I want to try a recipe I found on a blog that marinates raw poultry pieces, then uses the marinade over the poultry when baking it at 375F for 35-40 minutes-then broiling for a few minutes.

IIRC you can use the marinade if it is boiled, but is this baking time & temp. good enough to kill e-coli and salmonella?

I wouldn't hesitate. The marinade poured over the bird should get as hot for as long as, say, the interior cavity of the chicken. So if you'd eat the one, why not the other. If you've doubts, you could simply microwave the marinade to a boil before pouring it over the bird.

If it's over 160F, It will be OK for healthy adults.

So, okay, I really can read most of it, but your translation is much better for getting a sense of the poetry. When I was in college we read some modern Hebrew poetry, which was all about reducing it as much as possible to morphemes rather than separate words, and using words with similar shoreshes rather than rhyming. Works great for poetry, not so much for song, but this one is really pretty. Thank-you. Though One Fish Two Fish is very elegant in Hebrew, if I remember right, and it rhymes. :) Blessings to the translators! I'm surprised you don't like the sound of Hebrew. English used to have velar fricatives (ÃÂ and ÃÂ with no dagesh (not that ÃÂ is pronounced in Hebrew anymore either)). You can see it in the spellings of lots of old words, and sometimes you can hear it in Scotland and Northern England still, but not much. I like a full range of sounds. :) Of course, I was reared more on the sweetness of Geula Gil than the power of Moshe Dyan. :) Back to topic, I hope you've gotten a cooler bag for your lunches?

Another who says the meat will be fine... Howa bout a non traditionals tew? Like Italian tos erve over spaghetti? or mexican? Brown the beef, with some onions and garlic and perhaps some chopped green pepper, dump in a can of crushed tomatoes...or 2 cans depending on how much beef you have, add a half a glass of red wint, a teaspoon or so of oregano and about 2 teaspoons of basil, simmer until the meat is tender and serve over spaghetti topped with parm cheese. or for mexican, brown the beef in a little oil, sprinkle with taco seasoning...or do like I do add some garlic powder, some chili powder and some cumin...add a small can of diced tomatoes and a can of Rotel and simmer until tender....serve on a toasted tortilla and top with lettuce chopped tomatoes and cheese or sour cream. That way you can put the screen name of the person you're asking for in the title, and you'll get more looks, anyway, if it's a new thread. As to storing cooked food, yes, you can (I don't know of any anaerobic safety issues), but I don't know if it'll do you any good. If there are already mold spores in the food, or bacteria, I think they still grow, albeit slowly. Think about when you open a container or yoghurt or something for the first time and it's off. Cutting the air out of the storage is good, but you might want to save your food saver bags, which are expensive, for something you're going to store for a longer time, and use a regular zipper bag for this. You can also portion it into smaller bags so you're not adding contaminants if you don't use the whole thing at once. Or put most of it in a food saver(s) in the freezer, and just keep the amount you expect to use in the next day or two in the fridge.

ETA, we cross posted. They're probably fine if commercially produced. Sometimes there's a good seal that just doesn't pop. Still, if you're worried, don't take the chance. -------------- Don't green olives have a special kind of processing with caustic chemicals? I wouldn't consume them without a label. If there's a label with the name of the people who made them, I'd look them up online and call. The olives may have been commercially produced and just jarred in the vinegar, etc., by the vendor, at which point they should be fine if they seem "fresh", but there's no way of knowing without at least talking to them. It's not worth the risk if you really don't know who made them and how.

Thanks johnliu and dcarch. It will be over 160F and boiling in the microwave is another option-never thought of that.
I don't know why, but the thought of using marinade that has been on raw chicken just kind of makes me gag!

If you are going to cook and eat the refrigerated raw chicken, the refrigerated marinade will be just as edible as the chicken when cooked with the chicken.

Chicken Marbella is cooked like that. The chicken pieces are marinaded all day, then the whole thing is popped into the oven. And it's a fantabulously delicious recipe!

Although I agree it's safe, the point is if it makes you uncomfortable, throwing a little marinade and making new isn't a major expense nor is it a major time addition. If it makes you uncomfortable the fact is you won't enjoy the food as much and that's not good. We all have our quirks and why lessen the enjoyment of a good meal over something as simple as tossing some marinade. When you get comfortable doing it, you know it's safe and can start doing it. In the meantime, there's no shame in making yourself feel better so you can enjoy it that much more.

I have my own quirks on poultry, especially for cleanliness and I've become more safety conscious over the years and there's times when food has sat a while and I'm not comfortable with it (especially with "today's food"!) so I wind up tossing things that are likely perfectly fine but it just makes me feel better. I try to keep it sane and I hate to waste food but at the same time my own comfort level is important too.
