Need T&T 'Freezable' Healthy Recipes

This year, my mom has requested no presents for her birthday. She has everything she needs and I have to say that she is hard to buy for. But, I can't let her birthday go by without 'something'! So, I'd like to cook up some meals for her and my dad to have on hand. The only requirements that I have is that they should be lower-fat -- they are trying to lose weight -- and be freezable. I have a couple of great soup recipes, but I'd like to have a few other recipes that I can portion out into single-serve containers and pop into the freezer.

Here's one...the leaner the ground beef the fewer calories..but I guess that's obvious.
Cabbage Rolls from
Sara Rosen

Separate cabbage leaves by putting head of cabbage in a large pot of boining water and lettint ti sit for 20 minutes or so.
Separate out individual leaves and fill with the following:
Mix together....
2 pounds lean ground beef
1 egg
1/2 cup beef broth....or water
1/4 cup uncooked long grain rice.
2 cloves fresh garlic, crushed
Pepper to taste
Mix together and place about 1 1/2 Tablespoons full in each cabbage leaf, roll up and fasten with a tooth pick.
Meanwhile....shred the rest of the cabbage, an onion, a couple stalke of celery finly sliced and a carrot chopped fine, and a 1 pound 12 0oz can of whole tomatoes.
Place cabbage rolls in a Dutch oven alternatly with a mixture of the veggies in layers.
Add water to almost cover the cabbage rolls and between 1/2 and 3/4 cups brown sugar, juice of a lemon and a crushed clove of garlic.
Cover the rolls and sauce with a couple of whole cabbage leaves and top with a drizzle of catsup over all.
And bake in a 250 degree oven for 4 hours......check often to see that it doesn't cook dry.

Here's another....make this with turkey for less fat...good on a bun or with cooked brown rice.
Danne's BBQ'd pork
( works well with turkey too)
One Large onion,. chopped
1 stalk celery, chopped
green pepper, chopped
1 1/2 cups broth
2 cloves garlic, mashed ( I like more)
1 T salt ( or to taste)
1 small bottle catsup ( or a bottle chili sauce)
2 T brown sugar
2 T vinegar
1 tsp allspice
1 tsp dry mustard
1 tsp chili powder
1/2 tsp tobasco 1 bay leaf
1/2 tsp paprika.
Cook about a 5 pound pork roast, covered with some water until very tender. Cool and cut up, Simmer for about 3 hours with the sauce ingredients. Serve on a bun.

This is from Sharon CB..and can be cooked frozen and reheated in the micro.
Fresh Salmon Cakes
2 cloves garlic; minced
2 tablespoons minced onion
2 dashes Tabasco (or 1 teaspoon Old Bay)
1 egg yolk (or egg white)
2 tablespoons chopped parsley
2 tablespoons real mayonnaise
1/2 teaspoon kosher salt (less if table salt)
fresh ground pepper to taste
2/3 cup coarse white bread crumbs
1 pound fresh salmon
1/2 cup Panko (Japanese bread crumbs)
2 or 3 tablespoons olive oil
In a small bowl, combine garlic, onion, Tabasco, egg, parsley, mayonnaise, salt and pepper; set aside. Remove skin and bones from salmon and cut into small cubes (about 1/2-inch); place in a medium bowl and gently stir in bread crumbs. Gently fold egg mixture into salmon and bread and refrigerate at least 2 hours before shaping into 4 patties.
Carefully coat the outside of each patty with Panko crumbs. Heat oil in a non-stick skillet over medium-high heat until very hot and add salmon cakes. Fry the cakes until brown, about 4 minutes on each side turning only once. Serve with lemon wedges or your favorite tarter sauce.
*May substitute cracker crumbs or bread crumbs for the Panko.

And this, chill and remove fat before freezing.
Gypsy Stew..Pink Adobe, Santa Fe
1 large frying chicken cut into pieces
3 yellow onions peeled and quartered
8 cloves garlic, peeled and halved ( I chop!)
2 cups dry sherry
1 cup chicken stock
12 medium hot chilis like poblano, roasted, peeled and seeded (or use canned)
6 large ripe tomatoesÂAgain I use whole canned plum tomatoesÂ.cut in 4thsÂpull apart using 2 forks)
Salt to taste and Â½ pound grated jack cheese
Put chicken, onions, garlic 1 cup of sherry and the broth in a large heave kettle ( add more broth to cover if neededÂ..simmer one hourÂ.cool somewhat and remove skin and bonesÂ.I also cool the pan juices somewhat and skim the fat..
Put chicken tomatoes, chilis and rest of the sherry back in the pot and simmer about 45 minutes.
To serveÂplace cheese cubes in the bottom of bowl and ladle hot soup over the top.
Good made ahead and reheated.

How about a chili, that always freezes and you can make it mild or spicy depending on what they can eat.
1 1/2 lbs extra-lean ground beef or you can substitute chicken or turkey.
2 tsp minced garlic
1 cup each diced celery, diced green bell pepper, and diced red onion.
1 1/2 tbsp chili powder
1 1/2 tsp each ground cumin and dried oregano
1 tsp ground coriander
1/4 tsp ground black pepper
1 can 19 oz diced tomatoes, undrained
1 can 14 oz tomato sauce
1 cup beef broth
1/4 cup chopped celery leaves
1 tbsp hickory-flavored BBQ sauced
1 can 19 oz red kidney beans, drained and rinsed
1 can 14 oz white beans
3 tbsp chopped fresh cilantro
1 tbsp freshly squeezed lime juice
2 tsp liquid honey
Cook been and garlic in a large, deep, non-stick skillet or pot over med-high heat until beef is no longer pink. Stir in celery, green pepper, and red onions. Cook and stir for 3 mins. or until vegetables begin to soften.
Stir in chili powder, cumin, oregano, coriander, and black, tomato sauce, beef broth, celery leaves, and BBQ sauce. Bring mixture to a boil. Reduce heat to low. Cover and simmer for 20 mins., stirring occasionally.
Add beans and simmer, covered for 10 mins more. Remove from heat. Stir in cilantro, lime juice and hone Serve hot. May cool and freeze.

How about casseroles that can be made ahead and frozen. Spaghetti sauce and then all they need to do is the pasta and a salad. Or precook the pasta and freeze it too!!

Here's a recipe I copied from a Cook's Illustrated "Healthy" Cooking magazine. It's really not bad, and I'd load it up with a bunch of steamed vegetables, probably some broccoli, red peppers, maybe peas or peapods, some mushrooms. Use whatever you like and that sounds good, the vegetables will add lots of bulk and few calories to the final dish. The notes included in the recipe are not mine, they were included in the original recipe. Low-Fat Fettuccine Alfredo Most standard recipes for Fettuccine Alfredo call for copious amounts of cream, butter and cheese. We wondered if a slimmed-down version of this decadent dish would be worth attempting and, most importantly, worth eating. Much to our excitement, we found we could cut three-quarters of the fat from our original recipe and still produce an Alfredo big on creamy, rich flavor and texture. Here are some of the ways we did it. Test Kitchen Discoveries Instead of heavy cream, we used a combination of whole milk and half-and-half to create a reduced-fat sauce that was both creamy and rich-tasting. To replicate the thickening effect of heavy cream, we settled on a roux made with just 1 tablespoon of unsalted butter and 2 teaspoons of flour. This combination thickened our sauce effectively. By adding just a pinch of nutmeg and a lot of fresh-ground pepper, we were able to give our sauce a robust savory flavor. Simmering a crushed garlic clove in the sauce added an even deeper level of flavor. Traditional fettuccine alfredo has 580 calories, 43 grams of fat, and 27 grams of saturated fat per main-course serving. Our Low-Fat Fettuccine Alfredo has 320 calories, 12 grams of fat, and 6 grams of saturated fat per main-course serving. 1 tbls unsalted butter 2 tsp all purpose flour 3/4 cup whole milk 1/4 cup half and half 1 garlic clove, peeled and lightly crushed Salt and pepper Pinch nutmeg 1 cup grated parmesan 1 9 oz. package fresh fettuccine Cook pasta in 4 quarts water Heat butter over medium heat in large saucepan until foaming. Whisk in flour until mixture is smooth and golden, 1 to 2 minutes. Wisk in milk, half and half, garlic, 1/2 tsp salt, 1/2 tsp pepper, and nutmeg and bring to simmer. Reduce heat to medium low and simmer until sauce is slightly thickened, 1 to 2 minutes. Discard garlic, stir in parmesan and remove from heat. We have a hand-crank Donvier we got when we were married in 1995 that is almost constantly in use from about the 4th of July to mid-September. (The brand-name one is overpriced. Get a clone, which can be had for under $20 on sale.) DH wants an electric and I may get him one for his birthday (which is 2 days after Christmas LOL) if end-of-summer sales yield any REALLY good prices on reliable machines. Here's the base recipe we use, from the Ben & Jerry's book... I don't think you could GET any simpler, and it's surprisingly good. We pretty much never use a custard base because our kitchen is not air conditioned, and diddling around making custard in a 90-odd degree kitchen is officially Not Worth It in our book. For a 1 quart ice cream maker, combine 1 can sweetened, condensed milk (many of us remember it as "Eagle milk") with 2 cups light cream, a splash of vanilla extract and a pinch of salt. Do NOT leave out the salt! Stir well, chill at least 2 hours before putting in the ice cream maker. You can substitute full-fat ("cream top") vanilla yogurt for half the cream but it doesn't really save you much calorically, just does interesting things to the flavor and can make you feel a little virtuous LOL! Lower-fat yogurts give a strange chalky texture and unsweetened yogurt makes for very sour product. (Found from unpleasant experience that just chucking a quart of yogurt straight from the container into the ice cream maker, no matter how yummy it is normally, does not make nice frozen yogurt, oh no not at all!) There's a simple plain base, now start playing... A super easy way to get a delicious fruity flavor ice cream is to substitute 1 cup of a good strong jam for 1 cup of the cream. (I don't recommend doing both jam and yogurt and eliminating all the cream. The result came out... the only word I can find for it is "stretchy".) The jam concentrates the fruit's flavor; warm "seedy" jams like raspberry or blackberry until they're liquidy and push them through a strainer if you don't want to be picking seeds out of your teeth for days. If you want fruit pieces, line a cookie sheet with the nonstick foil or baking parchment (or a Silpat if you're blessed with one), spread out a layer of finely chopped fruit with the pieces not touching, or minimally touching, and freeze rock solid. Add the fruit pieces at the very end of churning. Toast any nuts you wish to add for a stronger, "nuttier" flavor; and grating frozen chocolate bars on the largest holes of a grater (use an oven mitt to hold the chocolate so your body heat doesn't melt it) gives a better result IMO than using chocolate chips, even the mini kind. If you want to use something like butterscotch chips, freeze them and break them up in small batches in a food processor on "pulse". Good use for one of those mini-chopper types. Remember that your liquid ice cream/sorbet/yogurt mixture has to be almost sickeningly-sweet in its unfrozen state to taste "normal" as a finished product - the cold numbs your taste buds so all the flavors have to be STRONG. Oh, and filling the churning chamber more than about 2/3 full, 3/4 at the most, can be a recipe for a Big Sticky Mess. So don't do it. Honey-sweetened ice cream does not store well more than 24 hours - it gets crumbly and weird-textured, so if you want to do something with honey, have enough people around to scarf it down within hours of curing. Alcohol will interfere in the solidifying process so if you really load it up even with an overnight cure you may not get more than a "soft serve" texture. We bought a whole slew of nice little (not quite 1/2 cup) lidded plastic containers into which we portion the ice cream while it's still in the "soft serve" state. Pop them in the freezer and in 4 hours it's solidified enough to have the proper ice cream "mouthfeel", although I like 8 hours' curing time. If we don't pre-portion it DH will go WAY overboard! Oh, and the famous Mark Bittman/New York Times "eggless ice cream" was IMNSHO utterly REVOLTING.

I was not a picky eater as a child, but now I am. I don't like certain textures, things like Jello will make me fight to swallow instead of gag. Neither of my kids were very picky, but Ashley liked (and still likes) more sweet stuff and processed food than her sister. She'd do things like sit down with a can of cream of mushroom soup and eat it right out of the can. She still prefers white bread and would be as happy living on fast food as she would be with filet. My granddaughter first ate everything, then became very picky, now she's becoming more adventurous again. I told her to try new things, if she didn't like it she could spit it out, she didn't even have to swallow. That got a lot of new foods into her mouth and she liked some of them. She just wanted to know that she had the option, I guess. She is also funny about texture, even when she was a baby things like pudding and mashed potatoes would make her gag. She still won't eat mashed potatoes. My grandson is an eating machine. He'll eat anything except green beans, he hates those. His problem is that he will eat until he gets sick, if it's one of his favorites. So what to feed picky eaters? I'd start with what they like, and try to branch out. He likes chicken? How about some BBQ sauce? I ground Doritos in the food processor and made chicken nuggets, those Doritos became seasoned bread crumbs. He likes pasta? What does he like on it? If it's plain, could you get away with some cheese? That cheese could eventually include some seasonings, maybe some bacon. I never met a kid who didn't like bacon, for some reason. Many kids like things they can dunk. My granddaughter still won't dunk a french fry in catsup, she hates sauces. My grandson dunks everything in catsup, BBQ sauce or ranch dressing. I think it depends on the child. I wouldn't fight over it, but if you can ease some new things into his diet, he might not even notice. Or, you might get lucky like I did on Halloween. I made some butternut squash bread, which both the grandkids love. There was some squash left over. Amanda came in, added some butter and brown sugar and heated it in the microwave, then ate a bowl of it. Bud suspiciously eyed what was left and asked me what it was. I told him that it was so good that his mother didn't share it, she was being selfish. He took me very seriously and quietly finished off the bowl, then told his mother that he'd eaten the rest of "her" squash. She told him that was OK, she'd make more for HERSELF tomorrow. Most publications and on-line information say to use 25% less agave nectar than sugar called for (3/4 c. agave nectar for each 1 c. sugar), but I've found I can use much less than that in most cases. It depends on other ingredients and what part (food science) the sweetener plays in the type of food. If there are sweet ingredients or spices, you can often use less agave nectar than 25%. In this wholegrain banana bread recipe - I use 1/4 c. agave nectar. BANANA-POPPY SEED BREAD 1 c. mashed banana 1/4 c. agave nectar (OR 1/2 c. sugar) 1/2 c. milk (I use homemade kefir) 3 T. vegetable oil 1 egg, lightly beaten 1 c. all-purpose flour (I use wholegrain spelt flour) 1 c. whole wheat flour 2 t. baking powder 2 T. poppy seeds (I substitute whole amaranth for an additional whole grain that is high in protein. They look like golden poppy seeds in the bread.) 1/2 t. baking soda 1/2 t. salt 1/2 t. cinnamon vegetable cooking spray Combine the bananas and agave nectar (or sugar) in a small bowl; stir well. Let stand 10 minutes, stirring occasionally. Stir in milk, oil, and egg; set the mixture aside. Combine flours and next 6 ingredients in a large bowl and stir well. Make a well in center of mixture; add banana mixture to dry ingredients, stirring until moistened. Spoon into 8-1/2x4-1/2x3-inch loaf pan (NOT a 9x5-inch pan usually used for quick breads) coated with cooking spray. Bake at 350°F for 1 hour or until a pick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan, and cool on a rack. Grainlady Note: I like to bake quick breads in a Danish Loaf pan (aka Tea Loaf Pan - see link below). It's longer and more narrow (12" x 4" x 2 1/2" pan holds the equivalent of a 9" x 5" loaf pan) with playing-card sized servings. It's easier to slice very thin slices from this type pan - important when control portion sizes. Plus, it bakes 25% faster than a 9x5 pan. -------------------- WACKY CAKE (a frosting-free snack cake) 1-1/2 c. whole wheat flour (soft wheat, or whole wheat pastry flour OR 1-1/2 c. + 2 T. spelt flour) 1 t. soda 1/2 t. salt 3 T. cocoa powder (can eliminate) 1 T. vinegar 2 t. vanilla 5 T. butter, melted 2/3 c. agave nectar 1/3 c. cold water Mix ingredients in an 8-inch square pan in this order: -Combine all dry ingredients and mix well. -Make 3 holes evenly spaced apart in dry ingredients. -In first hole, put vinegar. In second hole, the vanilla. In third hole, melted butter. Mix water and agave nectar together and pour over all the cake ingredients. Stir well, using a dinner fork or spatula (be sure no dry ingredients remain in corners). Bake at 325°F for 30-35 minutes. One serving - 1/16 of cake (cut the cake into 16 pieces). For spice cake: Omit the cocoa and add 1/2 t. Penzeys Cake Spice (www.penzeys.com). A mixture of: China cinnamon, star anise, nutmeg, allspice, ginger, cloves. -------------------------------- Other agave nectar goodies (my original recipes): COCONUT ALMOND CANDY Melt: 2 T. butter in a frying pan Add: 1/2 c. long-shred UNsweetened coconut 1/2 c. chopped raw almonds Over medium heat, cook until the ingredients begin to brown. CAUTION - this will burn easily. Remove from heat. Add: 2-3 T. agave nectar 1 t. almond flavoring Stir well. Place in small paper candy cups. (I use a 100 size portion scoop for this - approx. 1 teaspoon.) Cool in a refrigerator at least 1/2 hour to set. Yield: approx. 20 pieces. PROTEIN PEANUT BUTTER BALLS 1/2 c. whey powder (vanilla flavor) 1/2 c. peanut butter 2 T. agave nectar 1 t. vanilla or almond flavoring Mix thoroughly with a dinner fork. *If desired, add 1/2 to 3/4 c. crisp wholegrain rice cereal to the dough. Roll into small (3/4 to 1-inch) balls. *Toppings - Melt 1/2 c. chocolate chips and drizzle over the top. You can also dip the balls in a little agave nectar and then dip in chopped roasted almonds or toasted unsweetened coconut. ---------------------- VANILLA ICE CREAM 4 oz. EGG BEATERS (DO NOT substitute raw eggs) 1/4 c. agave nectar 1 c. Half & Half 2 c. cream 1-1/2 t. vanilla In a 4-cup measuring cup or equal-sized bowl, combine Egg Beaters, agave nectar and vanilla and stir to mix. Add cream and half and half. Chill thoroughly in the freezer (just until ice crystals start to form on the edge. Process in an ice cream maker of choice AGAVE NECTAR CHOCOLATE SYRUP 1/4 c. Hershey's Cocoa Powder 1/2 c. agave nectar 1/2 c. cold water Mix, with a whisk (it takes a bit of mixing to get it smooth). Store in refrigerator. Grilled boneless - skinless chicken breasts. Sliced they can be served as fajitas, on salad greens, on a roll or tortilla shell.
I also freeze grilled shrimp, onions & green peppers to serve as a fajita meal.
Taco meat - prepared.
Chili freezes great.
Freezing meals is my gift to myself - I think a very great gift to your Mom!

Burritos with any number of fillings including breakfast!
Use the lower fat and/or whole wheat tortillas.

Spanish Rice
Cioppino (Fisherman's Stew)

Breakfast things:
Waffles and pancakes can be frozen
I make "McMuffins" all the time with ham or turkey, cheese and egg. You could omit the cheese or use a low-fat variety.

And a whole different direction for birthday gift....
Plan an 'event' rather than buy gifts.
Gather family, friends, etc and surprise her!!

I hired a local Glider School last year when my mom turned 65 and she got to go up in a Glider (her wish). Then we all went out for pizza!

When she turned 60, she skydived and my brother arranged that for her!

Not for everyone, obviously, but what about tickets to a concert, opera, museum or something she's interested in? A day at a spa? A family photo in a beautiful frame?

I was going to suggest chili and spaghetti sauce. Both seem to freeze well. How about stew, and an already-cooked roast beef? My parents freeze those in small quantities quite often, putting them into their RV freezer. They have a standing joke - when they're on an RV trip and stop for the night someplace, they eat whatever falls out of the freezer when they open the freezer door. (We tease them back that it better be something more nutritious than frozen apple or orange juice concentrate!)

Linda -- you must have been reading my mind. I was thinking about cabbage rolls and wondering how well they would freeze. It's one of my mom's favorite dishes!
