? for experienced Waterlox users

I am getting ready to finish 1500 sq ft of white pine in the second floor of our new construction home (3 bedrooms, rec room, closets, etc...). This site has been very helpful with the decision to go with the Waterlox, but I'm procrastinating getting started because I'm afraid of the Waterlox gelling between work days. What have you who've used it before done that works best to store the stuff between uses? I played around with some sample sizes and even that small quantity gelled while stored in a tiny airtight container for a couple days. Ordering the Waterlox was pretty inconvenient, not to mention the price, so I hate the thought of wasteing a single drop. With 4 kids and all that's involved with building, I know it will take me weeks to get all the flooring done. Plus, I've got other projects in the future that I would hope to save any leftover finish for. Thanks for any and all suggestions. (Clean rock/marbles doesn't seem very practical to me.)
