I used to make a strawberry chiffon pie.
graham cracker crust...then I would use frozen berries, heat and add some gelatin....and whip egg whites and fold in....and pile it into the cooled crust.
It was just pink fluff but the kids thought it was wonderful.
In later years I made cherry pie and cutout sugar cookies.

I just finished making little molds of raspberry gelatin. Don't worry - it tastes as much like the packaged Jell-o as a homemade apple pie tastes like a frozen Mrs. Smith's one.

FRESH RASPBERRY GELATIN

2 cups fresh or frozen unsweetened raspberries
2 cups water
3/4 cup sugar
1 envelope unflavored colorless gelatin

Bring the raspberries, water and sugar to a boil; reduce heat and simmer for about 20 inutes or until the fruit has dissolved in a mass.

Line a large strainer with cheesecloth and place the strainer over a bowl. Pour the fruit mixture through, straining so all the seeds are removed and only the clear red liquid remains. Soften gelatin in a little cold water.

Return the liquid to the saucepan and add the gelatin. Stir the gelatin thoroughly so that all the grains are fully dissolved.

Bring the liquid to a boil for one minute, then remove from the heat.

Pour into a mold of the proper size (about 1 1/4 pints) or into small individual cups, and chill in refrigerator. When gelatin has set, unmold and serve. Garnish with whipped cream if desired.

Well, how about a fruit pizza? It'll use some of your cream chees and make the hubs happy with his fruit!

Fruit Pizza

Crust:
1-1/2c flour
1/4c sugar
1/4c butter
1/4c cooking oil
3T cold water

Mix and press into 11 inch circle on pizza pan. Bake 12-14 minutes at 375F

Sauce:
6oz cream cheese
1/4c sugar
1/2tsp vanilla

Beat until smooth and spread on crust

Strawberries, Kiwi, Grapes, Peaches, Pineapple, Blueberries, Raspberries, etc.
Arrange your choice of fruits on top of sauce.

Glaze:
1T cornstarch
1T water
1/4c fruit juice (any)
3T powdered sugar

Whisk all ingredients together in small saucepan, bring to boil stirring constantly. Spread over fruit, chill well. Cut in wedges or squares to serve.

I'm making Baci di Dama - ladies kisses!
200g ground hazelnuts
200g sugar
200G unsalted butter
250g flour
Nutella or something else to stick the halves together

Combine the dry ingredients then add the butter to make a dough. Chill this then shape little balls. The doughfeels a bit wet but don't worry. Bake them at 200°c for about 30 mins. the bottoms will flatten out a bit.
I'm going to dip the flat ends in chocolate then sandwich them together with sweetened chestnut purée.

Use the cream cheese for something else. Buy (or make) some good, plain yogurt (or banish the diet for another week and use smooth, rich, sour cream!), and serve the strawberries with a bowl of it and another of brown sugar. The rule is that neither of you are allowed to feed yourself...see where that leads. ;)

Make some "vanilla yogurt sauce" and serve with fresh fruit! I tried it as a NYEve dessert and everyone LOVED it! I used the recipe from cooks.com:

We're watching our waistlines here, and I'm thinking about making some fresh berries with some heart-shaped angel food cake or meringues.

Here's another way to use fresh fruit.

FRUIT WITH CANNOLI CREAM (4 servings)

1 cup part-skim ricotta cheese
1/3 cup sugar
3/4 tsp. orange zest
3 Tbs. orange juice
2 Tbs. mini chocolate chips
1 apple, cored and cut into 8 wedges
1 pear, cored and cut into 8 wedges
1 plum, pitted and cut into 8 wedges
1 pint strawberries, hulled

In a blender or food processor, combine the cheese, sugar, orange peel and orange juice and process until smooth. Transfer the mixture to a bowl and fold in 1 Tbs. of the chocolate chips. Place the fruit on a platter and spoon the ricotta mixture over it. Sprinkle with remaining chocolate chips, and serve.

Note: You can also arrange the fruit in four large goblets or wine glasses and top each portion with some of the sauce and chips. Other fresh fruits can be substituted. Apricots, raspberries and blueberries are all good in this recipe.
