Freezing phyllo turnovers

I still have a mess of phyllo dough in the fridge and I want to use it up. I found a nice recipe for apple turnovers using the dough, and I've been craving turnovers ever since I saw them made yesterday on Everyday Baking. So instead of my planned "strudel" I think I'll do the turnovers. Problem is, with just single me, the leftovers will get soggy. Can I freeze them after they are assembled and then bake them one at a time? Or should I bake, then freeze and micro to serve?
