Home Cookin Chapter: Recipes From Thibeault's Table Chocolate - Pate Du Chocolate With Creme Anglaise ================================================= 4 Ounces semisweet chocolate 1/2 cup butter 5 egg yolks 1/2 cup granulated sugar 2/3 cup unsweetened cocoa powder 1 1/2 cups whipping cream Creme Anglaise (recipe follows) Toasted sliced almonds . Melt chocolate with butter; let cool. In bowl, beat egg yolks with sugar until thick and pale in colour; beat in cocoa. Beat in cooled chocolated mixture Whip cream and fold into chocolate mixture. Turn into 8 X 4 inch loaf pan lined with plastic wrap. Cover and refrigerate for 2 hours. To serve unmould pate and remove plastic wrap. spoon Creme Anglaise onto dessert plates. Top each with 1/2 inch slice of chocolate pate. Sprinkle with toasted almonds. Creme Anglaise 5 egg yolks 1/3 cup granulated sugar 2 cups hot milk 1 tsp vanilla. In bowlw beat egg yolks with sugar until thick and pale in colour; gradually whisk in hot milk. Transfer to very heavy saucepan; cook over medium heat, stirring constantly with wooden spoon, for 5 minutes or until thickened slightly and sauce coats the back of a spoon. Be careful not to boil. Stir in vanilla. Strain through fine sieve into bowl. Let cool; cover and refrigerate until chilled or for up to 1 day. Makes about 2 cups. This one comes from Marilyn it's YUMMY! Golden Lemon Cake Roll CAKE: 3/4 cup all-purpose flour 1/2 cup sugar 1 1/2 teaspoons baking powder 1/2 teaspoons salt 9 egg yolks 1/2 cup sugar 1/2 cup water 2 teaspoons fresh grated lemon zest Powdered sugar FILLING: 1/2 cup sugar pinch of salt 3 tablespoons fresh squeezed lemon juice 3 egg yolks 1 teaspoons fresh grated lemon zest 1/2 cup whipping cream Heat oven to 375. Grease bottom only of 15X10-inch jelly-roll pan. Line with parchment paper and grease again. Lightly spoon flour into measuring cup, level off. In medium bowl, combine flour, first 1/2 cup sugar, baking powder and salt. In a large bowl, beat egg yolks at high speed until a light lemon color. Add second 1/2 cup sugar and continue beating until thickened. Add cold water and 2 teaspoons lemon zest, mix well. Gently fold flour mixture into egg mixture, blend well. Spread batter in prepared pan. Bake 15 to 18 minutes until light golden. Remove from oven and immediately turn out of pan onto a towel sprinkled with powdered sugar. Quickly remove paper. Starting at short side, roll up in towel; cool completely. In a small heavy saucepan, combine sugar, salt, lemon juice and egg yolks. Cook over low heat until thickened; stirring constantly. Remove from heat and stir in lemon peel; cool. Whip cream to soft peaks and fold into cooled filling. Unroll cake, spread with filling and roll again without towel. Refrigerate 1 to 2 hours. Dale, That is what we had for dinner. I had to work today so I put the pot roast in the oven early this morning and Moe took it out a few hours later. All I had to do when I got home from work was cook the vegetables, make the gravy and heat up the meat. I used a stick blender to puree the garlic into the gravy. The following recipe is just a basic idea. Can be adapted to suit your own taste. Today's pot roast was just two heads of garlic and fresh rosemary from the garden and beef broth. The meat was a 3.5 pound bottom round. Home Cookin Chapter: Recipes From Thibeault's Table Pot Roast ========= I use either a Rump or a Round Roast 1 carrot Celery Onion 6 or more cloves of garlic Red wine Beef broth Squirt of tomato paste (I buy it in a tube) Salt/Pepper Herbs - Rosemary/Thyme/Bay/Parsley . I used a rump roast last night but I also like to use a round for pot roast. A cast iron pot with a lid is perfect for cooking a pot roast. Brown the meat well on all sides. Remove from the pan and add whatever vegetables you are using. I used one carrot (I don't like carrots and I find that more than one sweetens the gravy too much. I also added chopped celery, onion, about 8 cloves of garlic (just smashed, not chopped) salt, pepper, a sprig of rosemary, about a cup of red wine (I never measure) beef broth and a squirt of tomato paste. TIP: Tomato paste isn't something I use often so I buy it in a tube rather than a can. It keeps in the fridge and is perfect for when I need just a "squirt" or a tablespoon or two. Put the lid on and into a 325�F oven for about 3 hours. It was a small roast. So a larger one would take longer. When the roast was melt-in-the-mouth-tender I removed it from the pot and spooned off the fat and I used the stick blender to puree the vegetables. That was all that was needed to thicken the gravy.

A friend of mine gave me this recipe, and it made the best pot roast we've ever had. I just did a search and found it on-line, so I didn't even have to type it out! Lisa's Lazy Pot Roast from The Complete Meat Cookbook Ingredients: 1 tsp. dried thyme 1 Tbs. chopped fresh rosemary or 1 tsp. dried rosemary 1 Tbs. paprika 1 Tbs. Kosher salt 1 tsp. freshly ground black pepper One 4 lb. boneless beef chuck roast or a beef brisket, trimmed of most fat 2 Tbs. vegetable oil 1/2 cup water or beef or chicken stock, or more if needed 5 cups thinly sliced onions (about 3 large) 6 chopped garlic cloves Salt and freshly ground black pepper to taste Preparation: For the flavor step, combine 1 teaspoon dried thyme, 1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary, 1 tablespoon paprika, 1 tablespoon Kosher salt and 1 teaspoon freshly ground black pepper in a small bowl. Rub the meat thoroughly with the mixture. You can cook the roast immediately, but it will taste better if it sits for an hour or two at room temperature or overnight in a zipper-lock bag, or well wrapped, in the refrigerator. Preheat oven to 350 degrees. In a large, heavy casserole or Dutch oven, heat the vegetable oil over medium high heat. Brown roast on all sides, about 7 minutes. Remove and set aside. Pour off any fat from the pan and deglaze the pan in water or stock, scraping up any browned bits with a wooden spoon or spatula. Put the roast back in the pan, cover it with 5 cups thinly sliced onions and 6 chopped garlic cloves, cover and bake for 1 hour. Remove the cover, turn the roast over so that it is on top of the onions, and continue to cook, uncovered, for another hour, adding more liquid if needed. Stir the onions around after about 30 minutes so they can brown more evenly. Replace the cover and continue to cook for 1 hour more, or until the meat is fork tender; brisket will take a little longer than chuck. Remove the meat from the pot and let it rest, covered loosely with foil, while you prepare the sauce. (At this point, you may refrigerate the pot roast for later reheating. Refrigerate the cooking liquid separately. To serve later, remove any congealed fat from the cooking liquid and strain it before using it to reheat the meat gently.) To serve, strain and defat the sauce. Taste for salt and pepper. Cut the meat into thick slices or separate it into chunks. Spoon some sauce and onions over for serving. Serves: 6 Chef's Note: If you are in a hurry, you can eliminate the herb rub. In fact, if you are really in a hurry, do not bother with the browning. Just put the roast in a heavy casserole, smother it with the onions, and cook it as described above. You will be amazed at how good it is, and you family will think you have been slaving away at the stove all day.

Somewhere along the line I fell under the impression that I missed the lemon cookalong, which I've been really looking forward to. So today I made lemon stuff, only to find now that I'm actually five days early, not two days late. Oh well. Here's what I made: Fettucini with Lemon and Cream - Cook's Illustrated's variation on their Alfredo, basically just adding some lemon juice and zest to the mix. It was wonderful; it's been quite some time since I made homemade pasta and I forgot how easy and worth it it is. I also topped it with grilled chicken and shrimp for good measure. The lemon squares that Canarybird posted. As promised these were very sweet and heavy - and delicious. I did make what I think was a critical mistake though; my only 9x9 was a pyrex dish, so the crust never really cooked right and was soggy and dripping with butter even after 30 minutes in the oven. So once cooled, I cut the squares and let them soak into some paper towels, and those of course stuck. So overall a less than perfect presentation, but we enjoyed them no less. Thanks Sharon! Time permitting I'll gladly try a new menu on Saturday. Lemon Risotto 6 cups vegetable stock 1 tablespoon extra-virgin olive oil 3 tablespoons unsalted butter 1 medium onion, minced 1 1/2 cups Arborio rice 1/2 cup dry white wine 1 teaspoon grated zest and 2 tablespoons juice from 1 large lemon 6 large fresh sage leaves, minced 2 tablespoons minced fresh parsley leaves 1/4 cup freshly grated Parmigiano-Reggiano cheese, plus more for the table salt and freshly ground black pepper 2 tablespoons heavy cream (optional) 1. Bring the stock to a simmer in a medium saucepan. Keep it warm over low heat. 2. Heat the oil and 2 tablespoons of the butter in a heavy-bottomed medium pot. Add the onion and sauté over medium heat until translucent, about 5 minutes. Using a wooden spoon, stir in the rice and cook for 1 minute. Add the wine and cook just until the alcohol aroma fades, 1 to 2 minutes. 3. Add 1/2 cup of the warm stock and cook, stirring frequently, until the rice absorbs the liquid. Continue adding stock in 1/2-cup increments, stirring. After about 15 minutes, stir in the lemon zest and sage. 4. LECHE ASADA or Roasted Milk, a Canary Island recipe, tasted more like sweetened scrambled egg to me, although my DH thought it was quite alright. I would suggest it as an ideal dish for someone who has teeth or stomach problems and needs a bland, soft, custardy egg dish. It won't be making it to my try-again list! Here it is though: LECHE ASADA - Milk and egg pudding Ingredients 1/2 liter milk (1/2 quart approx) 4 eggs 3 TBS sugar salt 1/2 teasp lemon zest - grated rind of 1 medium lemon 1 teasp cinnamon 1. Preheat oven to 350F 2. Beat eggs, add milk, lemon rind, cinnamon, sugar and salt. 3. Pour mixture into buttered 9 inch square casserole dish and cook about 30 - 40 minutes or until centre is done when pierced with knife. 4. I made the Lemon Risotto, plus I picked some beets and the greens from my garden and made a roasted beet and carrot salad to top the cooked greens. I was planning on making a beet salad and the beet greens, but there weren't enough beets for 5 people, so I added the carrots and just topped the greens with the salad. I also broiled some tofu I marinated in some lemon zest, lemon juice, olive oil, soy sauce and some herbs. My daughter and I made a couple of loaves of ciabatta to go with the meal, plus we made some World Peace Cookies for desert. We all had a great time. Early on, I took some pictures of my freshly gathered beets, but my battery went dead. So, I put it in the charger, planning on having the camera ready for supper when the Risotto and everything was ready and dinner was served and I could take some pictures. Well, the best laid plans....... we were half way through dinner when I remembered about taking pictures. Sorry guys, I'm just not good at the picture thing. He felt you needed a special tool and he thought the recipes were too complicated already.... I am bringing him along slowly.. At least he is participating and he is the one who takes the pictures. The lemon risotto was really good, not that hard to make and it was really lemony. I liked the fact it was not too fattening. I didn't use any butter, just oil, and just the amount of cheese specified without extra for the table. I will make it again. Lemon Lover's Cookie is made entirely in the food processor, so it's super easy. I first made these in August 2004, to try out my new convection oven, and they were an instant hit, light and delicate. Keeping an extra cookie roll in the fridge or freezer is nice to have on hand. I recently visited some friends in New Mexico and took them a bag, along with a few for ourselves. They cookies keep beautifully, and still tasted fresh after 10 days on the road. I like a lot of lemon flavor, so I punch it up by adding the zest of two lemons, which I didn't include in the recipe. Lemon Lovers Cookies A delicate cookie, from The Lemon Lovers Cookbook. Plan ahead, as you have to leave the dough in the refrigerator for several hours before baking. 1 large lemon, zest of 1 cup granulated sugar 1 cup butter, chilled and cut into pieces (2 sticks) 2 1/3 cups cake flour, sifted 1/2 teaspoon baking soda 1/4 teaspoon salt Process the lemon zest and sugar in a food processor until the zest is as fine as the sugar. Add the butter. Process until fluffy. Scrape down the bowl. Add the flour, baking soda and salt. Process briefly until mixed. Form dough into two 1-1/2-inch-round logs and wrap each in wax paper. Refrigerate until firm. Preheat the oven to 350 degrees. Slice each log into 1/4-inch thick cookies and place on an ungreased baking sheet. Bake for 8 to 10 minutes, until golden around the edges. I'll have to add those to my list to try. Just a little addendum on the lemon risotto - the recipe I use calls for butter, and optional cream, although I don't use the cream. It also allows for additional parm at the table if you choose to. The way Theresa made it sounds intriguing, since she cut out the butter. I like the idea of making it a little bit healthier and it still tasting good.
