Asking again about chicken spaghetti

I've asked before, but am trying again. Does anyone have a good chicken spaghetti recipe? What I'm seeking is very, very rich, with a white sauce--not a marinara--sour cream, cream, cheese, etc., not southwestern, i.e. no corn, bell peppers, jalapenos. This is for large quantity fund-raiser cooking for athletes. Thank you so much!!!

IMHO this one is very rich and fabulous. Some people add another cup of chicken and 2 more oz of spaghetti to make it thicker. I like mine on the loose side.

Chicken Spaghetti

SERVES 6

1/4 cup butter
1/4 cup flour
2/3 cup chicken broth
1/2 cup half-and-half or light cream
1/2 cup sour cream
1 cup parmesan cheese, grated
1/4 cup dry white wine, apple juice or white grape juice
1-2 garlic cloves, minced
1 teaspoon lemon juice
1/2 teaspoon dry mustard
salt and pepper, to taste
2 cups cooked chicken breasts, cubed
6 ounces cooked spaghetti
2 teaspoons paprika
extra parmesan cheese
chopped fresh parsley

Melt butter in a saucepan and add flour stirring constantly.

When mixture thickens, add chicken broth, half and half, sour cream, Parmesan cheese, wine, garlic, lemon juice, dry mustard and salt and pepper.

Stir over medium heat until mixture again starts to thicken.

Add chicken and spaghetti noodles and stir well.

Place in a baking dish and sprinkle with paprika and extra Parmesan cheese.

Bake for 30 minutes at 350Â°.

Sprinkle with parsley and serve.

It probably is the light levels-length of day (light). Increase it by 30 minutes/day until you reach 17 hours/day, that should get them to lay. After they have been laying for about two weeks you can drop the time back down to 14 hrs/day. It may take 2 weeks or more to see results. RIRs are good layers. Winter time it is also common for the eggs to be smaller because most birds don't drink enough water to replace the moisture that they get from eating green vegetation and live insects, one would be surprised by the amount of water that is in these foods. Some feed their birds cooked foods that have a lot of moisture in them-like oatmeal-cornmeal-spaghetti. The lower water intake doesn't effect the quality of the eggs except when it comes to incubation. I usually increase the humidity by 10% when incubating these winter eggs and get good results. Post some pictures of your birds--everyone here would love to see them.

Lisa, Boy, do I hear you! I started canning when I lived in the city and begain growing tomatoes in the backyard. Had a big harvest and wanted to not waste it. What I didn't realize was how good it would feel to have that sense of self-reliance. I first thought of my home-canned goods a special treats, to take out on special occasions or show off for guests. But I found it easy and fun to can and before long I was canning all the tomato products we ate in a year right from my backyard garden on the streetcar line in Toronto! Most of my friends thought it was weird --- at first I had a hard time even finding the equipment (I remember a young stock boy in the grocery store looking at me with a completely blank look on his face when I asked if they sold jars; he gestured at an aisle of commercial jarred tomato sauce (DUH, lady, there are jars everywhere), and when I said, "No, I mean, EMPTY jars," he clearly thought I was insane. ;-0 ). (In the end I discovered they could order it for me easily at the local chain hardware.) Anyway, I'm warning you that you never know where it will end! Somehow I'm now living in a tiny town of 4,000, buying most of my produce in the warm months at farm stands, and filling up my pantry every fall with home canning (I got a freezer, too). This winter I started making my own sandwich bread and adding a few meals a week based around beans, which I now cook from dried rather than canned. Just like you, I find it incredibly satisfying. Some folks on this forum put up almost all their own food, raise their own meat, etc.; I'm not nearly in that category. But I feel really good looking at shelves full of food I preserved, tasting summer in the frozen goodies, and knowing that if we don't have time or energy to shop or cook one evening, there's plenty of good, homemade stuff to eat in a jar or a freezer bag. Sorry I didn't get this posted last night. I was so tired. This is called Chicken Confetti Spaghetti. I have also added a small can (or a half can) of sliced water chestnuts for crunch. 2 tbsp unsalted butter 8 oz spaghetti pasta 10 oz cooked, diced chicken (about 2-1/2 cups) 1 (4 oz) jar diced pimentoes, drained 8 oz trinity mix (fresh diced onions, bell peppers of different colors, celery) 1 (18 oz) can creamy mushroom soup 1/2 tsp seasoned salt (I used Lowry's) 1/8 tsp pepper 1-1/4 cups shredded sharp cheddar cheese 1 cup Panko bread crumbs 1. Preheat oven to 425 degrees F. Bring water to boil for pasta. Cut butter into small pieces; place in small bowl and set aside to soften. 2. Break pasta into 2-4-inch long pieces before adding to boiling water; cook and stir 5 minutes until partially tender. 3. Combine in microwave safe bowl - chicken, pimentoes, trinity mix, soup, salt, and pepper. Cover and microwave on High for 2-3 minutes or until hot and vegetables begin to soften. 4. Drain pasta and stir into chicken/vegetable mixture. Transfer to a 2-quart baking dish. Stir cheese and bread crumbs into butter. Mix with fingertips until crumbly. Spread evenly over chicken mixture. Bake 15-20 minutes or until bubbly around edges. Let stand 5 minutes before serving. Makes 6 servings. IIRC, I put this in a 9x13 pan and it took at least 20 minutes, maybe 25. Trinity mix is a pre-packaged mix sold in one of our grocery stores. You might not have the same in your stores but cam make your own or just add a little chopped onion, peppers and celery to make about 8 oz.

I though of this post when DH was cubing steak for chili. Tiny dice. Partially frozen so it went zippy. I did most of the veg prep, then handed over the kitchen for his prep. During my session I gave the appliances a quick wipe, and cleared the prep area near the sink. Some newspaper under the meat board...not sterile clean just prepped/cleared. (I clean better after meat handling and a cooking session) Little raw meat chunks found their way to the dishwasher handle, the sink tap handle and quit a bit on the newspaper far off the board. he said he was careful and we just laughed about it. Beef is less of and issue. He did the browning so raw meat was on the stove and knob as well. Raw chicken is a bit different. Healthy birds are less likely to be sickened like commercial crowded raised birds. And the percentages are quite a bit lower for contamination but best to be safe. We are not getting any younger so being safe so it is a natural prep process is best. DH is getting a little sloppy and forgetful. But never raw underdone chicken juice platter re-use. Grills are downstairs and I send those raw meats with a few extra clean platters. A spoon, spoon rest, stirring soup/stock, a finger....tasting spoon. Probably safe going back into high heat that will sterilize. I'm making stock right now and in an hour I will give a stir, then rest the spoon...good for a hour or two. But will load the dishwasher at some point and grab a clean stirrer later. I have three spoon rests that nest. Top one goes in the dishwasher. Anal but I'm cleaning the counters and cutting boards anyway. Stock simmering for hours. Does not need a stir close to done. (i've had food poisoning a few times) so actually it is rare considering how much we have traveled...but that taco in Guatemala I would like to forget...after a swallow I discovered it was just raw room temp chicken skin). DH did not have one. I was starving. 3 days suffering. My parents are turning 90 and 91 this week. I don't want that experience again even young and strong. They would suffer greatly I'd rather not think about. learning/teaching safe cooking in your home is just smart. I'm a lousy house keeper but food prep is OCD. Why take a minimal risk? Let your spouse/family know how important it is. Best thing I bought a couple years ago was a dozen stainless iced tea spoons I use for tasting, they fit in my spice jars, and in the drawer just under my prep. We use often 6-8 while cooking a meal. Long skinny handle, small spoon head. About a teaspoon.

Would you be OK using canned soups? I have a recipe ( somewhere) that I used for a fundraiser....starts with Poach 3 chicknes 4 pounds or more....
But it uses cream of celery soup and cream of chicken soup....and is expensive to make.
I also have a recipe I have used tor church luncheons...much cheaper....and pretty nearly as good.
This is the sauce......and you can add what you like...vegetables or not...or just chicken...or just chicken and broccoli and mushrooms etc....

Recipe for the sauce:
1 cup finely chopped onion sautÃ©ed in Â½ cup butter and Â¼ cup olive oil, add 1 cup flour, 2 cups chicken broth and 2 cups milk ( actually a little more milk) 1 tsp garlic powder, 2 tsp Worcestershire, a handfull of chopped fresh parsley, 8 oz cream cheese and about Â½ cup of grated parmesian, juice of a fresh lemon. I made 3 times that recipe for 8 casseroles.
Each casserole contained:
3 rounded cups cubed meat,
Â½ cup red pepper strips
Â½ cup green pepper strips
2 T chopped green onions
Â¼ cup chopped celery sauteed
2/3 cups carrot buttons blanched
2 cups broccoli florets, blanched
4 rounded cups cooked pasta
And about 4 cups of the sauce

You can just add more chicken instead of veggies...when you put it all together if you cook the veggies first,...it only has to be heated through before serving.
Also, turkey is cheaper than chicken...I sure have made it with turkey and no one was wiser that it wasn't chicken.

What about a Chicken Alfredo? I've not made this recipe before, but it seems like it would multiply up for a crown pretty easily.

Chicken Alfredo Recipe

The thick alfredo sauce coats the chicken and fettucine pasta well and perfectly compliments the chicken.

Ingredients
Â3 boneless chicken breasts
Â8 oz. cream cheese
Â8 oz. cup of butter
Â8 oz. cup parmesan grated cheese
Â1/2 cup milk
Âsalt & pepper
Â1 Ib fettucine
Âvegetable oil for frying

Directions
1.Cut chicken into strips and season generously with salt and pepper.
2.In a large frying pan, heat about 1 tbsp of oil and place in chicken taking care not to overcrowed the pan. (if necessary, prepare in 2 batches) and fry until fully cooked.
3.At about the same time that the chicken is started, begin heating the butter and cream cheese in a medium sauce pan.
4.When the cream cheese is soft, add the parmesan cheese and milk and stir until smooth.
5.Cut the chicken into pieces and stir into sauce, then heat to a boil stiring frequently.
6.Add salt to boiling water and stir in pasta. Boil until tender stiring frequently so the pasta doesn't stick.
7.When everything is finished. plate the pasta and spoon sauce over the top.

You are all so wonderful! No, I wouldn't be okay with canned soups for this project, but I will keep all these on file for other needs. I scanned the PW recipe last week and it's a touch southwestern, so I'm going to test Beverly's and Caliloo's in triple quantities and see how they do.
