About my dinner - Rustic Italian

I am having friends for dinner tomorrow and it is very casual. At first it was going to be lasagna and salad. I want to add some roast chicken. I have never quartered a chicken before and was thinking of roasting it that way. Should I sear the pieces before baking? Would one chicken be enough for two families - it's a huge lasagna or am I better off just making two chickens? How long would it take to bake quartered pieces (if seared)? Thanks. I am trying to expand my meat prep ideas.
