Baking Pan Conversion?

I'm making a Black Forest cheesecake for my son's birthday tomorrow, and the recipe calls for baking it 40 minutes at 325 degrees in a 13 X 9 pan. I'd prefer to use a springform pan, but I don't know what size would work. Does anyone know how to convert pan sizes and baking times?

As far as I know, there are no "rules"....just bake until done...until a tooth pick comes out clean. Remember that a thicker...that is taller...cake will take longer to cook than a cake that is more spread out in a shallower pan.

We've got a 30" RNB with the convection fan at the back of the oven. I use a full sheet pan to bake rolls and bagels with - no more having to bake with two racks. I also bought a perforated full sheet pan and it's turned out to be my favorite -why I don't know (all Lincoln brand). As the other poster mentioned washing a full sheet pan is a project. We put in a huge single bowl sink and every time I have to wash a full sheet pan I think about taking it into the back yard and turning the hose on it. Handling a hot full sheet pan is my other issue. When it comes out of the oven it covers our entire 30" range top. I need to plan where to set it if there's other cooking going on in the kitchen - a hot full sheet pan loaded with bread rolls can be heavy. It is worth having - one of the benefits of having the big Blue Star oven - but don't buy a dozen full sheet pans until you're sure they'll work for you in your kitchen. Al

It shouldn't be a problem. My mother always made her pound cakes in loaf pans rather than a tube pan. She always froze the second one for later. You may not need to change much in terms of baking. Just check carefully for doneness with a toothpick, cake tester or piece of spaghetti (uncooked). Here's an interesting table on pan conversions. Patti, yes you'll have some left. What I'd do is just use your 9x12 and fill the pan half way with the batter, then have a cupcake pan ready and use that for the extra batter. Just use as many papers as you need in the pan for your left over batter. You really don't want to deal with using too much batter in a pan. Ask me how I know and was reminded recently...... I made the worlds ugliest boston creme pie Sunday because I tried to put too much batter in an 8" pan when the recipe called for 9". Stop at halfway. LOL..

I have a couple of these. Black steel. At least 30 yrs old I think. I clearly remember the purchase. One of the first kitchen purchases I bought at Bd'wayPanhandler downtown NYC. First apt. Fouton on the floor. Mine are aprox 9 x 15. I still use them for everything but mostly roasting. Jet black with a nice patina now. I clearly remember that first batch of cookies. They spread to one big thin sheet. Crispy and near burnt in minutes. They get very hot. All the rage now, thin and crisp. Did not care for them at first but now are my most used and both live in the oven after wiping. They need minor seasoning like cast iron. I have had the hardest time making out the makers mark, but now searching for steel, it clearly says MatferBourgeat. French. Brilliant for roasting oven fries, veg. In the top third oven rack/placement no turning necessary as they cook even with crisp bottoms being so hot. Killer for focaccia. I see on their website they have round steel. That would be good for pizza. round steel. If they go cold into a hot pre-heat they do 'ping' sometimes but level out quickly. A shame I don't see a smaller size like I have. Anyway, thanks for bringing this up. I've been wanting one for the other house as it does seafood....scallops, shrimp, fish filets so well. I did just that the other night along with roasted garbonzos and prosciutto bacon for a chowder. I use all my others, alum, stainless, all sizes I've picked up here and there. But these are my everyday.

You need a 10-inch springform pan. It needs to be 3 inches deep, if the 13 x 9 cheesecake would be almost as high as the 13 x 9 pan. Those are 2 inches high. To keep it two inches high, you'd need a springform pan 12 inches in diameter -- hard to find. The same volume will fit in a 10-inch round pan if it's 3 inches deep.
Is there a photo with your recipe? If the original cheesecake isn't very high, go ahead and use a 10-inch pan that's only two inches deep.
But if the original 13 x 9 cheesecake does look about 2 inches high, but you don't want yours to be 3 inches deep, make it in two smaller pans.

This will give you another basis for size comparison.....somewhere I have seen a comparison by volume...but I don't have it saved.
But you are on your won as for cooking times.
Baking Pan Size Surface Area
8-inch round 50 square inches
8-inch square 64 square inches
9-inch round 64 square inches
11 inches by 7 inches 77 square inches
9-inch square 81 square inches
13 inches by 9 inches 117 square inches
To figure the area of a round pan The formula is pi times r squared....i.e. a 10 inch pan's area would be 78.5 square inches...a 12 inch round pan would be about 113 square inches.
