Turnover failure

I love turnovers! I have been making them with phyllo, which is kind of a pain and messy to eat. Today I tried to make them with a pastry crust, a recipe I saw on the "Everyday Foods" TV show. It looked so easy when "John" did it. Of course some of you know, I'm dough challenged. The dough stuck to the rolling pin and the "squares" came out more like circles with rough edges. Flouring the rolling pin helped only a bit. Upon baking, the blueberry-raspberry filling juices leaked out all over onto the baking pans, it's a total mess!

Anyone have any ideas of an easier way to make turnovers. Can I just use the premade pie dough? Any other doughs premade? I'm not going to buy the whole Pillsbury kit, yuk, but do they sell just the dough part?

The dough recipe called for 2.5 cups flour, 1 cup butter cut in, 1 tsp. sugar, 1 tsp. salt and 4-8 TBLSP ice water. I used 10 TBLSP, and the dough still didn't hold together very well.
