I have spinach, ricotta, mozz...no lasagne noodles

I want to make a pasta, casserole type dish tonight. Suggestions? Otherwise I'll wait til tomorrow when I have pizza dough and make spinach ricotta calzones.

How about making crepe type thingies and rolling them into Canelloni tubes? I think Lori had a recipe for something along those lines.......

Manicotti. I put spinach in my food processor, add cottage cheese (or ricotta) parmesan (just a small amount) and mozzarella and spices and stuff them into hard manicotti shells. Then I cover them with a pasta sauce (we can our own) and add a little extra water, amiking sure they are completely covered, cover with foil, and bake about an hour or less. I stuff the shells but pushing the goodies in with a wooden spoon handle. You do not need no bake pasta, and they are much easier to stuff when hard.
Can I come for supper?

Well I'm going to have to try making it again with the home made noodles!! Maybe I'll make two smaller ones and make one without boiling the noodles first, and the other one I'll try Chase's method of briefly boiling each noodle separately. I'll have to try using the regular noodles and not boil them first as well. I wasn't aware of the trick of adding some water to the sauce. I only used the no-boil noodles one time and while it seemed to come out fine, I don't recall instructions saying to add water to the sauce and I know I didn't add any on my own. I have to say that I just love lasagna no matter how it's made, thick or thin, white sauce or red, meat or no. I could eat macaroni every day of the week and never get sick of it! But I do like lots of thin layers, so if I can make my own noodles I can control how thick or thin they are and that will let me control the layers. Coincidentally, my BIL who is a fantastic cook, has been coming over a lot lately on the weekends and we've been cooking together. As a thank you for all the meals he's had with us, he's coming over tomorrow night and bringing a lasagna for us to have for supper! Lisa

Cathy : How did I miss your Message ??? Sherry :This started when I asked my butcher to slice some Sirloin thin for Sandwich Steaks. He sliced them a little too thick for Philly cheese Steaks. Sooooooooo !!!! I used my imagination and came up with this.Not hard to do. Just found the recipe: From Luigis Kitchen Stuffed, Large Roasted Braciole , Surf and Turf. I dont think this has been done before but Im not sure. Here are the Stuffing Ingredients: Seasoned Bread Crumbs, 2 cups, with Garlic powder, 1/3 teaspoon Onion Powder, 1/3 teaspoon Salt and a Pinch of Old Bay Seasoning Parsley Crushed , 1 teaspoon Parmesan Cheese I tablespoon 1 Tablespn. of Pwd. egg, or 1 egg mixed with the 1/2cup water, below 1/3 cup of Onions chopped small and cooked 3 min. in Micro Wave ¼ teaspoon of Black Pepper Mix all these ingredients together well. - - - - - - - - - - - - - - - - - - - - - - - - - - - - - Other Ingredients for the stuffing are; 2 Hardboiled Eggs, sliced. ½ cup of Olives and Capers chopped Mushrooms ( optional ) Cooked Shrimp Pepperoni pieces Also, add whatever you like . Maybe some Provolone Cheese? - - - - - - - - - - - - - - - - - - - - - - - - - - - - - If using regular egg ,mix in here, when cool. In a ½ cup of hot water, mix 1 heaping teaspoon of, Chicken Soup Base and add this to the Bread Crumb mix. Dont mix too much ! And just blend to dampen, Not too wet. Lay one piece of Steak in a large Platter or whatever you choose. The piece in the Photo is about 6 in. X 12 in. Spread all the Bread Crumb stuffing mix on this evenly. Place all the Other Ingredients on the stuffing evenly. I put smaller pieces of the steak under the side and let them hang out for wrapping the Braciole as it is rolled. Lay another large piece ( the same size, as the bottom piece of the sirloin. Start rolling the steak, folding in the side pieces as you go. Hog tie the whole mess very good !!! I Browned this well and put it into the Waterless Roasting Cooker With 1/2 cup of water Now it is Ready, to go in the Oven with the Potatoes It baked 1 ¾ Hours,at 350 deg. The internal temperature went to 160 degrees.

Just wanted to thank everyone for your great ideas. I liked the idea of calzone but don't have any yeast or pizza dough. Then I considered making ravioli or lasagna noodles, but I didn't have any time to "play with my food" today--maybe next time. Glad to know it can be frozen or used "nude," too. DH would like that! :) For tonight, I think I'm going to have to go with the quickest option: baking it with pasta and sauce. Thanks again, everybody, for all your suggestions! p.s. Well, I made the recipe on the box of Meullers lasagne. I had to hurry so I could not wait till I could read your replies. Anyhow it turned out terrible for me. I had to throw it out. I did not cook the pasta as they said not to. I thought the Lasagne would never cook through. I kept baking it longer and longer till I thought it was cooked. I kew I had it in the oven too long, but still knew the Lasagne was not soft enough to eat. I tried it several times.After it cooled some I tried it. It was so dry and the cheese was even dried up. I knew I could not serve it that way. So I threw it out and I made a Hearty Tomato Beef soup as quick as I could. I happened to have all the items I needed for that. It turned out very delicious and I served crackers and a great salad with it. I had baked a pineapple upside down cake in my big iron skillet. It turned out excellent too...smile! My new friends raved about the soup. I used pasta shells in it. It always comes out delicious. You put red wine in it and it is so good...smile! I just could not serve a Lasagne over baked and half cooked and all at the same time...smile! I went exactly by the recipe and directions. I will never make it with the uncooked Lasagne again. I consider myself a good cook and this really threw me for a loop. From now on I will cook the Lasagne first....smile! Betty in Florida

Alas, no manicotti shells. Just lots of tubular ziti type pasta. I love the idea of crepes, but think my picky eaters might not.

Here is Loris recipe it's so good! The crepes only take a few minutes to make. If you don't want to do that...but I'm telling you they're good! Just cook Penne or any other heartier pasta and layer the pasta, the filling in Lori's recipe and tomato sauce. Maybe grate some Parm or Moz for the top.

PS: You need that spinach to night Popeye!!!!! Go get 'em!

Canneloni Stuffed With Spinach And Ricotta

My notes: Lori's recipe. Originally called for 2 pounds fresh spinach, cooked and drained. I have served with the cream sauce or a tomato sauce. Proscuitto is a nice addition

Crepes
6 eggs
1 1/2 Cup flour
1/4 Tsp salt
1 1/2 Cup water

Filling
1 Package frozen spinach thawed and
1 1/2 Cup ricotta
3/4 Cup parmesan
2 egg yolks
Pinch nutmeg
salt and pepper
1 TBSP butter Unsalted
1 Cup heavy cream

Combine first 4 ingredients in bowl with electric mixer. Ler stand at least 1/2 hour ( I don't always). Cook individual crepes over med heat.

Combine spinach , ricotta, egg yolks. 1/4 cup parmesan, nutmeg, salt and pepper. Blend well with a fork. Prehaet oven to 350. Grease a casserole dish with the butter. Spread mixture onto to crepes and roll up. Lay seam side down in the dish. Sprinkle with remaining 1/2 cup parmesan. and por the cream over top. Bake until they turn golden,about 20 minutes.

Jo these crepes aren't like "crepe crepes". They are more like an egg pasta.

This would work well with any tubular pasta.

I agree, just use your ziti or whatever and layer your ingredients just like you would with lasagna noodles. Easy as can be...

I have made soemthing that whoever gave it to me called "inside out ravioli" that essentially mixed up spinach, cooked pasta of some sort...ziti is good...and ricotta and parm and mozz, mixed up with a meat sauce, tomato based and baked.

Thanks, guys. I made a white sauce, added spinach and ricotta. Spread a little on the bottom of a baking dish, then mixed the rest with the noodles. (seasoned with s/p and dried mustard). Spooned half the mixture over the sauce, added a layer of mozzarella. Repeated with noodle mix and topped with mozz.
Doesn't look all that great, but hopefully will taste good. Thanks for the ideas of layering it.

It was good in a mac-and-cheese-and spinach sort of way. should have used half the noodles, but not too bad. Very pop-eye comfort food.
