Vegetable suggestions please

The maintenance supervisor that works for my county has been stretched kind of thinly, his wife just had a radical mastectomy and is doing the chemo/radiation thing. Various employees have volunteered to provide a meal for his family, which consists of a 6 year old daughter, a 10 year old daughter, a 3 year old son and he and his wife. The 6 and 10 year olds are typical, they like chicken nuggets, cheese pizza, tacos, etc. The 3 year old will eat anything. Steve (the husband) says not to worry about feeding the kids, they're happy with frozen pizza, but that his wife is wanting things pretty "bland and normal".

I'm thinking of swiss steak in a creamy gravy, some twice baked potatoes with just cheese and sour cream, homemade bread and brownies. I'm leaning toward green beans with bacon and almonds for the vegetable, but almonds tend to get kind of "soggy".

Everything will have to be cooked tomorrow night, taken to work with me on Tuesday, and he'll reheat it for Tuesday's supper, I chose the swiss steak because I have a freezer full of beef, but I'm open to suggestion on the potatoes and the vegetable.

What does anyone here think? Is the menu OK as is or should I change it a bit?
