My bread was a little 'flat'..

Not the rise of it, but the flavor..

I made a Gluten Free White Bread tonight..it's perfect in every way except..it seemed a bit flavor~less..

The lighting isn't good enough to get a good shot of it tonight..but you can sorta see a slice of it on my dinner plate in WFD..under the butter and behind the salad..LOL

White Bread

1 3/4 c rice flour

1/2 c potato starch

1/4 c tapioca starch

1/4 c dry milk powder

2 T sugar

2 1/2 t xanthum gum

2 t yeast

1 1/4 t salt

1 c water

2 t cider vinegar

2 eggs

2 egg whites

1. Mix dry ingredients well.

2. In a heavy duty mixer with paddle attachment mix wet ingredients until well blended.

3. With mixer on lowest setting add in dry ingredients until combined. With rubber spatula, scrape bottom and sides. With the mixer on medium speed, beat 4 minutes.

5. Spoon into prepared pan. (greased loaf pan). Let rise, uncovered, in a warm draft free place for 60-75 minutes or until dough has risen to the top of the pan. Preheat oven to 350F. Bake 35-45 minutes or until the loaf sounds hollow when tapped on the bottom.

~There is also this same recipe in the book under the bread machine section which suggest using milk inplace of the water and dry milk. I forgot to account for the 1/4 c dry milk and only added 1 c of 2% milk.

~would that make a difference in flavor? Could I up the salt just a touch?

Anyone have any suggestions?

On a hunch I googled and found some recipes for a gluten free sourdough starter.

Instant Potato Sourdough Starter

3 tbsp instant mashed potato flakes
3 tbsp white sugar
1 c. warm water
1 Â¼ tsp active dry yeast

Combine instant potatoes, sugar, water, and yeast in a covered container. Let the starter sit on a counter for 5 days, stirring daily with a wooden sthingy. On the morning of the fifth day, feed the starter with 3 tbsp instant potatoes, 3 tbsp sugar, and 1 cup warm water. In the evening, take out 1 cup of starter to use in sourdough recipe. Refrigerate the remaining starter. Every five days, feed the starter 3 tbsp instant potatoes, 3 tbsp sugar and 1 cup of water. If starter is not being used in a recipe, keep it refrigerated and discard (or give away) 1 cup of starter after each feeding.

Sourdough Starter recipe:

Mix 100g any gluten-free flour and 150ml mineral water in a bowl and leave, covered at room temp for 24 hours.

Stir in 100g flour and 150ml mineral water, cover and leave 12 hours.

Stir the starter, add 100g flour and enough water to return to original runny consistency. Cover and leave 12 hours.

The starter should now be "slightly spongy".

If not needed immediately, cover and refrigerate. Return to room temperature before use.

(It says if starter is to be kept "for any length of time, feed and water it regularly".)

Thanks Michelle~ I was wondering about a starter or proofing the yeast a bit or even an overnight rise..but in the absence of gluten...things don't seem to "hold" well...so I wasn't sure..

I think people should be wary of attaching an epithet to a plant from an unknown source. All plants exhibit differences in form, flower colo(u)r, spination, etc. Sometimes the differences are subtle, sometimes marked. Trying to nail it down makes you crazy and leads to photos being posted with a definitive ID when in fact is is an ID arrived at by photos from the internet, discussion with friends, or attempts by people like me who have the best of intentions but are only human. At any rate, enjoy the plant. All I can say is that if you are successful at getting bloom next year, you will likely be hooked. Rebutias have a gem-like quality with their bright flowers in a range of colors, colours, couleurs. The pattern for me is to have a couple of blooms, then the main flush, then a smaller flowering about a few weeks later. I think the photo above is the second flush. I'll look for a pic with the main bloom. Be careful with slugs. They will cross an ocean of deterrents to eat the plant, making holes in them, eating huge chunks from the poor little plants. Slugs here prefer Rebutias to all other cactus species I have.

Linda, If you want to convert a bread machine recipe to a made by hand recipe, try this: in a bowl - put in the water or other liquid called for add in the yeast, whisk to dissolve, let sit 5-10 minutes to "proof" the yeast and made sure it is viable add any sugar, honey, maple syrup or other sweetener called for in the recipe, stir well add half of the flour called for in recipe, add salt and mix well, stirring with a strong spoon or heavy duty whisk also add in any dry herbs or spices now add in any butter, oil, or other fat called for - if melted butter, make sure it is only just warm, not hot - add in any egg(s) listed in recipe add in rest of flour and any other ingredients, chopped herbs, nuts, dried fruits, cheese, etc. stir well with spoon or mix with your hands until dough is a rather shaggy mass turn out dough onto a clean, floured flat surface and knead for 8-10 minutes adding only small sprinkles of flour if the dough sticks to your hands and the kneading surface [if you forgot those nuts, cheese, or raisins, you can knead them in now] when dough has been kneaded sufficiently it will come together into a nice firm ball (rather than a shaggy mass) and spring back when poked with a finger grease or oil a large bowl (or use the one you mixed in), put dough in, turn it around in the oil to grease the top of the dough and turn it oiled side up in the bowl; cover with a bowl cover (shower cap type), plastic wrap, or wax paper, then cover with a clean kitchen "tea" towel (dampened with hot water if you are making whole wheat bread) and set the dough to rise until doubled in bulk turn out dough, knead 2 minutes, divide into portions according to recipe or not - form loaves and put in greased loaf pans or not - cover again with wrap, and let rise until doubled in bulk preheat oven, bake bread until done, let cool at least a few minutes before cutting - and enjoy!

Lavash is our preferred bread to have with hummus: LarsÂ Hummus I like Hummus with a strong garlic flavor, and so you may want to use a bit less than I do, but I think it improves the flavor. The important thing to remember when you make hummus yourself is to use fresh or dried beansÂnever canned, as they always have a "can" flavor. If you must use canned garbanzos, make sure you rinse them thoroughly. Ingredients 1/2 pound (1-1/3 c) dried garbanzo beans, (about 3 to 3-1/2 cups cooked) 1/4 - 1/3 cup lemon juice 3-4 cloves of garlic 1/3 - 1/2 cup olive oil 3-4 tbsp toasted sesame seed oil 1/2 cup tahini (toasted, if available) 2 tsp salt 1/8 tsp cayenne 1 to 1-1/2 tsp freshly ground black pepper (or to taste) 1-2 tbsp water, if needed Directions Cook beans according to package instructions. I generally boil them for two minutes in a large pan, with triple height of water. Then I turn off the heat and soak for 1 hour covered and then wash them. Garbanzos will require about 2 hours to cook, after being soaked. After cooking, I rinse them twice with cold water to remove the cooking water. Put the drained beans in a large food processor with the peeled garlic cloves (coarsely chopped) and the rest of the ingredients. Process until smooth. OK, so if I wanted to make it without using a bread machine (I don't have one). Tell me if this sounds right. Mix dry ingredients. Pour in yeast and water. Knead for 5 minutes in stand mixer. Put in greased bowl. Let it rise until doubled in size. Punch it down and shape it into a loaf pan. Let it rise until it's crowing over the top of the pan? I have some rye sitting in the freezer that I used for a sourdough starter so I guess I could grind a 1/2 cup of that for rye flour.

I do very long rises with my breads, not on purpose but I seem to forget about the dough.

My first thought was to sub 1/2 water with kefir. But then maybe you don't do kefir but you could sub sour cream or yogurt. You can do dairy right?

Also found a similar recipe to the one you used but this one has apple juice in it.

Bread

1 1/4 cups White Rice Flour
2/3 cup Potato Starch Flour
1/3 cup Tapioca Flour
1/4 cup soy flour
2/3 cup nonfat noninstant dry milk powder
1 tsp salt
2 tab sugar
4 tsp yeast
4 tsp Guar or Xanthan Gum
1 tsp vinegar
3 egg whites
1 egg
1/4 cup shortening
1 1/2 cup apple juice (gerber)
1 tab liquid lecithin

Makes 1 regular and 1 small loaf. Bake 350 for about 30 minutes or till browned. The dough is a bit stiffer than most gf bread doughs so I put everything in my breadmachine on manual cycle. It raises the best I have seen yet..Here are my thoughts on why it works better...
1. the soy flour adds tast. If you can't eat soy flour find another see or nut flour to add in it's place.
2. I remember in all my baking classes that sugar is an essential part of making yeast work. After many trials I found 2 tab to be a good amount.
3. I didn't like the tast of eggs in my first loaves that
  followed Betty Haggemans recipes, so I started using egg whites which make a solid but spongie bread so I made one of my whites a whole egg.
4. the vinegar and lecithen are all suggested dough enhancers. I noticed a difference with the lecithen so why not add both.

I actually have some Kefir in the fridge..it's raspberry flavored..LOL It's a mini carton of it..I've not tried it yet, but better get on it..it's date is Jan 9!

I do use dairy.

I doubt forgetting to add that 1/4 skim powder would affect the taste but it could have affected the water/dry ingredient ratio slightly enough to make a too wet dough. You can pretty much always substitute liquid milk for water one for one. Adding extra milk powder only adds more protein and calcium to the bread but has to be factored in because it will absorb the liquid much as the flour

Thanks PK..I'm good with the 1/4c of liquid missing..The texture was fine..it was the flavor flatness..I'm going to make another loaf today and add 1/4t more salt. Then if that doesn't work..I'll go after the Sourdough Michelle posted.
