I'm not sure who "Sooz" is (or what it is) but I hope you don't mind me jumping in here with this from my Italian cooking class. Note the "Fra Diavlo" version under "Variations":
SCAMPI SOFFRITTI (= Shrimp Scampi on the stove-top)
1 pound medium-large shrimp, shelled and de-veined 3 large cloves garlic, sliced thin 3 Tbs olive oil 1 Tbs butter salt and freshly ground black pepper 1/2 lemon, juice from 1/4 cup dry white wine 4 sprigs parsley, chopped
Put the olive oil in a 12-inch skillet over medium heat.
Add the shrimp and garlic and cook, stirring or tossing frequently, for 3 to 4 minutes.
Season with salt and pepper to taste.
Add the lemon juice and wine to the skillet. Raise the heat to high and cook for 2 minutes, stirring to mix well.
Add the parsley and the butter to the skillet. Stir just until the butter is melted and incorporated, giving the sauce a creamy texture.
NOTE: You can use medium-sized scallops instead of or in addition to the shrimp.
VARIATIONS:
Latin style -- use lime juice instead of lemon juice, sub cilantro for parsley, and add 1/4 tsp cumin for the last minute of shrimp-cooking time.
Fra Diavlo -- add 1 tsp (or more!) Tabasco and 1/2 tsp pepper flakes with the butter.
French style -- cook mushrooms with the shrimp, use dry sherry instead of wine, use shallots instead of garlic; near the end, add thyme, capers, and a bit of cream
Return the pan to medium-high heat. Stir in the wine. Bring to a boil and cook for 1 Â 2 minutes to evaporate the alcohol. Reduce the heat to medium-low, stir in the marinara and red pepper flakes, and cook for 15 minutes or until sauce has thickened slightly. Stir in the basil, and shrimp and cook for 3 minutes. Taste for seasoning, adding salt and pepper as necessary. While the sauce is cooking, add the pasta to the water, and cook until al dente. Drain in a colander and reserve.
To Serve:
Spread the pasta onto a warmed platter. Pour the shrimp and tomato sauce over the pasta, and garnish with the parsley. Serve family-style. If you prefer, divide the pasta equally among four dinner plates and spoon one-quarter of the shrimp and tomato sauce over each plate. Garnish with the parsley.
Whaaaat???? Ya don't know who (or what????) Sooz is? OMG, I should have known it! ha ha Joe, just teasing ya!
When I'm in school (teaching high school kiddos with developmental disabilities like autism, Down Syndrome, severe disorder of language, mental retardation, etc), I don't go to this board as often as I'd like!
Gosh, if I had the recipe, I'd post it, but as tropicals noted, the entree was from a restaurant. It was quite spicy with those red pepper flakes that one sprinkles on pizza. In fact, I think the recipe that tropicals posted above might just fit the bill!
