Is a 10# ham enough?

The next board meeting of my pond club is at my house and we will be approximately 14 people, mostly men. Since we are meeting at 1 or 2 pm on a Sunday, I was planning a lunch spread to keep tummies full and tempers down.

I have picked up a 10# bone in ham and was also planning on both a hot German potato salad, along with my mayo based one, coleslaw, rolls and rye bread plus condiments. I will make one dessert and ohers may bring some too.

Enough ham? And this is not a sweet honey ham, just a smoked one. If I glaze it with some honey mustard, will it become very sweet? I am not too fond of the sweet honey hams.

I found this with my ham notes:

I'm a professional chef and this was an easy question! Since ham is already cooked and it shrinks very little when reheated I would base my answer like this.....10 pounds of ham makes 40 "4" ounce portions. It would make 20 "8" ounce portions. 8 ounces of ham is very sufficient per person. Since you have 25 guests and four of them are children, 10 pounds will suffice unless you have some BIG eaters. If you are afraid you'll run out..get a 12 pound ham to be on the safe side!

Is the ham to go with the rolls for sammies or sliced?

Are the ponds still frozen?

Cathy, thank you. The ham is of the rolls as sammies and I should be safe with 10 pounds.

The pond is not frozen completly as there is a very large plastic sheet over the whole thing with air holes for gas exchanges. The water temp is 38 today but is is covered in snow. I wish I could see the koi and goldies though.

I've got 1 concord vine in the center of a 6 foot wide trellis. It gets full afternoon sun for at least 6 hours a day. I have to prune it pretty heavily to keep it in its place and even have to remove some parts of the vine mid-summer to prevent it from growing into the siding of my house. Still it seems pretty happy. I probably get about 1/2 a bushel from it which is plenty for me. I remove some of the bunches when they're still small so that it won't stress the vine although I don't know for sure that it makes a difference. It does get plenty of water because I plant other things around it that I water regularly. This is my first grape vine and since no one told me I couldn't grow a vine in that small a space, I didn't know any better and tried it. My vine is about 5 years old and I'm not sure how long the good times will last. But for now, I'm pretty happy with it. ~Cindy

We love this Broccoli Ham and Cheddar Soup. Does this sound like something that might appeal to you and your family? I usually double or even quadruple the recipe as it freezes well. I use home made broth rather than a bullion cube though. As the recipe notes, it's very flexible in the amounts of ham, mushroom and broccoli you can add so if you have a lot of ham go ahead and throw in extra. When I reheat hard French bread for baguettes, I spray them with water first, but you could also steam them to keep them from getting hard. As for the sandwich version, I usually add thinly sliced mushrooms and sprinkle them with black pepper. The other ingredients are sourdough rolls, smoked ham (or Black Forest Ham), and Jarlsberg or Provolone cheese. I generally heat them in an iron skillet, covered. 10 pounds of BONELESS ham will make 40 4 oz servings....bone in is something different. An 8 oz of ham per person is a huge serving!
And the shank or the butt end are also different...shank yields more meat.
I'm sure you will have lots for sammies for 25.
And no, honey mustard glaze won't make the ham too sweet....but I like a dry mustard, vinegar and brown sugar glaze.

I like ham unglazed but my kids and my brother like that really sweet brown sugar glaze. (shrug)

I agree, you'll have plenty of ham for sandwiches and leftovers too.

Hmmmm. Lunch with 14 men? That doesn't sound like a bad way to spend an afternoon. LOL

I agree tyou will have plenty too. Personally I don't like a sweet glaze especially if you want the meat for sammies.

Serve the mustard as a condiment, along with a couple of other mustard choices, and skip the glaze.....my two cents!
