A party food challenge for you

Hi All - I'm co-hosting an annual party on Saturday. I like to serve a variety of unusual finger foods, so I usually do a lot of cooking ahead. This year my kitchen has been remodeled, and the range isn't hooked up yet. The gas company is scheduled to come tomorrow, but I don't know what time, and in any case I'll believe they're here when I see them.

My challenge to you is this: Can you give me some recipes for munchies that are both easy and quick to prepare, and not something everyone has had 100 times? Ideally, some of these will require no cooking at all, just in case the gas company lets me down (again).

I saw the baked brie recipe and the cream cheese with peach salsa on another thread. They sound great...providing I can find a store that sells the peach salsa. Any more?

You might try asking your question over at the Cooking Forum- the people there have a lot of good ideas and are only too happy and willing to help!

Here are a couple of recipes I collected from earlier postings (with the original comments) **************** Buffalo Chicken Posted by debbie814 Side note: This is a recipe that my hubbie makes that he learned from his college roommate from Buffalo, NY. It's very yummy!! 8 boneless chicken breasts Mix together: 1 small bottle of Frank's hot sauce (6 oz.) Â½ stick of melted margarine 3 cloves garlic (minced) Dip chicken in bread crumbs, and fry in vegetable oil until golden brown. Place in baking dish, and pour the mixture over the breasts. Bake or 25 minutes @ 350. If you want it spicier, use less margarine. If you want it milder, use more margarine. Serve celery sticks with bleu cheese dressing as a side dish. ************** Buffalo Chicken Dip posted by Glenda_al 4 boneless, skinless chicken breasts (about 2 lbs) 1 12oz. bottle Frank's Hot Sauce 2 8oz pkgs. cream cheese 1 16oz. bottle blue cheese salad dressing(or Ranch if you prefer) 8 oz shredded sharp cheddar, Mont. Jack or a combo Boil chicken until cooked through, shred with 2 forks. Preheat oven to 350. In a 13x9, combine chicken with hot sauce and spread evenly. The party is over! It was a great success. We had about 80-85 people there, and yes, tons of food left over! I planned for close to the right number(planned for 100), but of course I expected them to eat way more then they did! Here's a picture of the cake that Emi's oldest sister made for her party. This is only the second one that she's tried decorating and I think she did a lovely job. Not professional yet, but very pretty and imaginative!

Find a garage sale quick! You can always find pots and pans cheap.. It's your get away time and you don't need to be tied to the stove, but it's easy once you have things set up. We used to go in our trailer for 3 days a lot. I always cooked real meals and storage was a issue until I stocked quart jars for trips. Rice,flour,pasta, sugar and spices etc.can be stored in bigger jars for future use. Bake a chicken one night, use some of the left over for chicken and rice, and any left over chicken can be chicken salad. A pork roast can be dinner one night, pulled pork the second. Roast beef one night, fajitas the second and maybe french dip the last. And my personal favorite..sausage and gravy in the morning with refrigerator biscuits. I just bought smaller sizes.You can now buy a pack with just a few. I always picked up fresh produce along the way. Kathy

Thank you all, again. I ended up making 6" fruit skewers as suggested above, since the fruit is so wonderful now. Yum! I even added some mint leaves in there because it looks gorgeous. I also brought a little dip of sourcream, coconut and apricot preserves in an iced bowl. Truth is I made those because that was what I wanted to eat, and good thing, because surprisingly they did not serve fruit! I also made a basket of snicker doodles, which were a great hit. My host told me he had one for breakfast today. I am making Bumblebeez salad for dinner tonight, and Id love 4kids tart recipe. And we have an event midweek where i am going to try to making the waffle cones --- how do you make sure they do not get soggy? PS even a humble snickerdoodle can dress up for party

Hope you got your range hooked up!!

Last week I made bacon straws by simply wrapping a store bought breadstick (stella doro) with a slice of bacon and baking.
When they came out of the oven, they were limp but they hardened back up in no time. I also sprinkled them with parmesan cheese while they were still warm.

Also last week I made pumpkin dip...its really good!!!
1 can of pumpking puree, 1 tub of cool whip and one box of instant vanilla pudding mix (do not prepare the pudding).
Just dump evenything into a mixing bowl and mix until well blended and chill.
Serve with grahm crackers, spiced wafers, nilla wafers or even fruit or pretzels.

Hi,
Here's a super easy sweet appetizer/dessert that I've tried:

1 box chopped dates
1 can condensed milk
Cream cheese frosting
Ritz crackers

In cooker, heat the dates and condensed milk. Mixture will be like a paste. Using a knife (or however is easy) just dollop some of this mixture on top of the Ritz cracker. Let cool. Then add a dollop of the cream cheese mixture.

Very delishhhhh!

I did notice, thought, when I had them in the refrigerator the day after the party----that the crackers got a little soggy----could probably reheat a little. That is, if you have any left!! Or, just keep the date mixture separate until the day of the party.

This is great and no cooking is involved - just alot of chopping! (you can buy the already cooked shrimp at the grocery when you make this!)

SHRIMP SALSA

4 lbs. cooked, peeled shrimp
8 Roma tomatoes, chopped
1 cup diced red onion
1 1/3 cup fresh cilantro
1 1/4 cup serrano chili peppers, seeded & minced
4 TBS fresh parsley
juice of 4 limes
1 cup extra virgin olive oil
kosher salt and freshly ground pepper

Cut each shrimp into 3 or 4 pieces and place in large bowl. Add the tomatoes, onion, cilantro, serrano peppers and parsley. Mix to combine. Add the lime juice and oil and toss to mix thoroughly. Season to taste with salt and pepper. Chill until serving time and serve with tortilla chips.

Thanks, everyone. This party has come and gone, but I'll save your ideas for next time. Jamie, I'll also pass your recipe on to my son, who loves to cook shrimp all the time. He also likes salsa, so I think he'll really go for this one.
