Salvadoran Pupusas / trip to Grand Central Market

Yesterday Kevin and I went downtown to L.A. Art Show at the convention center (free tickets from the COO here), and so we decided to go shopping at Grand Central Market (also downtown) afterwards. We do not go downtown very often, even though Chinatown and Little Tokyo are both worth visits on their own, and so I had not been to GCM for a few years. Kevin wanted to get something to eat while there, and so we went to Sarita's Pupuseria and had a couple of pupusas each - I had one with mushroom & cheese and one with just pork - both were excellent. They also have curtido and hot sauce on the counter to have with them. Kevin's were chicken with cheese and beans with cheese. I believe all the cheese was Oaxacan, but it could have been Mozzarella.

Does anyone have tips for making these at home? They seem very similar to the quesadillas that I had in Mexico City, except that pupusas are round and are the same thickness as a regular American pancake. I have masa flour and can easily get fresh masa if I need it, and I also have a tortilla press, but I'm afraid that would make them too flat. Let me know if you have any special recipes or techniques for these.

At the market I bought three different kinds of prepared mole paste that I stored in the freezer once I got home. Unfortunately, they were not labeled, and I got 1/2 pound of each. The butcher market at the entrance was selling pigs' feet and heads (or snouts) - along with some innards that I could not identify - as well as chicken feet, but the chicken feet were almost all gone. I was going to buy some for stock, but a man in front of me was buying the last that they had.

The produce was ridiculously cheap, but I really didn't need to buy anything else there. I'm anxious to make some pupusas at home. I've also never made curtido, but that is very simple.

What are your favorite pupusa fillings?

Lars
