food safety question

Hello all,

I used to post more regularly, but life got busy. I've had time lately to jump in and am happy to see things as bustling as ever!

So, I went to Costco on Sunday afternoon and when I came back my teenage "helpers" did a bunch of the unloading. I was just in my pantry and discovered that one of them accidentally put the fresh bruschetta container in the pantry instead of the refrigerator. So, it has been sitting in my pantry from Sunday afternoon until Tuesday morning.

I was going to dump it, but thought I'd check here first. There's no dairy in it. What do you think? Does it stay or does it go?

Sharon I am familar with that product. If it was me, I would dump it. It basically is tomatoes, oil and garlic and is to be kept refrig. at all times. Sorry:) as it is really good.

Sigh. I think I knew the answer but was hopeful there was a chance. Thanks so much! You are right and it is now gone away. I guess it's back to Costco and I'll have to give a lesson to my boys on what is pantry-worthy and what is fridge-worthy. :-)

Mustard in general does not require refrigeration. In your case, 1. The PH (acidity) is unknown. 2. Low salt contain. 3. The seal is also to prevent tempering. If the seal is broken, you never know. Return it. dcarch This post was edited by dcarch on Thu, Mar 6, 14 at 20:06

That's true, Rachelellen, but I could leave oatmeal cookies or a brownie or fudge, cupcakes or muffins, whatever, in the backseat of my car all day and it would still be safe to eat, as would jam and pickles, etc. But something with all those eggs? Well, that would be a bad idea, I think. I do agree, though, about the differences in bread pudding. I know Nancy made some with Krispy Kreme donuts and I'm betting they were delicious, but not what I'm used to either. Mine was always made with a sweet bread dough, lots of eggs and had a creamy sauce to go over the top. Definitely not bake sale material, as it would be far too messy. Annie

Although I agree it's safe, the point is if it makes you uncomfortable, throwing a little marinade and making new isn't a major expense nor is it a major time addition. If it makes you uncomfortable the fact is you won't enjoy the food as much and that's not good. We all have our quirks and why lessen the enjoyment of a good meal over something as simple as tossing some marinade. When you get comfortable doing it, you know it's safe and can start doing it. In the meantime, there's no shame in making yourself feel better so you can enjoy it that much more. I have my own quirks on poultry, especially for cleanliness and I've become more safety conscious over the years and there's times when food has sat a while and I'm not comfortable with it (especially with "today's food"!) so I wind up tossing things that are likely perfectly fine but it just makes me feel better. I try to keep it sane and I hate to waste food but at the same time my own comfort level is important too.

My mother-in-law does this constantly. Pots of meat broth and chicken curry are cooked and left out at 80 degree room temperature--for many days at a time. The food is reheated to a boil and then served with a smile. Other cooked foods like hard-boiled eggs or hamburgers are also left unrefrigerated, and consumed days later. Like dcarch, I believe their GI tracts are apparently accustomed to handling whatever bacterial load might be in these meals. Unfortunately, this practice does cause some problems when we visit the in-laws, as I have become paranoid about food that is served. Food poisoning can be extremely dangerous, much beyond GI symptoms. It is a difficult balancing act to maintain courtesy and respect for one's elders while protecting young children from 4-day old soup with heat-stable toxins.

Of course don't dump it....it has enough acid in it to keep for a while....
It may have lost quality, become watery....but I don't believe it's got anything in there that will make you sick. wouldn't you keep a fresh tomato unrefrigerated for 3 days? and onions? and Garlic?
Serve it to the kids that did the unloading!!!

Dump it.

For a couple of reasons.

1. Modern tomatos aren't nearly as acidic as their years ago counterparts, expecially not those used in commercial preparations. The protection that acids used to give are virtually nil anymore.

2. While a VERY remote chance, the low acid and oil content could combine to promote growth of colstridium botulini, the critters that cause botulism.
