I have the mini digital controller you suggested:

My question is, in getting a heat source, rather than taking a thermostat controlled aquarium heater and trying to bypass the thermostat, do you think this item here would do the job?

If so, I could just plug it in directly to the Mini Digital controller, hook up a circulating pump and I'd be done.
