Baking with Cracker Crumbs - LUBY's style

When using cracker crumbs as a coating for fish or chicken, do you toss the crumbs with butter or something? I've been searching the internet to no avail, for the Luby's Fried Fish recipe. This is the only one I found that fits:

Luby's Fried Fish

According to someoneÂs mother they use the same breading recipe for the fried fish and the fried shrimp. The coating is the same, but the fish is baked, not fried.

2â c. coarsely crushed saltine crackers

1 c. buttermilk

*

3 extra large eggs

*

½ tsp salt

*

¼ tsp pepper

*

Haddock Fillet

Bake at 350 for approx 30-40 minutes (depending on size of fish

I'm assuming you dip in flour then the buttermilk egg mix, then into cracker crumbs. But it seems the crackers would need butter, right? I wonder how Ritz crackers would work.

I'm going to have to break down and buy yet another cookbook, I guess. I'm really trying to cut back on that.
