Help with yeast in bread machine, please.

I just bought bread machine Zojirushi and I have "Saf instant" yeast. Is it rapid yeast or not rapid rise? I am not shure which one is that so I do not know how to use the recipe. Could you tell me?

Yes.....it's rapid rise. It may rise faster than rapid rise, but it will work.

I agree, it will be fine, I use whatever I have in my bread machine. I usually just get instant yeast from Sam's Club in 2 pound packages and use that. It's not "special" bread machine yeast or rapid rise, it's just yeast and it always works just fine.

I made a double batch because there was enough tangzhong to do so and because I wanted to test how the bread 'kept'. Also, I cut back on the amt. of sugar when I made the bread. The tangzhong definitely helps in keeping the bread fresh longer. Mine is still relatively soft over 24 hrs. after baking which impresses me enough to try adapting this technique to some of my other bread recipes. My loaves had a very nice crispy crust fresh out of the oven. Note that I'm baking in a toaster oven and the top of the loaves were very close to the top of the oven. Maybe it's just me (or the flour I used--Pillsbury Bread flour, but I thought the bread was lacking a bit in flavor. OR, since the recipe doesn't call for any salt & I didn't add any, perhaps that's part of the problem...salt helps to rein in the action of yeast and I noticed that the dough was really spunky and rose quite fast. No doubt, retarding the rise would help a lot to develop flavor. Nice crumb but the bread has a little different 'mouth feel'. Kinda' weird but not necessarily disagreeable. Agree that it would make great rolls which is what I'll likely do with the recipe next time, along w/ a bit of salt & at least an overnight ferment in the refrigerator to help develop more flavor. I hope that I get this right. This is the basic recipe that I would make several years ago. I found my best results by using buttermilk and King Arthur Bread flour. The powdered buttermilk does just as well as the real stuff. I just added water, and put the buttermilk in before the salt. I'm in Florida, so key to my success is keeping an eye on the bread as it kneads. When it's kneading, if it's too wet and not forming a nice cohesive ball, I carefully add a teaspoon or so of flour at a time until it makes a nice cohesive, but still moist ball. If it's too dry, then I add a teaspoon of water until its that nice cohesive ball. Also, make sure that you add the salt below the flour, so that it doesn't touch the yeast when you're adding the dry ingredients. Whole Wheat Bran Bread: Place in bread bowl: 1 cup buttermilk + 2 T. water 2 T oil 2 T honey add: 1 t salt 1/3 cup oat bran 1 1/2 cup ww flour 1 1/2 cup bread flour make a hole in the top of the flour and add 1 1/2 t. bread machine yeast Adding 1 T gluten will also help with the structure Set on the Whole wheat setting. I don't heat my liquids at all. I always have good results. I never use extra gluten or special yeast. I buy my yeast in bulk at my local health food store, and normally I use a tablespoon of yeast for a two pound loaf. I keep my yeast in the refrigerator, or, if I have bought a really large bag of it, I will keep most of it in the freezer. If you're using whole wheat flour, add a tablespoon of vinegar or lemon juice. You won't taste it and it helps the rise. If the recipe calls for white flour AND whole wheat, always make the white flour be bread flour. If I don't use bread flour, I add about half a cup of mashed potatoes (or 1/4 cup of instant mashed potato flakes) into the mixture. The problem might be your recipe, might be calling for too much or too little fat and sugar. If you have a failure with a recipe, try a different one next time. Barnmom, it looks like you might've had a little too much liquid. If I'm trying a new recipe I will watch it while the machine kneads the dough. If the dough does not form up into a nice ball during the kneading process, cleaning the sides and bottom of the can, then it will rise up nicely but fall during baking. Hope this helps! --Ilene

After the dough has doubled, take it out of the machine and lay it on a lightly floured or oiled surface. Fold over and knead once....and pat it flat.....then roll up and form into a loaf....and put it into a greased pan.' Cover with oiled saran. Then put a 2 cup pyrex measure in your microwave and run it until the water boils. Quickly open the micro and put in your bread pan and let it sit until the bread doubles...or rises above the top of the pan. bake it in the middle of a preheated 350 oven for 30 minutes, turn the oven down to 325 without opening the door and continue until the inside registers 190 with an instant read....if the top looks too brown (all the fruit and honey will make it brown) just lay a piece of foil over the top and continue. Make sure it is done....of it will be soggy in the middle and again with all that whole grain and fruit it will take a while! Linda C

I only make sourdough bread in the oven so don't have much experience in this area. My husband uses "quick rise instant yeast" in his bread machine and it seems to work for him. The only minor problem he has is when he uses the dough cycle then let the dough rise one last time before baking in the oven... the surface tends to crack a bit. Al

SAF-Instant is in the realm of "fast-rising", "fast-acting" , and "instant" yeast products, all which are designed to be added to the dry ingredients, and rise quicker than active dry yeast. Originally they were used with a RAPIDMIX method, before the advent of the automatic bread maker. You didn't proof the yeast in water, but added it directly to the dry ingredients. You could also eliminate the first rise and only covered the dough and allowed it to rest for 10-minutes before forming the dough for the final proofing (rise) before it was placed in the oven.

SAF-Instant is a yeast hybrid (a "super" yeast), while Red-Star Quick-Rise and Fleischmann's Rapid-Rise are reformulations of active rise yeast made to work faster. Bread Machine Yeast is another fast-acting yeast product.

In most bread machine recipes it will give one amount for fast-rising and another amount of yeast for active dry yeast. Only a fast-rising type of yeast can be used in the Quick/1-hour cycle.

If a recipe calls for active dry yeast and all you have is a fast-acting yeast product, use 25% less.
