Oh my Deborah those are some fine looking dishes! Love the sausage dish! Spanikopita is a long time family and friends favourite of ours.

Now if I could only figure out how to take such great close ups, mine always blur and I know it's operator error. Any tips?

Pistachio Cranberry Cookies

*Of course I had to "doctor" to my taste...Added more cranberries and pistachios, added 1/8th teaspoon orange oil to the batter and a teaspoon of vanilla.

Greek Yogurt & Walnut Tart (Walnut Custard Tart)
adapted from World Food Greece Susanna Tee

1 1/2 oz. butter
8 sheets phyllo pastry
1/4 cups walnut halves
2/3 cup Greek yogurt
4 tbsp. Greek honey
2/3 cup heavy cream
2 tbsp. superfine sugar
2 eggs
1 tsp. vanilla
confectioners' sugar, for dusting

1. Melt the butter. Brush 4 deep 4-inch tartlet pans with a little of the butter. Cut the sheets of phyllo pastry in half to make 16 rough squares.

2.Take 1 square of pastry and cover the remaining squares with a damp dish towel. Brush the square with a little of the melted butter and use to line 1 of the pans. Repeat with 3 more pastry squares, placing each of them at a different angle. Repeat with the remaining pastry to line the remaining 3 pans. Place tins on baking tray.

3.To make the filling, finely chop 2 tablespoons of walnuts. Put the yogurt, honey, cream, sugar, eggs and vanilla extract in a bowl and beat together. Stir in the chopped walnuts until well mixed.

4. Pour the yogurt filling into the pastry shells. Coarsely break the remaining walnuts and scatter over the top. Bake in a preheated oven, 350*, for 25-30 minutes until the filling is firm to the touch.

5. Let the tartlets cool, then carefully remove from the pans and dust with confectioners sugar.

*I used one large tart pan.
**The color inside is kinda unappealing... the baked walnuts color the pretty filling, so if there is a way to color it maybe browner?

Italian Sausage and Pepper Sandwich
Deborah's recipe serves 4-6

6 Italian Hot sausage (use sweet for less spicy or half of each)
2 large brown onions, cut into 1" slices
3 large garlic cloves, minced
1 red bell pepper, cut into 1" slices
1 green bell pepper, cut into 1" slices
2-3 roma tomatoes, quartered
1/4-1/2 lb. mozzarella (sliced thin or shredded)
1 1/2 cups good red wine
Olive oil
Salt and pepper to taste
1 loaf French bread or 4-6 small individual rolls

In a large lightly oiled skillet, on medium heat, fry the sausages until browned on all sides. Remove, cover with foil to keep warm.

Drizzle 1 or 2 tbsp. olive oil into the skillet. On medium high heat fry up the onions, garlic, bell peppers until they become slightly browned on the edges. Add the wine, salt and pepper and cook uncovered for about 15 minutes. Cut the sausages in half and add to the skillet along with the tomatoes, cooking about 5 minutes more.

While peppers and sausage are cooking, cut the french loaf in half. Remove some of the interior bread to make room for the filling. Place bread on a baking sheet and spoon pepper mixture and some juices onto the bread, arranging the sausage halves on the top. Lay mozzarella slices on top and bake in a preheated 425* oven for about 12-15 minutes. Remove from oven and let rest for a few minutes. Cut into 2-3 inch slices and serve immediately.

Baked Eggs
I made this up as I went... serves 4

3-4 tlbs. grated parmesan cheese
2 tsps. softened butter
1/2 lb. spinach, cooked, rough chopped, squeezed dry
1 cup cooked crab meat
1 avocado, sliced
1/8 tsp. cayenne pepper
4 large eggs
Salt and pepper to taste

Preheat oven to 375*
Butter 4 ramekins and sprinkle each with parmesan cheese. Divide the spinach between the ramekins lightly salt. Add the crab meat to each, arrange avocado on top and very lightly sprinkle with a bit of salt and cayenne. Crack an egg onto each one and sprinkle with a bit of the parmesan and black pepper.
Put onto a baking sheet and cook for about 15 minutes, keeping an eye on the egg whites, making sure they are cooked and the yolk just set.
Serve with rustic buttered toast.

The recipe for the Green Orzo if anyone would like it...
Rice or Couscous works also.

Green Orzo

3 tablespoons olive oil
3/4 cup raw spinach
3 green onions
3 garlic cloves
3 large pitted green olives
1 teaspoon lime zest
1/2 lime, juiced fresh squeeze
salt and pepper to taste

In a food processor, whiz up all ingredients to a paste consistency.
Mix together with 3-4 cups cooked orzo. (rice, couscous or any small pasta works well)
*grated parmesan may also be added into or just as a garnish

Wow! Everything looks so good! Those cookies are calling my name-might have to head to the grocery for some pistachios! Good job on the food and the photos!
