Oat farls - good and bad news

The good news is I made the oat farls according to the recipe in the Scone Blowout thread (Grainlady - many thanks for posting the link). They came out great. The next day they weren't crumbly anymore and I cut each one of them into 4 slices for toasted cheese sandwiches. Next time I'll make 8 farls instead of 4 to get twice as much crust. It's so delicious.

The bad news is yesterday I tried to tweak the recipe and make farls from buckwheat berries, but the liquid ratio that works for the oats doesn't seem to work for the berries, which are toasted and far more dry. I should have realized that before hand but for some reason It hadn't occur to me.

For buckwheat poridge I always soak the berries overnight in plenty of water (they open up and become extremely soft). Then I rinse them & cook them in milk. For the oat farls I didn't soak the berries in water first - just rinsed them in a colander and mixed them in a bowl with the amount of buttermilk mentioned in the farl recipe & left the whole thing in the fridge to soak till I come back from work in the evening. Result: the berries drank up al the buttermilk, but remained pretty hard and unfarlable. I had to drown my grief in a large cup of NIDO.

Should the berries be soaked in water overnight and only them mixed with buttermilk? And what should be the buttermilk ratio to the berries in this case? Or should I just increase the ratio of buttermilk to berries? And if so, by how much?

Any and all suggestions will be much appreciated.

Glad you liked the recipe. I generally form two rounds (1-inch thick) and cut each round into 6 or 8 wedges, and that fills a cookie sheet. For a St. Patrick's Day Hooley (party) I cut them with a shamrock shaped cookie cutter. We're having oat farls for breakfast this morning, ironically enough :-).

I will have to give it a try with buckwheat groats and run the buckwheat through my flaker first. Great idea! I would say add enough buttermilk to the buckwheat groats to make sure they are coated with buttermilk, but not "swimming" in buttermilk, for the overnight soak. You can always adjust the hydration when you add the dry ingredients to make the dough.

I made the recipe with "heavy bran" instead of oats years ago. A local mill gave away some heavy bran through the Extension Office and asked a group of willing souls to try it in recipes. Heavy bran is made from whole wheat berries. It's tempered (steamed) like oats are for oatmeal, then flaked and dried. Heavy bran is a base ingredient for flaked cereal. Anyway, I used it like old-fashioned oats and made farls with it. It worked well, but oatmeal gives it the best flavor.

Have you ever used buckwheat groats in Tabouli? A good wheat-free alternative.

Buckwheat Tabouli sounds fantastic. How come I never thought of THAT??

I received a poem in ths vein! No author given tho! RockAway Rest Home Christmas "Twas the night before Christmas at Rock-Away Rest,and all of us seniors were looking our best. Our glasses how sparkly,our winkles,how merry;Our punch bowl held prune juice plus 3 drops of sherry. A bedsock was taped to each walker,in hopes that Santa would bring us soft candy & soap. We surely were lucky to be there with friends, secure in this residence & our Depends. Our grandkids had sent us some Christmasy crafts, like angels in snowsuits & penguins on rafts. The dental assistant had borrowed our teeth,and from them she'd crafted a wreath. The bed pans so shiny, still all in a row, reflecting our candles magnificent glow. Our supper so festive-the joy wouldn't stop...it was creamy warm oatmeal with sprinkles on top. Our salad was Jello so jiggly & great, then puree of fruitcake was spooned on each plate. The social director then had us play games, like "Where are you living?" & "What are your names?" Old Grandfather Looper was feeling his oats,proclaiming that reindeer are nothing but goats. Our resident wand'er was tied to her chair in hopes that at bedtime she would still be there. Security lights on the new fallen snow made outdoors seem noon to the old folks below. Then out on the porch there arose quite a clatter (but we were so deaf that it just didn't matter). A strange little fellow flew in through the door, he tripped on the sill & fell flat on the floor. 'Twas just our director,all togged out in red. He jiggled & chuckled & patted each head. We knew from the way he strutted & jived, our social security checks had just arrived. We sang-how we sang- in our monotone crock,till the clock tingled out its soft 8 o'clock stroke. And soon we were snuggling deep in our beds, while nurses distributed nocturnal meds. And so ends our Christmas at Rock-a Way- Rest 'Fore long you'll be with us. We wish you the best! Then she writes "Want to share a room?" Fortunately, I haven't had that experience. I always battle the regular old things which are already here and blow in. I cringe when someone knew wants to tour the weed patch, wondering what kinds of wonderful things they'll bring in on their shoes. There isn't a "gardener" to bring things in on his shoes and equipment anymore. I remember reading in a LA Times article years ago they've estimated up to 30,000 weed seeds in a cubic yard of native soil. Some of them only need the small amount of light provided by pulling up a neighboring weed, during a full moon. With odds like that already against me, I honestly don't worry about things coming in bags. But, then I always buy the same product from the same source as it's never failed to please and remains the best deal around for this type of product. A fellow Huntington Volunteer many years ago brought in active Oak Root Fungus in a load of compost she bought from Armstrong Garden Centers. Up till it arrived, she'd never had any issues. Within weeks of having it spread, things began dying, including a decades old Ficus hedge which provided her Trousdale Estates home with privacy from the neighbors. I have a whole bed of them on the north side of my shop. The pretty much stay there. There is a pathway between their bed and the rest. True, They do not get much moisture so seeding is rare. I like it when it does . I move them to where I want them. FREE plants. They are drought tolerant (This is Central Texas hill top shade) but perform better on wet years. They died in thew Great Drought of 2011 but came back from seed like most of my unwatered garden. I like how they proliferate in the wild on large areas of the stream banks. Beautiful in mass when they have seed in the shafted light of oak trees.. I wonder if the drought ,heat and cold hardiness is a variable quality in the regional populations. I got my seed from the population need by from a stream that goes dry for years sometimes. If I was establishing a population in Burlington Vermont, I would get my seed from afar north as possible. I never buy prairie grasses from Prairie Moon Nursery in Minnesota, even though they are tempting. It might as well be a different country. To cold, too wet and that have dirt feet thick. (@Caroline O) As a landscape designer, you are probably not growing from seed unless you are doing or having someone do contract growing for you.

What is it about "Afternoon Delight" that gets it so often singled out as being one of the all-time horrifically bad pop tunes? Maybe the unbearably chirpy female vocals? I don't like the song either, except for the last ten seconds. That 4-part vocal swirl near the end is pretty neat. So is the pedal-steel guitar throughout the song. Two interesting factoids about the Starland Vocal Band: 1) They evidently started out as a serious folk-rock band with mostly topical lyrics. AD was a lightweight anomoly in their set, but of course it became their chart-topping hit, and nobody could ever take them seriously after that, assuring one-hit-wonderdom. Their first album in its entirety still gets good reviews from critics who dare to listen to it. 2) There was such a high expectation amongst some that the SVB would become perennial hitmakers that some TV exec started up a Starland Vocal Band Show in 1977 that of course was soon cancelled after a brief run. But it was on that show that a young comedian named David Letterman made his first appearance on TV as a comic. There are so many contenders for worst song of the '70s I don't know where to begin. Certainly "Afternoon Delight" is trounced by "You Light Up My Life" by Debbie Boone, or the wretched "My Ding-a-Ling" by Chuck Berry (made even worse given how crucial a figure he once was in shaping rock and roll). Both were #1 hits. So was "Seasons in the Sun". There was also plenty of great music from this era though. I'll get to it in another post....

FARL: A farl (reduced form of the Scots fardel) is any of various roughly triangular flatbreads and cakes, traditionally made by cutting a round into four pieces.

The story goes.... A dear friend who loves Oat Farls (I make them for him for his birthday and Christmas as well as St. Patrick's Day) was talking to someone at a business meeting about the traditional Irish foods I make for our St. Patrick's Day Hooley and was overheard telling her how much he loves "Fart Laurels", so that's what we call them (snork)! Each time I've posted the recipe it's been misread as Oat Farts - which gives us all a good chuckle. ;-)

Had to smile at the derivation.
Fardels as in Hamlet's famous soliloquy? "Who would fardels bear,/ To grunt and sweat under a weary life...."
Those fardels (burdens) were heavy. I wonder if the Scotch oatcakes were too?
