Want to recreate a recipe...need help

Hi, many years ago (20+) Pepperidge Farm sold frozen Broccoli & Cheese Pastries that were just wonderful. They were supposed to be a vegetable side-dish but my hubby and I liked them so much we'd each eat two as our main meal. After a few years, Pepperidge Farm discontinued that product and we sure miss them. I've tried to recreate the dish but it never comes out very good.

They looked similar to pastry-wrapped apple dumplings, about that size but the pastry was richer than normal pie crust and thin, with an egg-yolk wash. Inside the pastry was chopped broccoli in a wonderful cheddar cheese sauce that I can't seem to recreate.

Does anyone have a recipe like this?? I'd love to try it.

This reminds me of croissants filled with feta and spinach that I used to be able to get made every morning at a small bakery store in my area but they no longer make them. They were so good. We both need to team up for someone to give us a good recipe to make both of these!

It's important to make it work, of course, and I know nothing about the engineering, but the specs are for a certain square footage of opening, and we met that and a bit more with our horizontal grills. Three of them at 3x14 inches, I think, gave a bit more square footage than a standard one and pulled air in from different points (which an ignorant person likes to think is good). In any case, since the bottom shelf rests on the vertical front board, the area behind is all open space. Our HVAC guy thought it was fine. As opposed to my insistence on not putting the meter smack in the middle of the most important living room wall where it'd give the most accurate readings. With all our windows, no other wall in the entire house would do for him. Uhuh. (Now I know why so many homes, especially older ones, have the control on the only wall long enough for a sofa.) I told him we'd just have to learn to adjust for inaccurate readings. He wasn't happy, but we did and we are. Summer and winter it reads 1-3 degrees off actual temperature, depending on how extreme the weather is. Have fun with your room. It's going to look really nice.

When you mentioned 'thin as a lace cookie, pliable and sticky," I thought along the same lines as Carol_w_fl. Too bad none of us were there to see where exactly your cookies took a turn for . . . the better ☺ First, I would find out if the 'light' butter used might've been vegan 'butter' (whose main ingredients are vegetable oil and water). In which case, I would avoid adding more water to your recipe, because while adding more liquid will make the cookie spread, it will also make it too delicate. Replicate every step you remember, except, reduce the amount of flour by half. But keep the 3 cups of oatmeal the same. To avoid 'ruining' an entire batch of cookies, prepare the recipe as indicated on the Quaker Oats box, but reserve half of the (combined) dry ingredients, and set aside. Then, add only half the flour mixture to the butter/sugar/egg mixture. Bake only one or two cookies (on parchment paper) to test for consistency. You should get what you're looking for. If not, add the reserved flour mixture to the cookie batter, and proceed as directed. But, if you end up with another happy mistake, you'd better build a wall around it. Sol

Thanks everyone! I like the idea of the side unit if we can't replicate it in the middle of the cabinets as suggested but I love the look of the inspiration picture. have been able to find some beverage centers that are shallow depth. One that would work is from Perlick that is an 18 inch depth built-in BUT they are $. The one I saw was quoted at $2,800 which is not in my budget for a place to store the kids drinks ;) Houzz has sent me an idea based on my search history I assume but, I'm unsure if it can be enclosed vs freestanding only. This is the Houzz recommended unit...

Start by selecting a color that goes well with the rest of the furniture and design of the room. Then select a couple of fabrics with that color shown minimally throughout. The fabrics should coordinate, but don't have to be identical. Graphic patterns of black/white and gray go with anything to layer as well.

I remember them!!
The crust was puff pastry...I could give you a recipe for that, but you would be better off buying the frozen stuff.
Then take bcoccoli, about 2 cups cut up and steam it and drain very well...
I am closing my eyes and trying to remember the sauce.....
I think it had a hint of onion and was very rich and cheesy...not sharp chedder but like Velveeta.
I would sautee about 1 T of finely chopped onion or shallots in 1 T butter....and when it's soft mix in about 4 oz velveeta, with 2 oz cream cheese and 1 T mayonaise ( we're not counting calories here are we?? LOL!)...then cut your dough into squares, fill with broccoli, top with a generous amount of cheese sauce, fold over place on parchment on a baking sheet, brush with 1 mix of 1 egg yolk mixed with 1 tsp water....and bake 425 for about 20 minutes until nicely browned.
I have never made them....but I'm telling you what I would try.

Linda...that sounds good. Should be close to the original. I'll give it a try and let you know how it turns out.

You may have already checked the Pepperidge site out, there's a recipe that might help as a guide...

They were called 'vegetable in a pastry' as I recall.
Came two to a box.
I was in love with the 'mushrooms in wine sauce' variety.
hehe
I remember sitting on the sofa with my (then) one & a half year old son beside me and I'd be eating those... he loved them as much as I did and it would be one bite for me and one bite for him. He wouldn't let me eat anymore than that...
Wish they still made them.
