pan; set aside. All ingredients should be at room temperature. For topping, mix together 1/4 cup all-purpose flour, sugar, salt and nuts. Add butter. Rub in by hand until mixture is crumbly. Be careful not to over mix. In bowl mix together 1 1/2 cups cake flour, 1/2 cup all-purpose flour, soda and baking powder. In another bowl cream together butter with sugar until fluffy and light. Add egg and vanilla and mix well. Add half of dry ingredients, mixing just until flour is blended. Blend in sour cream, then remaining dry ingredients. Spread half of batter lightly into prepared baking pan. Sprinkle with half of topping and spread with remaining batter. Sprinkle with remaining Topping. Bake for 40 to 45 minutes or until tested done when wooden pick inserted in center comes out clean. Makes 8 servings.

ellen, spice cake is among my absolute favorites. this is the one i learned on.

1/2 cup shortening
1 cup surgar
2 eggs
1/3 cup (light) molasses
2 1/2 cups flour
1/4 teaspoon salt
2 1/2 teaspoons baking powder
3/4 teaspoon cloves
3/4 teaspoon allspice
3/4 cup milk

cream shortening and sugar. add eggs one at a time beating after each addition. beat in the molasses. alternatively add sifted dry ingredients and milk beating after each addition.

bake in two prepared 9" round pans at 350 for 30 to 35 minutes

frost with either a butterscotch frosting or a cream cheese frosting.

Butterscotch Frosting

1 1/2 cups brown sugar
3/4 cup granulated sugar
2/3 cup water
2 tablespoons butter
2 stiff beaten egg whites
1 teaspoon vanilla

cook sugars, water and butter toa firm ball stage (244). pour over egg whites beating constantly. add vanilla and beat until you reach spreading consistency.

Cream Cheese Frosting

6 ounces cream cheese, softened
1/2 cup cream
5 cups 10x ugar
2 teaspoon vanilla

thoroughly mix all ingredients until you read spreadable consistency.

I've made lots of cakes in my day. And most of the time chocolate is the only one that makes me feel it's worth the effort BUT...

This is from Paul Prudhomme's 1st cookbook and it is to die for. As the poster states it iw a lot of work, but really good cakes are. If your friend wants to blow his socks off AND is an experienced baker this is the recipe. (I actually have a photo of one I made! Posting pix is Not something I'm good at.)

WARNING : I thought these pecans were going to taste burnt they are roasted so long. They were wonderful. It was hard not to eat them all before they made it into the cake!

This is the one I made a long time ago.

Applesauce Spice Cake

2Â½ cups all-purpose flour
1Â½ tsp baking soda
1 tsp salt
1 tsp ground cinnamon
Â¾ tsp ground nutmeg
Â½ tsp ground cloves
Â¼ tsp baking powder
Â½ cup butter or margarine
2 cups sugar
2 eggs
1 (16 oz) can applesauce
Â¾ cup raisins
Â½ cup chopped nuts

Set oven to 350 degrees F

Grease and lightly flour a 13 by 9 by 2-inch baking pan. Combine first 7 ingredients. In mixer bowl, beat butter with electric mixer for 30 seconds. Add sugar and beat till well combined. Add eggs, one at a time, beating 1 minute after each. Add dry ingredients and applesauce alternately to beaten mixture, beating on low speed after each addition. Stir in raisins and nuts. Turn into pan.

Bake in a 350 degree oven for 45 minutes or till done. Cool on a wire rack. Serves 12 to 15.
