My bread was a little 'flat'..

Not the rise of it, but the flavor..

I made a Gluten Free White Bread tonight..it's perfect in every way except..it seemed a bit flavor~less..

The lighting isn't good enough to get a good shot of it tonight..but you can sorta see a slice of it on my dinner plate in WFD..under the butter and behind the salad..LOL

White Bread

1 3/4 c rice flour

1/2 c potato starch

1/4 c tapioca starch

1/4 c dry milk powder

2 T sugar

2 1/2 t xanthum gum

2 t yeast

1 1/4 t salt

1 c water

2 t cider vinegar

2 eggs

2 egg whites

1. Mix dry ingredients well.

2. In a heavy duty mixer with paddle attachment mix wet ingredients until well blended.

3. With mixer on lowest setting add in dry ingredients until combined. With rubber spatula, scrape bottom and sides. With the mixer on medium speed, beat 4 minutes.

5. Spoon into prepared pan. (greased loaf pan). Let rise, uncovered, in a warm draft free place for 60-75 minutes or until dough has risen to the top of the pan. Preheat oven to 350F. Bake 35-45 minutes or until the loaf sounds hollow when tapped on the bottom.

~There is also this same recipe in the book under the bread machine section which suggest using milk inplace of the water and dry milk. I forgot to account for the 1/4 c dry milk and only added 1 c of 2% milk.

~would that make a difference in flavor? Could I up the salt just a touch?

Anyone have any suggestions?
