Freezing question - tomatoes, paste

Want to make a pizza this weekend so I took a container of leftover frozen crushed canned tomatoes out of the freezer, added a small can of tomato paste, a little sugar, a little water, and some Penzey's pizza seasoning to make the sauce. Tastes very good actually.

But I know I have more than I need for one pizza. The sauce has not been cooked, btw. Can I refreeze the sauce for just a week or two until I make pizza again? I've never refrozen uncooked pizza or tomato sauce, that is why I am asking.

Thanks for any help you can give - or for telling me to make another pizza in the next few days if that is what you think - lol.

I would refreeze w/o any hesitation. Tomatoes are high acid and I don't see any other ingredients to worry about.

I do it all the time, freeze and refreeze sauce sometimes cooked, sometimes not. Tomatoes seem to go on forever!

I have an abundance, YES, an abundance of paste tomatoes this year. I am very happy. I just let my fruits color up on the dining room table, then I put them into them freezer bags and into the freezer they go. When I need some tomato sauce, I just let them thaw a couple hours, then I put them in boiling water for a minute, take them out, let them cool for 10 minutes, peel off the skin and into the sauce cooking pot they go. You could make the sauce and freeze it if you wanted, as an alternative. That's probably better as you can get the exact amount of sauce you're needing for the meal you're making.

Ma'am, You posted in the least likely area to get the feedback you would want. This is where folks with HVAC issues would post. However, I checked with the person in charge of canning at my house and she has tried it several ways. No matter what, they come out mushy after freezing. Taste wise it is supposedly better to par boil, remove skins and then freeze. The skins do contain a lot of nutrients but I think taste is the idea.

To freeze them just wash them off and core them. I didn't core them once when I froze them and it is a mess to remover the cores after they defrost. Then put them on a cookie sheet and freeze and after they freeze store them in plastic bags. When you defrost them they will lose a lot of water so be ready for that. If you want to make sauce, defrost just enough to remove the skins and then place in a big pot to allow to defrost slowly. All the excess water will accumulate in the pot and you can just pour most of it off and then cook your tomatoes for sauce.

mustangs - For relatively small amounts (1-cup or less), store your tomato powder in a dry environment - either vacuum-sealed or in a refrigerator (refrigerators are dry due to the frost-free feature). I keep a user-friendly amount in a pint jar in the refrigerator with some moisture absorbers in it (recycled from supplements we take) to keep it from clumping. When I open a #10 can of tomato powder I keep it free-flowing in a vacuum-sealed canning jar/s, FoodSaver canister, or some other container that can be sealed with a FoodSaver Universal Lid. I like to use the Universal Lids when I move food from long-term storage to the pantry, especially things I get in-and-out of frequently. -Grainlady

Thanks! That is sort of what I thought, but as I don't refreeze much of anything at all, I thought I would ask here.

Here is the pizza sauce recipe, Weed's Missouri pizza thread:

1 16 oz. can whole tomatoes, diced fine
6 oz. can tomato paste
1 1/2 TB sugar
1 t. crushed dried basil
1/2 t. salt
1/4 t. dried thyme

Mix together, let sit, do not cook. Makes enough sauce for 4 pizzas.

Cheese blend for this style pizza: grated cheddar, Swiss, and Provolone. Sprinkle Italian seasonings on top of the pizza just before putting it in the oven.

Note: Teresa used about 2 teaspoons of Penzey's Pizza Seasoning in place of the dried basil and thyme. Used the same amount of sugar and salt, plus I added 3-4 TB water gradually blended in to make a good spreading consistency and loosen up the tomato paste a little bit. I also used 2 cups of thawed crushed tomatoes I had in the freezer instead of the can of whole tomatoes.
