Turkey Question

I can't believe that after forty years I am making my first unstuffed turkey on Sunday. I'm doing AnnT's recipe with the presalting and I just presalted him and he is beautiful. My family dressing is loose until it's baked so when I have made turkey I always sew the neck closed, stuff him in his cavity and over the breasts and around the legs and then sew his little butt shut. Now that I'm not stuffing I plan to put some onions, lemon, garlic and maybe an apple in his cavity. Do you still sew both ends or can I leave him open. Do you cut off some of the neck skin and that little butt diamond? And, lastly do you tie his legs together and cut off the wing tips? I really appreciate the help I get here.
