Fear of frying.

I want to tackle cannoli shells. I never fry anything so I am a complete novice. I might do a saute in butter from time to time or even a stir fry in a tiny bit of sesame oil but never deep fat frying.

I'm thinking it might be best to get a fryer. Am I right? What are the benefits over a deep pot of oil on my stove? (Yikes!) And which one is best for under 75 clams?
