Certainly, Mar. I used this recipe from Better Homes and Gardens, but subbed 1/4 cup of lemon juice for the milk because I like a LOT of lemon flavor. They are not sweet at all, you might want to taste the batter and consider whether to add another tablespoon or so of sugar if you sub the juice for the milk. I also used one whole egg in place of the "egg replacer" as I never use or have any fake egg stuff around. That would require you to add about 40 calories per batch, or about 4 calories per muffin, but it probably evens out from the lemon juice in place of milk, LOL.

Lemon-Blueberry Muffins

Makes: 12 servings
Yield: 12 muffins
Prep 15 mins
Bake 400�F 20 mins

Lemon-Blueberry Muffins
Nonstick spray coating

2 cups all-purpose flour

3 tablespoons sugar

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

2/3 cup plain nonfat yogurt

1/4 cup frozen egg product, thawed

1/4 cup milk

2 tablespoons cooking oil

1 teaspoon finely shredded lemon peel

1 cup fresh or frozen blueberries

1. Spray twelve 2-1/2-inch muffin cups with nonstick spray coating; set aside.

2. In a large mixing bowl stir together flour, sugar, baking powder, and baking soda. Make a well in the center of dry mixture.

3. In a medium mixing bowl combine yogurt, egg product, milk, oil, and lemon peel. Add yogurt mixture all at once to dry mixture. Stir just until moistened (batter should be lumpy). Fold in blueberries.

4. Spoon batter into the prepared muffin cups, filling each 2/3 full. Bake in a 400 degree F oven for 20 to 25 minutes or until a wooden toothpick inserted in center comes out clean. Cool in muffin cups on a wire rack for 5 minutes. Then remove muffins from muffin cups Serve warm.

Makes 12 muffins.

Your blueberry muffins reminded me of some wonderful pancakes we had at a restaurant in Portland when we visited there last sumer. (Don't ask me why, other than the blueberry and lemon combo.) They were Lemon-blueberry cornmeal pancakes, and they were delicious. Lemons and blueberries are a marriage made in heaven.

Sally, I was trying to find a low fat cornmeal/lemon/blueberry muffin, but failed and ended up with this. It was pretty good, I was actually surprised, although I needed extra lemon.

I've never seen Myer's Lemons here,
Would you use the same amounts of plain ol' lemons?
I have no idea of what the variety might be,
I don't think the stores here label lemons
with a variety name.

Rusty, I'd use the same amount of lemon if you have the "normal" Eureka variety which everyone here gets. I can buy Meyer lemons in small bags, but not very often. They are sweeter, smaller and jucier than the Eureka lemons, so I'd taste the batter and definitely add sugar if you use the "plain ol' lemons".

A word of caution, these are a healthier muffin variety, so they are more dense than the normal sweet and fluffy muffin. I like that, but don't expect a cupcake, it's a very slightly sweet and very lemon-y muffin.

I have very few lemons on my Meyer tree right now - just enough to use about one a day, and so I think you are very lucky to get a package of them! The recipe sounds good also - last week-end Kevin and I bought blueberry muffins at TJ's, and they were good except that the blueberries were in clumps. I think I'll try your recipe. I have fresh blueberries, but it's better to bake with frozen ones because they do not break down when you stir them into the batter, according to ATK, but they used them to make scones. Now that I think about it, Kevin and I bought blueberry scones instead of muffins, but we were looking for muffins.

Lemonade is always good, but I have found that I cannot drink more than one glass of limeade at a time, and I have three times as many limes as I do lemons. I guess I'll have to freeze some of the limes to make sure I have some for later.

I agree that you need to add a bit more sugar when using Eureka lemons, and the Meyer lemons are especially good for lemonade - not too acidic at all.

The DH and I have been trying to drop weight. He is much better about exercise than I am. DH gained a pound this week. I lost a pound! Go figure!

My Meyer Lemons have a very thin skin that would be hard to zest, which is why I just juice them for future reference.

I have some frozen blueberries so this recipe is on the to-do list for later in the week, when this beautiful weather may be replaced with cooler, seasonal weather. Right now, I'm pooped from repotting Desert Roses. They love to hold onto their pots and they are HEAVY! Should be a good bloom season for them!
